Ingredients
  • 2 1/2 tablespoons dark brown sugar
  • 2 tablespoons paprika
  • 2 teaspoons mustard powder
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1 1/2 teaspoons dried basil
  • 1 teaspoon ground bay leaves
  • 3/4 teaspoon ground coriander seed
  • 3/4 teaspoon ground savory
  • 3/4 teaspoon dried thyme
  • 3/4 teaspoon ground black pepper
  • 3/4 teaspoon ground white pepper
  • 1/8 teaspoon ground cumin
  • 1 teaspoon salt
Servings: (1 tablespoon)

  1. In a small bowl, mix together all of the spices.
  2. Store in an airtight jar at room temperature until ready to use.

Ingredients
  • 1/3 cup cider vinegar
  • 1/3 cup white vinegar
  • 1/3 cup olive oil
  • 1/3 cup fresh cilantro chopped
  • 6 cloves garlic minced
  • Juice of 1 lime
  • 2 tablespoons cumin
  • 1 tablespoon black peppercorns
  • 1 tablespoon dried oregano
  • 1 teaspoon salt

  1. Combine all ingredients and mix well.
  2. This marinade works best if it is made a day in advance so the flavors can blend.
  3. Marinate meat for about 6 hours.

Ingredients
Ingredient for Enchiladas
  • 1 - 4 ounce package nonfat cream cheese
  • 2 cups cooked chicken breast chopped
  • 12 ounces chunky salsa mild
  • 1 cup shredded Mexican blend cheese reduced fat
  • 10 corn tortillas
Sauce
  • 2 cups plain yogurt nonfat
  • 1 cup fresh cilantro chopped
  • 1 teaspoon ground cumin

  1. Heat cream cheese in large skillet over medium heat until soft.
  2. Stir in chicken and ½ cup of the salsa; mix well.
  3. Add 1/2 cup shredded cheese; stir until melted.
  4. Spoon enchilada filling onto each tortilla; roll up.
  5. Place seam side down in baking dish.
  6. Top with remaining salsa and cheese.
  7. Bake at 350̊ F for about 15 minutes, or until heated through and through.
  8. Serve with yogurt sauce.

Ingredients
  • 1 pound extra lean ground turkey
  • 1 - 15 ounce can low sodium black beans rinsed and drained
  • 1 cup salsa
  • 1/2 teaspoon cumin
  • 1/8 teaspoon ground red chili pepper
  • 1 - 8.5 ounce package corn muffin mix
  • 3/4 cup chicken broth 99% fat free
  • 1 egg
  • 3/4 cup shredded Mexican blend cheese reduced fat

  1. Preheat oven to 400° F.
  2. Brown ground turkey in skillet until no longer pink.
  3. Add black beans, salsa, cumin, and red pepper; simmer 2 minutes.
  4. Layer turkey mixture on bottom of 13×9 inch baking dish.
  5. In a medium bowl combine corn muffin mix, broth, and egg; stir well to combine.
  6. Spread corn mixture over turkey to cover.
  7. Sprinkle evenly with cheese.
  8. Bake 15 minutes or until edges are lightly browned.
  9. Cut into 8 squares and serve.
