Ingredients
Pea and Avocado Guacamole
  • 1/2 Cup frozen peas Thawed
  • 1 Medium Avocado Sliced
  • 1 jalapeno Seeded and diced
  • 1/3 Cup red onion Chopped
  • 1/4 Cup cilantro Chopped
  • 1/2 Teaspoon garlic Minced
  • 2 Tablespoons lime juice About 1 Small Lime
  • 1/4 Teaspoon salt
Other toppings
  • 3 Slices 100% whole wheat bread
  • 1/2 Cup cherry tomatoes Sliced in Half
  • 3 Tablespoons feta cheese Crumbled
  • 1/2 Tablespoon hot sauce
Servings: 1/3 Cup Guacamole + 1 Slice of Toast

Instructions
  1. Pulse the peas in a food processor until smooth.
  2. Transfer peas to a medium bowl. To the same bowl, add the flesh of the avocado. Combine avocado and peas by smashing together into a chunky texture.
  3. To the avocado mixture, add jalapeno, red onion, cilantro, garlic, lime juice, and salt. Stir to combine. Set aside.
  4. Toast bread to desired doneness.
  5. Evenly divide the guacamole by spreading onto the toast (about 1/3 Cup)
  6. Top the toast with an even division of the cherry tomatoes, feta cheese, and hot sauce.
  7. Serve immediately

Ingredients
  • ¾ Cup unsweetened applesauce
  • 2 egg whites (1/4 cup)
  • 2 Tablespoons brown sugar
  • 1 Tablespoons orange zest
  • 1/2 Cup 100% orange juice
  • ½ Cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1/4 Cup chia seeds
  • 4 Cups rolled “old fashion” oats
  • 1/4 teaspoon baking soda
  • 1/2 Cup dried cranberries
  • 1/2 Cup pecans chopped

Instructions
  1. Preheat oven to 350°F and spray a 9x9 casserole dish with nonstick cooking spray.
  2. In a small bowl whisk applesauce, egg whites, and brown sugar until combined.
  3. To the mixture add orange zest, orange juice, almond milk, vanilla extract, and chia seeds. Mix until combined and set aside.
  4. In a large bowl add rolled oats, baking soda, dried cranberries, and pecans. Stir until mixed.
  5. Add the liquid mixture to the dried oat mixture and stir until combined.
  6. Pour mixture into the prepared casserole dish and bake in preheated oven for 25 to 30 minutes or until set. Serve warm or once cooled cut into to 12 pieces and store in an airtight container in the refrigerator for up to five days.

Ingredients
  • 1 Cup apple shredded with peel
  • 3/4 Cup all-purpose flour
  • 1 Cup Yellow Cornmeal
  • 1 Tbsp sugar
  • 1/2 Tsp baking powder
  • 1/2 Tsp baking soda
  • 1/2 Tsp salt
  • 1 Tsp cinnamon
  • 1/3 Cup unsweetened applesauce
  • 1 Cup skim milk
  • 2 large eggs
  • 1 Tbs powdered sugar

Instructions
  1. Wash hands and clean cooking area.
  2. Shred apple using a grater and set aside.
  3. In a large mixing bowl, add the dry ingredients (flour, yellow cornmeal, sugar, baking powder, baking soda, salt and cinnamon) and mix until well combined.
  4. Add the wet ingredients (unsweetened applesauce, skim milk, and eggs) and shredded apple to the dry ingredients and gently stir until just combined.
  5. Heat cooking skillet to medium-high heat and spray with a non-stick cooking spray.
  6. Pour 1/10th (approximately ¼ cup) of mix onto the skillet to create a pancake.
  7. Cook until bubbles appear and cover the top of the pancake. Flip and cook another minute.
  8. Continue until the batter has made approximately ten pancakes.
  9. Serve with a dusting of powdered sugar and enjoy!

Ingredients
  • 30 ounces canned sliced peaches in juice, drained with ½ cup liquid reserved
  • 1.5 cups rolled oats dry
  • 1/2 cup all-purpose flour
  • 3 Tablespoons brown sugar
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup pecans chopped
  • 1.5 Tablespoons butter melted

  1. Clean your area and wash your hands before you begin.
  2. Preheat the oven to 350 degrees
  3. Grease a 9x9 inch baking pan and pour in the drained peaches.
  4. In a bowl combine oats, flour, brown sugar, salt, cinnamon, and pecans.
  5. Add in the melted butter and 1 Tablespoon of the reserved liquid. Using a fork stir and combine the mixture. Continue to add in 1 Tablespoon of reserved liquid at a time until oats are just holding together.
  6. Cover the peaches with the crumble topping.
  7. Bake covered for 15 minutes and uncovered for 15 minutes or until the crumble is browning.
  8. For dessert, serve with whipped cream or frozen yogurt!
Air Fryer Instructions
  1. Clean your area and wash your hands before you begin.
  2. Preheat the air fryer at 350 degrees F for 3-5 minutes.
  3. Grease a 9x9 inch baking pan or air fryer tray and pour in the drained peaches.
  4. In a bowl combine oats, flour, brown sugar, salt, cinnamon, and pecans.
  5. Add in the melted butter and 1 Tablespoon of the reserved liquid. Using a fork stir and combine the mixture. Continue to add in 1 Tablespoon of reserved liquid at a time until oats are just holding together.
  6. Cover the peaches with the crumble topping.
  7. Cook the peach crumble in the air fry covered for 15 minutes and uncovered for 15 minutes or until the crumble is browning.
  8. For dessert, serve with whipped cream or frozen yogurt!

Ingredients
  • 1 cup Medjool dates pitted
  • 1 cup dried apricots
  • 2 Tablespoons chia seeds
  • 1/4 teaspoon cinnamon
  • 1 cup raw pumpkin seeds (pepitas)
  • 1 1/2 cup white chocolate chips
  • 1/4 cup semi-sweet chocolate chips for drizzle
  • 1/4 teaspoon nutmeg
  • 1 cup almond pieces
  • 2 Tablespoons hemp seeds

  1. Wash hands and clean and sanitize the food preparation area.
  2. Line an 8×8 square pan with wax or parchment paper.
  3. Place dates, apricots, chia seeds, cinnamon, nutmeg, and almond pieces in a food processor and process until well combined
  4. Use a spatula to scrape the mixture off the sides of the food processor.
  5. Add pepitas to the mixture in the food processor, and pulse until there are small pieces of pepitas.
  6. Use a spatula once again to break up the mixture.
  7. Add white chocolate chips and pulse a few times to break and distribute the chips slightly.
  8. Empty the mixture into the prepared pan and press the mixture into the pan until even.
  9. Refrigerate for 30-45 minutes, then slice into bars or squares.
  10. Place the chocolate chips in a microwave-safe bowl and heat for 30 seconds or until melted. Drizzle the melted chocolate over the refrigerated bars.
