Ingredients
  • 1 1/4 pounds chicken breast boneless, skinless
  • 1 cup water
  • 1 Tablespoon corn starch
  • 2 Tablespoons sesame oil
  • 2 Tablespoons Sriracha Sauce
  • 3 Tablespoons soy sauce low sodium
  • 2 teaspoons minced garlic
  • 1 teaspoon fresh ginger root paste
  • 5 cups broccoli florets fresh
  • 1 ablespoon sesame seeds
  • 2 cups cooked brown rice

Instructions
  1. Wash and clean your hands and preparation area. Rinse any fresh vegetables under cool running water before chopping.
  2. Cut the chicken breast into bite-size pieces. Heat the olive oil in a large pan over medium to medium-high heat. Cook the chicken breast in the pan for about 5-7 minutes or until pink can no longer be seen.
  3. While chicken is cooking, combine water, corn starch, sesame oil, sriracha sauce, soy sauce, garlic, and ginger in a bowl and whisk together until well combined.
  4. Reduce the heat to medium and add the broccoli florets to the pan and combine the chicken and broccoli. Add in the sauce mixture then cover and cook for about 5-10 minutes, stirring occasionally.
  5. Remove the lid and continue to cook until sauce has thickened and chicken has reached a minimum internal temperature of 165°F. Top with sesame seeds and serve over brown rice.

You can make the meatballs beforehand and freeze them until you are ready to put all the ingredients in the slow cooker to save you even more time in the kitchen and give you more time to celebrate with family!

Ingredients
Meatballs
  • 2 pounds lean ground beef
  • 1 teaspoon garlic powder
  • 2 teaspoons onion powder
  • 2 large eggs
  • 1/2 teaspoon black pepper
  • 1 teaspoon kosher salt
  • 1/2 cup breadcrumbs plain
  • 1 cup 2% milk
  • 2 tablespoon Parmesan cheese grated
Orange Cranberry Sauce
  • 1/2 cup jellied cranberry sauce
  • 1/2 cup sugar-free orange marmalade with Splenda
  • 1 tablespoon dehydrated minced onions
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil or spray non-stick cooking spray
  • 1/4 cup Chopped parsley for garnish

Meaballs
  1. Clean area and preheat oven at 425 degrees.
  2. Line two baking sheets with foil and set them aside.
  3. Place all the ingredients for the meatballs in a large mixing bowl. Gently mix with your hands until well combined. Do not overmix.
  4. Use a small scooper to portion out meatballs to ensure they are all the same size and cook evenly. Place on foil-lined baking sheet.
  5. Bake meatballs in over for 10-14 minutes or until internal temperature reaches 160 degrees.
Meatballs & Sauce
  1. Once the meatballs have been cooked, lightly spray your slow cooker with a non-stick cooking spray and add meatballs.
  2. Top the meatballs with the remaining ingredients listed for the orange cranberry sauce and stir to coat the meatballs well.
  3. Cover and cook on high for 2 hours. Turn heat to low until ready to serve.
  4. Note: Cooked meatballs can be stored in the refrigerator for 3 days or frozen for up to 3 months.

Ingredients
  • 1 teaspoon olive oil
  • 1 pound chicken breast skinless, boneless
  • 14.4 ounces frozen peppers
  • 4 ounces canned mushrooms drained
  • 1 cup brown rice cooked
  • 3/4 cup low sodium chicken broth
  • 2 Tablespoons low sodium soy sauce
  • 1 Tablespoon honey
  • 1 teaspoon sesame oil
  • 2 teaspoons ginger root grated
  • 2 garlic cloves grated
  • 1/2 Tablespoon cornstarch

  1. Wash hands and clean preparation area. Clean the rims of any canned food before opening.
  2. Cut the chicken breasts into bite-size pieces, removing and discarding any fat.
  3. In a small bowl, add in all sauce ingredients and stir until well combined and cornstarch is dissolved.
  4. In a large skillet heat up olive oil over medium-high heat. Once hot, place chicken in the skillet and let brown for 2-3 minutes. Stir and let brown for another 2-3 minutes.
  5. Add in the frozen peppers and mushrooms, cook covered for 5-7 minutes stirring once.
  6. Remove covering and pour in the prepared sauce. Cook for another 5 minutes or until the sauce has thickened and the chicken has reached 165* Fahrenheit.
  7. Serve 1/4th of chicken stir fry with ¼ cup brown rice.

