Ingredients
  • vegetable oil cooking spray
  • 3 4 ounce chicken breast boneless, skinless
  • 1/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup chicken broth fat-free, low-sodium
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon fresh, minced garlic
  • 1 medium onion chopped
  • 1 large russet potato cubed
  • 4 carrots chopped

Instructions
  1. Lightly spray the slow cooker with cooking spray.
  2. Lay the chicken breasts on the bottom of slow cooker and add salt, pepper, and chicken broth.
  3. In a small bowl, mix balsamic vinegar and garlic; set aside.
  4. Add onion, potato, and carrots to the slow cooker.
  5. Pour balsamic vinegar mixture on top and cook on low for 6-8 hours or until it reaches an internal temperature of 165 degrees fahrenheit.

White chicken chili is full of ingredients with great nutritional value. This recipe is low in fat and high in protein. This versatile chicken chili gives you one more reason to use your slow cooker … which may be your favorite kitchen appliance in the fall! Preparation is easy and quick, dinner is ready when you get home, and cleanup is a snap. Add a few corn tortilla chips for a crunch and you have a full meal!

Ingredients
  • 1 lb boneless, skinless chicken breasts
  • 2 garlic gloves minced
  • 1 cup white onion chopped
  • 3 1/2 cups salt free, reduced fat chicken broth
  • 4 (4.5ounce) cans chopped green chilies
  • 2 teaspoons cumin
  • 1 teaspoon oregano
  • 2 (11 ounce) can shoe peg or kernel canned corn unsalted and un-drained
  • 2 (15 ounce) cans navy beans undrained
  • 3 Tablespoons lime juice

Slow Cooker Directions
  1. Spray skillet with cooking spray.
  2. Sautè chicken until done. When cooled, shred chicken or cut into 1 inch cubes. Remove chicken from skillet.
  3. Sautè onions and garlic in skillet sprayed with cooking spray.
  4. Cook until onions are tender.
  5. Spray inside of slow cooker with cooking spray or use a plastic slow cooker liner.
  6. Combine all ingredients, except lime juice, and cook on low for 8-10 hours or on high for 4-5 hours.
  7. Just before serving, add lime juice and stir.
Multifunction Cooker Directions
  1. Put 1 Tablespoon canola oil in the inner pot, cube chicken breast and add to the pot. Sauté until chicken is beginning to brown.
  2. Add the onion to the chicken and cook until it begins to become translucent.
  3. Add remaining ingredients except lime juice and close the pot set the vent to closed.
  4. Cook on high pressure for 12 minutes and allow to natural release
  5. Remove the lid carefully, stir in lime juice, and serve.

Ingredients
  • 1 14.5 ounce can diced tomatoes unsalted and undrained
  • 1 6 ounce can tomato paste unsalted
  • 1 green bell pepper chopped
  • 1 4 ounce package sliced fresh mushrooms
  • 1 small onion chopped
  • 1/2 tsp Italian herb blend no sodium added
  • 1 pound pork tenderloin
  • 2 cups penne pasta cooked
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 1/2 cup low fat mozzarella cheese grated or shredded

  1. Mix tomatoes and tomato paste in slow cooker until well blended. Stir in vegetables and add Italian seasoning.
  2. Cut mean into 8 pieces. Add to slow cooker; cover with lid. Cook low 4 to 4 1/2 hours.
  3. Cook pasta as directed on package, omitting salt. When meat is cooked, transfer to plate reserving sauce in slow cooker. Cover meat to keep warm. Mix cornstarch and water until well blended. Add to sauce; stir. Cover an cook for 6-8 minutes.
  4. Drain pasta; spoon onto plate. Top with meat, sauce and cheese.

  • 2 pounds boneless, skinless chicken breasts
  • 2 cups reduced sodium cream of chicken soup
  • 1 onion diced
  • 2 carrots sliced
  • 2 medium celery stalks chopped
  • 10 ounces of refrigerated reduced-fat biscuit dough torn into pieces
  • 1 cup of frozen peas

  1. Place chicken, margarine, cream of chicken soup, and onion in slow cooker. Cover and cook on high for 6 hours. Stir in carrots and celery after 5 hours of cooking
  2. Place torn biscuit dough in slow cooker 30 minutes before serving. Cook until dough is no longer raw in the center about 25 minutes. Peas will be added in the last 10 minutes of cooking... Serve warm.

  • 1 white onion chopped, divided
  • 2 cups parsley leaves chopped
  • 5 teaspoons rosemary fresh
  • 2 teaspoons thyme fresh
  • 5 pound Turkey Breast or turkey roast
  • 1 cup chicken broth low fat, low sodium
  • 1 cup water

  1. Place chopped onion and parsley in the bottom of the slow cooker. Then place rosemary and thyme on top.
  2. Place turkey on top of onion and herbs.
  3. Pour 1 cup chicken broth and 1 cup water over turkey, onion, and herbs.
  4. Cook for 6-8 hours on low.
  5. Slice and enjoy with a delicious side.
