Ingredients
  • 1 (15.5 ounce) can no salt black beans rinsed and drained
  • 1 cup shredded, cooked chicken breast
  • 4 large green onions sliced
  • 1 cup salsa
  • 3/4 cup diced tomatoes
  • 1 1/2 tsp ground cumin
  • 3/4 cup shredded, reduced fat Mexican blend cheese divided
  • 2 (7 inch) corn tortillas torn into small pieces
  • 1/4 cup chopped cilantro

Instructions
  1. Heat oven to 375 degrees F.
  2. Place beans in large bowl; partially mash with potato masher.
  3. Add chicken, green onions, salsa, tomato and cumin; mix well.
  4. Spoon 1 1/3 cups mixture into 9-inch round glass baking dish; top with 1/2 cup cheese.
  5. Arrange 1/2 of tortillas over mixture.
  6. Repeat layering with 1 1/3 cups bean mixture, remaining tortillas.
  7. Cover dish with foil and bake 30 minutes or until heated through. Remove from oven, uncover and top with remaining 1/4 cup cheese.
  8. Return to oven and continue to bake 5 minutes or until cheese is melted.
  9. Remove from oven and top with cilantro.

Ingredients
  • 1 pounds 96% lean ground beef
  • 1 medium onion chopped
  • 2 tablespoons chili powder
  • 2 tablespoons unsalted tomato paste
  • 1 tablespoons ground cumin
  • 1/8 teaspoons salt
  • 3 cups cooked brown rice
  • 16 ounce canned unsalted pinto beans rinsed and drained
  • 8 ounce canned diced green chilies
  • 14 ounce canned unsalted diced tomatoes un-drained
  • 1/2 cup fresh cilantro for garnish

  1. Clean your area and wash your hands before you begin.
  2. In a large skillet over medium-high heat, cook meat and onion until brown, stirring to crumble. Drain, if necessary.
  3. Return meat to skillet.
  4. Add chili powder, cumin, tomato paste and salt. Mix until well combined.
  5. Stir in rice, beans, chilies and tomatoes; heat through. Cook until all the flavors combine.
  6. Garnish with cilantro.
  7. Serve immediately

Ingredients
  • 3/4 lb lean chuck or round ground beef
  • 1/2 cup chopped onion
  • 1/2 cup diced tomatoes unsalted
  • 1 medium green bell pepper chopped
  • 1 (2 1/4 ounce) can sliced ripe olives drained
  • 1 tsp chili powder
  • 1 tsp minced garlic
  • 1/2 tsp ground cumin
  • 1 (1 pound) loaf French bread unsliced
  • 1 cup low fat sharp cheddar cheese shredded

  1. In a large skillet, cook beef and onion over medium heat until meat is no longer pink. Drain. Stir in tomatoes, green pepper, olives, salt, chili powder, garlic and cumin. Remove from heat.
  2. Cut bread in half lengthwise.
  3. Place on baking sheet.
  4. Spread meat mixture over cut slices.
  5. Sprinkle with cheese.
  6. Bake at 450°F for 10-15 minutes or until cheese is melted.
  7. Cook’s note: This recipe serves 8 so you may have enough for lunch the next day. To reheat, wrap in foil and heat in a 350° F oven for 10-15 minutes or until hot. This results in French bread that is soft. If you prefer crispy bread, place the loaf on a baking sheet and bake 10-15 minutes or until hot.

  • 2 1/2 tablespoons dark brown sugar
  • 2 tablespoons paprika
  • 2 teaspoons mustard powder
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1 1/2 teaspoons dried basil
  • 1 teaspoon ground bay leaves
  • 3/4 teaspoon ground coriander seed
  • 3/4 teaspoon ground savory
  • 3/4 teaspoon dried thyme
  • 3/4 teaspoon ground black pepper
  • 3/4 teaspoon ground white pepper
  • 1/8 teaspoon ground cumin
  • 1 teaspoon salt

Ingredient for Enchiladas
  • 1 - 4 ounce package nonfat cream cheese
  • 2 cups cooked chicken breast chopped
  • 12 ounces chunky salsa mild
  • 1 cup shredded Mexican blend cheese reduced fat
  • 10 corn tortillas
Sauce
  • 2 cups plain yogurt nonfat
  • 1 cup fresh cilantro chopped
  • 1 teaspoon ground cumin

  1. Heat cream cheese in large skillet over medium heat until soft.
  2. Stir in chicken and ½ cup of the salsa; mix well.
  3. Add 1/2 cup shredded cheese; stir until melted.
  4. Spoon enchilada filling onto each tortilla; roll up.
  5. Place seam side down in baking dish.
  6. Top with remaining salsa and cheese.
  7. Bake at 350̊ F for about 15 minutes, or until heated through and through.
  8. Serve with yogurt sauce.
