Instructions
Peel pears and leave whole. If needed cut bottoms, so they will sit flat.
Whisk together apple cider, orange juice, and spices.
Add pears to the Instant pot, stem up and pour in cider mixture.
Secure the cooker lid and turn pressure release knob to a sealed position.
Cook at high pressure for 6 minutes.
When cooking is complete, use a quick release.
With a slotted spoon, carefully remove the pears from the pot and set aside.
Turn cooker to sauté and bring poaching liquid to a boil, continue cooking, stirring occasionally to prevent scorching, until liquid is reduced to a thick sauce.
In food processor with S blade attachment, add cottage cheese and process until smooth.
Leave pears whole and serve on a bed of cottage cheese with two tablespoons of the reduced sauce.
