Smoothie
  • 1/2 Banana frozen
  • 1/2 cup cauliflower frozen
  • 1/4 cup pineapple frozen
  • 1 tablespoons almond butter
  • 1 cup unsweetened coconut milk beverage
  • 1 teaspoon matcha powder
Toppings
  • 1 1/2 teaspoons chia seeds
  • 1 1/2 teaspoons sweetened coconut flakes
  • 1/4 cup blueberries

Instructions
  1. Wash fresh berries and clean your preparation area.
  2. In a blender, blend frozen banana, pineapple, cauliflower, almond butter, milk, and matcha powder until smooth.
  3. Divide smoothie mixture into two bowls and top with chia seeds, coconut flakes, and blueberries.

* Serve with fresh fruit such as; apple slices, pear slices, berries, and banana slices.

* Perfect on toast topped with berries for breakfast!

* Pack ahead of time for ready to go snacking.

* Spread on graham crackers or dip with pretzels.

  • 15 ounce can garbanzo beans drained and rinsed
  • 4 tablespoons coconut milk
  • 5 tablespoons unsweetened cocoa powder
  • 2 tablespoons maple syrup
  • 1 tablespoon olive oil
  • 1 teaspoon vanilla extract

  • 4 naan bread whole wheat
  • 8 ounces tomato sauce unsalted
  • 2 cups zucchini diced
  • 2 cups mushrooms diced
  • 1 cup 2% milk mozzarella cheese shredded
  • 1 teaspoon olive oil
  • 1/2 teaspoon black pepper

Oven Instructions
  1. Clean your area and wash your hands before you begin.
  2. Preheat oven to 425°F.
  3. Toss sliced zucchini and mushrooms with olive oil and pepper.
  4. Place vegetables on baking sheet and roast for 20-25 minutes.
  5. Spread tomato sauce evenly on flatbread.
  6. Sprinkle mozzarella over tomato sauce.
  7. Add roasted vegetables.
  8. Bake pizza at 400°F for 8-10 minutes until cheese is bubbly.
Air Fryer Instructions
  1. Clean your area and wash your hands before you begin.
  2. Set the air fryer to 375°F and preheat for 3 minutes
  3. Toss sliced zucchini and mushrooms with olive oil and place on the air fryer basket/tray.
  4. Once the air fryer is preheated cook for 3 minutes.
  5. Spread tomato sauce evenly on the flatbread and sprinkle mozzarella cheese over the tomato sauce and add roasted vegetables once done.
  6. Set the air fryer to 375°F and let preheat for 4 minutes.
  7. Place flatbread on the air fryer basket/tray.
  8. Once the air fryer is preheated, cook for 4 minutes or until cheese is bubbly.

Ingredients
  • 1/4 cup almonds sliced
  • 4 cups unsweetened almond milk
  • 1/4 cup cocoa powder
  • 1/4 cup Splenda Sugar Blend
  • 1/2 teaspoon coconut extract
  • 1/2 cup fat-free whipped topping

  1. Add almonds to a dry sauté pan over medium-high heat and sauté until lightly toasted. Set aside to cool.
  2. Add almond milk, cocoa powder, Splenda, and coconut extract to a blender and blend until incorporated and slightly foamy.
  3. Add hot chocolate mixture to a saucepan over medium heat and bring to a simmer.
  4. Add one cup of hot chocolate to a coffee mug, top with 2 tablespoons whipped topping and sprinkle with 1 tablespoon cooled, toasted almonds.
