Ingredients
  • 2 teaspoons olive oil
  • 4 4-oz. lean, boneless pork loin chops
  • 1/8 teaspoon black pepper
  • 1 leek sliced
  • 1 medium tart apple sliced
  • 1 teaspoon rosemary fresh
  • 1/2 teaspoon grated orange peel
  • 1 cup apple juice unsweetened
  • 1 Tablespoon cornstarch
  • 2 Tablespoons water
  • 1/4 teaspoon salt

Instructions
  1. Heat skillet with olive oil, season pork chops with pepper, and brown chops in oil for 3 to 4 minutes. Turn chops; add apple and leak, Cook for 3 to 4 minutes.
  2. Add Rosemary, orange peel, and apple juice and bring to a boil. Reduce heat; simmer, uncovered, for 3 minutes.
  3. Combine cornstarch , water, and salt until smooth; add to skillet. Bring to a boil; cook and stir for 2 minutes or until thickened.

Banana Apple Muffins

This banana-apple muffin is a yummy way to provide a nutritious start to your family’s day or as a snack to refuel kids after school. The whole-wheat base, and mix of applesauce and bananas, makes these muffins an easy way to incorporate whole grains and fruit into your day. We like to pair a muffin with fruit and low-fat yogurt for a simple, yet filling breakfast. After school, this muffin and a side of fruit is perfect served alongside homework!

Ingredients
  • 1 1/2 cups white whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup skim milk
  • 1/4 cup granulated white sugar
  • 1/2 teaspoon vanilla extract
  • 1 large egg
  • 2 medium ripe bananas peeled and mashed

  1. Preheat oven to 350 degrees.
  2. Wash your hands and clean your cooking area.
  3. Combine white whole wheat flour, baking powder, baking soda, and salt. Set aside.
  4. Whisk applesauce, milk, sugar, vanilla, and egg until well combined. Gently add bananas to wet ingredients.
  5. Fold flour mixture into wet ingredients, just until combined.
  6. Divide muffin batter among 12 lined muffin tins.
  7. Bake 18-20 minutes, until cooked through.

How to offer new foods!

Enjoying new foods with your family is an opportunity to grown towards a healthy eating pattern. Whether this is their first time trying a new food, it is important to talk to your children and encourage them to make new fun food choices.

Here are a few tips in getting your child to try new foods!

Offer a new food first, at the beginning of a meal.  

Children are more likely to eat a new veggie or food when they are hungry.  Be sure to serve them the new food before serving the rest of the meal.

Prepare new foods in many different ways.  

Sometimes it is not the food the child does not like; it is how the food is prepared.  If your child does not like the food the first time, try it again either raw or cooked in a dish rather than by itself.

Engage your children in foods by having them describe the food by color, shape, feel, smell, and sound!  

This can make dinner entertaining!  Ask your children to describer the food in positive ways! Making trying new foods fun can help them develop their “taste” for a variety of foods!

Get them out in the garden and let them grow their favorite veggie!  

If you have a garden or even a small container, have your children grow a new vegetable or fruit and let them decide how to make it it!

Try new foods with your children.

 Children learn from watching others.  If you try a new food, they are more likely to try foods with you.

Food variety makes eating more interesting and incorporates a variety of foods into a healthy eating pattern.

Ingredients
Pears
  • 4 pears cored, halved
  • 1 tbsp olive oil
Nut Oat Crumble
  • 1/4 cup rolled oats
  • 1/4 cup pecans chopped
  • 2 tbsp honey
  • 2 tbsp almond slivers
  • 2 tbsp brown sugar

Instructions
  1. Core and slice pears in half, place flesh side up on an ungreased baking sheet.
  2. Bush flesh side of pears with olive oil, bake in oven at 350 degrees for 10 minutes
  3. While pears are cooking, combine oats, pecans, honey, almonds, and brown sugar in a bowl until well combined.
  4. Remove pears from the oven and evenly distribute topping among the pear halves. Bake in the oven for an additional 5 minutes. Remove and enjoy!

Ingredients
  • 1 pie crust pre-made
  • 2 cup fruit blueberries, blackberries, cherries, pears, apples, raspberries, apricots, and plums work best
  • 1 cup 2% milk
  • 3 eggs
  • 1 tsp vanilla extract
  • 1/4 cup sugar
  • 1/2 cup all-purpose flour

  1. In a 9x9 round baking pan, place the pre-made pie crust and press down to mold it to the pan.
  2. Place your fruit of choice evenly around the bottom of the pan. For fruit like blueberries, blackberries, raspberries, and cherries just rinse and dry the fruit. For fruit like pears, apples, and plums, you will want to wash, core, and slice the fruit, and peel if you prefer.
  3. In a large bowl mix the milk, eggs, vanilla, sugar, and flour together. Then pour evenly over fruit and crust.
  4. Bake in the oven at 375 degrees for 35 to 40 minutes or until an inserted fork comes out clean.