Greek Meatballs

These meatballs are great for any meal or occasion, but my favorite reason to make these is for leftovers!  Meatballs are a great protein option to make ahead and pack for lunch.  They are delicious with fresh spinach salads, pasta salads, or just sliced cucumbers.  I love to serve these little guys with fresh tzatziki!

Ingredients

  • 1 pound 93% lean ground turkey
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano ground
  • 1/2 teaspoon pepper ground
  • 1/4 teaspoon salt
  • 1/4 cup plain breadcrumbs dry, grated
  • 10 ounces frozen spinach leaves thawed and drained
  • 1/2 cup reduced fat feta cheese crumbled
Tzatziki Sauce
  • 1 English cucumber shredded and drained
  • 1 1/2 cups Greek yogurt plain, nonfat
  • 2 garlic cloves minced
  • 1/4 teaspoon salt
  • 1/4 cup fresh dill chopped
  • 2 Tablespoons lemon juice fresh

  1. Wash your hands and clean your preparation area.
  2. For the tzatziki, use a box grater or food processor to shred the cucumber. Drain any excess liquid.
  3. In a small bowl, combine all ingredients evenly in a bowl. Cover and refrigerate for flavors to meld between 20 to 30 minutes or up to 2 hours before serving.
  4. In a large bowl, mix ground turkey, garlic powder, oregano, salt, pepper, and breadcrumbs.
  5. Stirring evenly, add thawed and drained spinach, then add feta cheese.
  6. Make meatballs using a tablespoon for a perfect measurement.
  7. Warm a skillet or pan to medium heat. Evenly coat with cooking spray and arrange meatballs around the pan.
  8. Cook for 2-3 minutes and rotate individually on all sides until browned and cooked to an internal temperature of 165 degrees F.
  9. Serve with some tzatziki on the side or as a dip.
Air Fryer
  1. Wash your hands and clean your preparation area.
  2. For the tzatziki, use a box grater or food processor to shred the cucumber. Drain any excess liquid.
  3. In a small bowl, combine all ingredients evenly in a bowl. Cover and refrigerate for flavors to meld between 20 to 30 minutes or up to 2 hours before serving.

  10. Serve with some tzatziki on the side or as a dip.

Chicken Tacos
  • 1.5 pounds chicken breast skinless, boneless
  • 10 ounces diced tomatoes with green chilies
  • 2 Tablespoons taco seasoning
  • 1/2 white onion diced
  • 2 Tablespoons water
  • 12 white corn tortillas
Roasted Street Corn
  • 2 teaspoons olive oil
  • 12 ounces corn kernels frozen
  • 2 jalapeno peppers seeded and diced
  • 1 teaspoon chili powder
  • Juice of 1 lime
  • 1/2 cup cilantro leaves chopped
  • 1/3 cup cotija cheese grated

  1. Wash your hands and clean your preparation area. Rinse any fresh vegetables under cool running water before chopping. Wash the tops of cans before opening.
  2. Place the chicken breast, diced tomatoes, taco seasoning, onion, and water into the slow cooker. Cook on high for 4 hours or low for 6 hours. Ensure chicken reaches the proper internal temperature of 165* degrees.
  3. In a medium-size skillet heat the olive oil over medium heat. Add the corn and jalapeno peppers to the skillet. Let cook without moving for a couple of minutes to slightly scorch the corn. Add the chili powder and cook until the corn is cooked through and to your desired level of scorched. Remove from heat and add the lime juice and cilantro.
  4. Remove the chicken from the slow cooker and shred for assembly.
  5. To assemble the tacos gather your tortillas and add the chicken, roasted corn, and top with the cotija cheese.
