Brownie Batter Hummus

Happy Valentine’s Day! This holiday twist on hummus will make you fall in love with chocolate all over again!

* Serve with fresh fruit such as; apple slices, pear slices, berries, and banana slices.

* Perfect on toast topped with berries for breakfast!

* Pack ahead of time for ready to go snacking.

* Spread on graham crackers or dip with pretzels.

Ingredients
  • 15 ounce can garbanzo beans drained and rinsed
  • 4 tablespoons coconut milk
  • 5 tablespoons unsweetened cocoa powder
  • 2 tablespoons maple syrup
  • 1 tablespoon olive oil
  • 1 teaspoon vanilla extract

  1. Clean your area and wash your hands before you begin.
  2. Blend garbanzo beans in a food processor until smooth.
  3. Add coconut milk, cocoa powder, maple syrup, olive oil and vanilla extract, blend well.
  4. Refrigerate until ready to serve.

Ingredients
  • 15 piece mini fillo shells frozen
  • 1/4 cup liquid egg substitute fat free
  • 3 tablespoons dark brown sugar
  • 1/2 tablespoon whipped butter or light buttery spread room temperature
  • 1/8 teaspoon cinnamon
  • 1 drop vanilla extract
  • 1/8 teaspoon salt
  • 2 tablespoon walnuts divided
  • 2 tablespoons pecans divided

  1. Preheat oven to 375 degrees F.
  2. Spray a baking sheet with nonstick spray or line with parchment paper.
  3. In a medium bowl, combine egg substitute, brown sugar, butter, vanilla extract, cinnamon and salt. Mix well.
  4. Stir in 1 tablespoon chopped pecans and 1 tablespoon chopped walnuts into mixture. Arrange shells and evenly distribute the mixture evenly among the fillo shells.
  5. Combine remaining nuts and sprinkle them on the top of the shells (a little less than 1/2 teaspoon per shell).
  6. Bake in the oven until edges are crips, 15-18 minutes.
  7. Allow to cool slightly before serving. If you like, top each piece with a squirt of fat free whipped cream topping. Enjoy! Note: nutritional information does not include optional fat free whipped topping.

Ingredients
Cake:
  • 1 16.25 ounce box white cake mix
  • 1 ounce Pistachio Sugar-Free/Fat-Free Pudding
  • 6 ounce non-fat greek yogurt vanilla
  • 3 egg whites
  • 1 1/2 cups water
Frosting:
  • 8 ounce container fat free whipped topping thawed
  • 1 cup skim milk
  • 1 ounce Pistachio Sugar-Free/Fat-Free Pudding

  1. Preheat oven to 350 degrees Fahrenheit. Lightly spray a 9 X 11 baking pan with non-stick cooking spray.
  2. In a large bowl, use a mixer to combine cake mix, pudding, yogurt, egg whites and water. Mix together for 2-3 minutes until well blended.
  3. Pour batter into cake pan and bake for 35-40 minutes or until a toothpick inserted comes out clean.
  4. While baking, combine ingredients for frosting. Use a mixer to beat milk and pudding on medium speed. Let rest for a few minutes and fold in thawed whipped topping. Place in refrigerator until cake has cooled.
  5. Top cake with frosting. Serve or store in the refrigerator until ready to enjoy.

For a fun festive St. Patrick’s Day dessert, add some green food coloring to the batter or frosting, or both!

  4. In a medium bowl, combine remaining ingredients. Refrigerate for 30 minutes. Spread frosting on cupcakes and garnish with ground cinnamon.

Ingredients
  • 1 15 ounce white cake mix

  • 1/3 cup unsweetened applesauce
  • 1 tablespoon lemon zest plus more for garnish
  • 1 1/2 tablespoon lemonade mix
  • 1 10 ounce container light whipped topping

  1. Preheat oven to 350. Line 24 cupcake tins with paper liners.
  2. In a medium bowl, combine cake mix and water. In a small bowl, combine applesauce, lemon zest and 1 tablespoon of lemonade mix; add to cake mixture. Mix well.
  3. Spoon batter evenly into cupcake liners. Bake for 15-17 minutes. Remove from oven and allow to cool completely.
  4. For frosting, combine the remaining lemonade mix with the whipped topping using a hand mixer. Refrigerate for 30 minutes. Remove from refrigerator and frost cupcakes.
  5. Garnish with additional lemon zest.
