Ingredients
  • 1/2 cup green lentils dry
  • 1/2 cup quinoa dry
  • 15 ounce can low sodium black beans rinsed and drained
  • 2.5 cups cherry tomatoes
  • 1 cup frozen yellow corn
  • 1 cup yellow onion chopped
  • 1/2 cup green bell pepper chopped
  • 1 medium jalapeno seeds removed, diced
  • 2 Tablespoon olive oil
  • 1 Tablespoon garlic minced
  • 1 Tablespoon chili powder
  • 1 teaspoon cumin
  • 1/4 teaspoon cayenne
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 3 cups water
  • 1/4 cup cilantro for garnish

Instructions
  1. Wash hands and sanitize preparation surfaces.
  2. Place a large skillet over medium heat. Add olive oil.
  3. Once the olive oil is heated, add the onion, jalapeno, bell pepper, and garlic. Cook for 5 –7 minutes or until the onions are translucent.
  4. .Next, add quinoa, lentils, and tomatoes to the cooked vegetables. Cook for 5 minutes, stirring continuously to ensure ingredients are well combined.
  5. Add beans, corn, water, and dry seasonings and stir to combine.
  6. Allow the dish to boil, cover it with a lid, then let it simmer for approximately 30 minutes. Garnish with cilantro and enjoy!

Ingredients
Marinade
  • 1 pound shrimp; frozen or fresh peeled and deveined
  • 1 Tablespoon jalapeno
  • 1 cup green onion
  • 2 cup cilantro
  • 4 teaspoons lime zest
  • 1/4 cup lime juice est. 2 limes
  • 1 Tablespoon olive oil
  • 1/2 cup pineapple juice
  • 2 Tablespoons minced garlic
  • 1/2 teaspoon coconut aminos
  • 1/2 teaspoon black pepper
Dill Dip
  • 8 ounce container plain Greek low fat yogurt
  • 2 teaspoons lime zest
  • 2 teaspoons lime juice
  • 2 teaspoons garlic powder
  • 2 Tablespoons chopped fresh dill
Garnish
  • 1/4 cup sliced limes
  • 2 Tablespoons cilantro

  1. Prep shrimp, if frozen let thaw. If fresh, peel and devein.
  2. Next, remove 6 tsp zest and squeeze ¼ cup lime juice from limes.
  3. Place jalapeno (optional remove seeds), green onion, and cilantro in food processor and pulse.
  4. Then whisk together olive oil, lime juice, pineapple juice, zest, (minced) garlic, coconut aminos, and black pepper in a bowl. Combine processed ingredients to create a marinade.
  5. Pour the marinade into a large sealable food-safe plastic bag. Gather your thawed shrimp and place them in the marinade (plastic bag). Before sealing, press the excess air out, then seal.
  6. Let the shrimp marinate in the fridge for about 10 to 30 minutes (max).
  7. While shrimp is marinating, create your dill dip. Grab a medium bowl, stir together yogurt, lime zest, lime juice, garlic powder, and dill. Cover and chill.
  8. You are now ready to grill; you can thread the shrimp onto skewers (see tips on wooden skewers) or place them in a grill pan over the stove.
  9. Grill the shrimp over direct, medium heat for 5-7 minutes, turning the shrimp halfway through the process. Make sure shrimp is pink and cooked through - a fully cooked shrimp is 120 degrees Fahrenheit. Check the temp!
  10. When done, take the shrimp off the grill, and squeeze some lime juice (optional).
  11. You are now ready to serve – garnish your shrimp with cilantro and lime wedges. Pair with any of our side dishes.

Ingredients
  • 1 tablespoon olive oil
  • 1 cup yellow onion chopped
  • 1 cup green bell pepper chopped
  • 1/2 cup jalapeno seeded & chopped

  • 1 pound extra lean ground beef
  • 1 14.5 oz can diced tomatoes with the liquid
  • 1 cup water
  • 1 15 oz can pumpkin puree
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 15 oz can kidney beans rinsed and drained

  1. Wash your hands and clean your preparation area.
  2. Heat oil in a large pot over medium high heat.
  3. Add onion, bell pepper, jalapeños and garlic and cook, stirring frequently, until tender.
  4. Add lean beef and cook until browned.
  5. Add diced tomatoes, pumpkin puree, water, chili powder, cumin, and bring to a boil.
  6. Reduce heat to medium low and add beans.
  7. Cover and simmer, stirring occasionally, for 30 minutes more. Ladle chili into bowls and serve.

  • 1 pound dried pinto beans
  • 6 ounces center cut reduced fat bacon, chopped
  • 1 small onion chopped
  • 1 jalapeno seeded and minced (optional)
  • 4 garlic cloves minced
  • 1 14 ounce can diced tomatoes
  • 3 cups low sodium chicken broth
  • 3 cups water
  • 2 teaspoons chili powder
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 1/2 cup of cilantro chopped

Multifunction Cooker Instructions
  1. Sort dried beans to remove debris. Using colander, rise well under cold running water.
  2. Set the cooker to sauté setting, cook the bacon until crisp. Remove the bacon from the cooker and place on a paper towel lined plate to drain excess fat. Leave remaining fat in pot.
  3. Add the onions and jalapeno (optional) into the cooker. Sauté stirring often, until the onions become translucent (2-3 minutes). Add the garlic and cook for no more than a minute.
  4. Press the keep warm/cancel button on the multifunction cooker. Stir in the beans, canned tomatoes with juices, broth, water, chili powder, black pepper, salt, bacon, and cilantro.
  5. Close the lid and cook on high pressure for 45 minutes. Once the cooking cycle is complete, allow the pressure to release naturally for 45 minutes. Release any pressure manually before opening lid.
Stovetop Instructions
  1. Sort dried beans to remove debris. Rinse well under cold running water using a colander. Optional but recommended: Soak beans overnight OR quick-soak by boiling for 2 minutes, then letting sit for 1 hour. Drain before using.
  2. In a large pot or Dutch oven, cook bacon over medium heat until crisp. Remove bacon and place on a paper towel–lined plate. Leave the rendered fat in the pot. A heavy pot (like a Dutch oven) works best to prevent burning and keep even heat during the long simmer.
  3. Add onion and jalapeño (if using) to the pot. Cook, stirring often, until onions are translucent (about 2–3 minutes). Add garlic and cook for about 30–60 seconds, until fragrant.
  4. Stir in beans, diced tomatoes with juices, chicken broth, water, chili powder, pepper, salt, cooked bacon, and cilantro.
  5. Bring to a boil, then reduce heat to low. Cover and simmer gently for 2 to 2½ hours, or until beans are tender. Stir occasionally and add more water if needed to keep beans covered.
  6. Cook uncovered for a few minutes if you want a thicker consistency.

  2. Add bell pepper, onion, and garlic; sauté until vegetables are tender.
  3. Cut limes in half and squeeze lime juice directly into the vegetable mixture; tomatoes, and chicken broth to soup.
  4. Bring to a boil and reduce heat and simmer for 10 minutes.
  5. Stir in chicken, Cilantro, Jalapeño, salt, and pepper.
  6. Cook until thoroughly heated; about 10-15 minutes.
  7. Serve immediately.
