This recipe is a delightful Italian dish, full of flavor with a delicious meat sauce. This penne pasta dish is a perfect, budget friendly, week night meal that the family will love! Bon Appetit!

Ingredients
  • 1 3/4 cup uncooked penne pasta
  • 1 lb extra lean ground beef
  • 1 (15 ounce) can unsalted tomato sauce
  • 1 (14 ounce) can low sodium, reduced fat, beef broth
  • 1 1/2 tsp Italian seasoning
  • 1/8 tsp salt
  • 1/4 tsp pepper
  • 2 cups fresh spinach chopped
  • 3/4 cup shredded mozzerella cheese reduced fat

Instructions
  1. Cook pasta according to package directions
  2. Meanwhile in a skillet, cook beef over medium heat until meat is no longer pink; drain.
  3. Stir in the tomato sauce, broth, Italian seasoning, salt and pepper.
  4. Bring to a boil.
  5. Reduce heat; simmer, uncovered, for 10 to 15 minutes or until slightly thickened.
  6. Add spinach; cook for 1-2 minutes or until spinach has turned dark green.
  7. Drain pasta; stir into beef mixture.
  8. Sprinkle with cheese; cover and cook for 3-4 minutes or until cheese is melted.

Ingredients
  • 3/4 lb lean chuck or round ground beef
  • 1/2 cup chopped onion
  • 1/2 cup diced tomatoes unsalted
  • 1 medium green bell pepper chopped
  • 1 (2 1/4 ounce) can sliced ripe olives drained
  • 1 tsp chili powder
  • 1 tsp minced garlic
  • 1/2 tsp ground cumin
  • 1 (1 pound) loaf French bread unsliced
  • 1 cup low fat sharp cheddar cheese shredded

  1. In a large skillet, cook beef and onion over medium heat until meat is no longer pink. Drain. Stir in tomatoes, green pepper, olives, salt, chili powder, garlic and cumin. Remove from heat.
  2. Cut bread in half lengthwise.
  3. Place on baking sheet.
  4. Spread meat mixture over cut slices.
  5. Sprinkle with cheese.
  6. Bake at 450°F for 10-15 minutes or until cheese is melted.
  7. Cook’s note: This recipe serves 8 so you may have enough for lunch the next day. To reheat, wrap in foil and heat in a 350° F oven for 10-15 minutes or until hot. This results in French bread that is soft. If you prefer crispy bread, place the loaf on a baking sheet and bake 10-15 minutes or until hot.

Ingredients
  • 1.5 lb round steak trimmed and cut into 1 inch pieces
  • 1 8 oz package fresh mushrooms sliced
  • 1 cup onion sliced
  • 1 cup celery sliced
  • 1 cup green bell pepper sliced
  • 1 tbsp garlic minced
  • 1 8 oz reduced sodium tomato sauce
  • 1/2 cup water
  • 1 14.5 oz tomatoes with green chilies
  • 1 .87 oz package brown gravy mix
  • 1/2 tsp ground black pepper

  1. In a 6 quart slow cooker, combine steak, mushrooms, onion, celery, bell pepper and garlic.
  2. In a medium bowl, combine all other ingredients. Pour over steak mixture. Cover and cook on low for 8 hours or 4-5 hours.
  3. Serve on a bed of wild or brown rice.

  • 2 teaspoons mustard powder
