Ingredients
  • 6 slices 100% whole wheat bread
  • 1 12 oz can tuna in water drained, can use lower sodium
  • 1 small apple chopped
  • 1/4 cup low fat or fat free vanilla yogurt
  • 1 tsp mustard
  • 1 tsp honey

Instructions
  1. Wash your hands and clean your cooking area.
  2. Combine tuna, apple, yogurt, mustard, and honey in a mixing bowl.
  3. Mix and spread evenly on three bread slices.
  4. Top with remaining bread slices and cut in half or as desired
  5. Serve immediately.

Ingredients
  • 1 (15 ounce) can salmon boneless, skinless
  • 1/3 cup reduced fat mayonnaise can use canola or olive oil mayo
  • 2 tbsp chopped onion
  • 2 tsp fresh lemon juice
  • 3/4 cup shredded, reduced fat cheddar cheese
  • 4 English muffins multi or whole grain
  • 1/4 tsp pepper

  1. Drain salmon.
  2. Add onion, mayonnaise, lemon juice, and pepper to taste.
  3. Mix well. Add half of cheddar cheese to salmon mixture.
  4. Spread on English muffin halves and place on baking sheet.
  5. Top with remaining cheese. Broil in oven for 3-4 minutes.

Ingredients
  • 1 1/2 lb extra lean ground beef
  • 1 large yellow onion chopped
  • 2 (15 ounce) cans Ranch style beans
  • 1 (15 ounce) can low sodium kidney beans
  • 1 (15 ounce) can low sodium kernel corn
  • 2 (15 ounce) cans low sodium stewed tomatoes
  • 1 (10 ounce) can diced tomatoes with green chilies
  • 1/2 ounce low sodium taco seasoning about 1/2 of one packet
  • 1/2 ounce dry ranch style dressing mix about 1/2 of one packet

  1. Cook ground beef with chopped onion; drain grease.
  2. Add to large crock pot.
  3. Clean tops of all canned goods before opening
  4. Then add other ingredients (including liquid from vegetables) to the meat mixture in the crock pot.
  5. Stir well. Simmer in crock pot on low for 6-8 hours or on high for 4 hours.

Here’s a healthy and delicious meal that can be made in a snap! This recipe makes a simple Asian side dish or easy, hearty meal that can be served hot or cold.  Here’s a tip, shallots are preferred in this recipe over onions due to their lighter flavor.

Ingredients

  • 8 oz soba noodles
  • 2 cups sugar snap peas cut in half
  • 1/2 cup shredded carrots
  • 1/2 cup shredded cabbage
  • 1 small bell pepper diced
  • 2 tsp shallots minced
Dressing
  • 2 Tbsp olive oil
  • 2 Tbsp low sodium soy sauce
  • 1 Tbsp rice vinegar
  • 1 tsp sesame oil

  1. Clean your area and wash your hands before you begin.
  2. Bring 4 cups of water to a boil. Add the soba noodles and cook for 4 minutes. In the last 30 seconds of cooking, add the snap peas. Drain and then rinse the noodle and pea mixture in cool water.
  3. Place the noodles and peas in a large bowl and add the carrots,cabbage, pepper and shallots.
  4. Whisk together all the ingredients for the the dressing and pour over salad. Refrigerate for at least 20 to 30 minutes.

Ingredients
  • 8 slices whole grain bread
  • 1 Tablespoon dijon mustard
  • 4 slices swiss cheese
  • 8 oz thin sliced turkey breast low sodium
  • 1 large avocado sliced
  • 1 cup red grapes sliced in half
  • 4 sprays Olive Oil Cooking Spray

  1. Place bread slices on a clean surface. Spread mustard evenly on 4 bread slices.
  2. Layer your sandwiches with 1-2 slices of turkey meat,1 slice swiss cheese, sliced avocado. Last, top with sliced grapes.
  3. Place the remaining 4 slices of bread on top of the sandwich.
  4. Heat a large skillet on medium-high heat. Spray with cooking spray and grill each side of the sandwich for 2-3 minutes.
  5. Remove from heat and enjoy.
