Cinnamon Apple Breakfast Casserole is a delicious and healthy breakfast option! Whether you’re meal prepping for the week or serving a group, this casserole can be easily pulled together. You can even assemble it the night before and bake in the morning!

Ingredients
  • 2 Tablespoons Tablespoons unsalted butter
  • 2 large apples
  • 1.5 teaspoon cinnamon
  • 12 slices 100% whole wheat bread
  • 6 large eggs
  • 1.5 cups 2% milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon nutmeg
  • 1/4 cup brown sugar divided
  • 1/3 cup pecans chopped

Instructions
  1. Wash hands and clean preparation area, rinse apples under cool running water. Preheat your oven to 375 Degrees F.
  2. Remove the core from the apples and chop into small chunks.
  3. In a medium saucepan melt the butter.
  4. Add the apples and toss until all of the apples are coated with butter. Let the apples sit and begin to soften on a medium heat, stir occasionally.
  5. Add in ground cinnamon and toss. Add 1 Tablespoon brown sugar and add to the apples. This will help the apples brown and soften more. Lower the heat to simmer and set aside after 5 minutes.
  6. In a medium bowl, whisk eggs and milk together, adding in ground nutmeg and vanilla and remaining brown sugar. Cut the bread into large chunks and add pieces to a baking pan.
  7. Pour the egg mixture over the bread, letting the bread soak up the egg and milk. Make sure to coat all of the bread.
  8. Once the apples are done, layer the apples onto the bread and fill all open spaces with apples.
  9. Cover the casserole and place in the oven and bake for 30 minutes. Remove from oven and sprinkle chopped pecans on top, cook for an additional 10 minutes or until the egg has set and the pecans are aromatic.

Ingredients
  • 6 medium pears Bosc, Bartlett, or Anjou
  • 3 cups Honeycrisp apple cider
  • 1/2 cup orange juice
  • 2 teaspoons cinnamon ground
  • 2 teaspoons cloves ground
  • 1 teaspoon allspice ground
  • 1/2 teaspoon nutmeg ground
  • 1/2 teaspoon Chinese five spice
  • 3 cups cottage cheese, 1%

  1. Peel pears and leave whole. If needed cut bottoms, so they will sit flat.
  2. Whisk together apple cider, orange juice, and spices.
  3. Add pears to the Instant pot, stem up and pour in cider mixture.
  4. Secure the cooker lid and turn pressure release knob to a sealed position.
  5. Cook at high pressure for 6 minutes.
  6. When cooking is complete, use a quick release.
  7. With a slotted spoon, carefully remove the pears from the pot and set aside.
  8. Turn cooker to sauté and bring poaching liquid to a boil, continue cooking, stirring occasionally to prevent scorching, until liquid is reduced to a thick sauce.
  9. In food processor with S blade attachment, add cottage cheese and process until smooth.
  10. Leave pears whole and serve on a bed of cottage cheese with two tablespoons of the reduced sauce.

  • 10 each wonton wrappers
Apple Filling
  • 4 small apples
  • 2 Tablespoonss maple syrup
  • 1 teaspoon coconut oil
  • 1 teaspoon cinnamon
  • 1/4 cup sugar
  • 1 teaspoon cinnamon
Sauce
  • 10 each Medjool dates pitted
  • 1/2 cup coconut milk
  • 2 Tablespoonss maple syrp
  • 1/4 teaspoon cinnamon
  • 4 Tablespoons water
  • 1/4 teaspoon vanilla extract

Apple Pie Filling
  1. Preheat airfryer to 380 degrees F and spray with Spray oil.
  2. In a medium mixing bowl, add the peeled apple cubes and toss with 1 tablespoon maple syrup, coconut oil, sugar and cinnamon
  3. Add mixture to air fryer basket in an even single layer.
  4. Airfry for 10-14 minutes, shaking half way through. They should be soft and golden.
  5. Remove from airfryer and toss with remaining 1 tablespoon of maple syrup.
Sauce
  1. Boil the dates in a saucepan with just enough water to cover for 10 minutes.
  2. Drain, but reserve 4 tablespoons of the water and let sit until cool to the touch. Lightly chop dates and place in food processer with coconut milk, maple syrup, cinnamon and reserved water. Blend until super smooth.
  3. Pour sauce back into the saucepan and bring to a rolling boil. Simmer for about 5 minutes or until sauce thickens.
Assembly
  1. Lay out wonton wrappers out on a flat surface.
  2. Place 1 ½ teaspoons of the apple mixture in the middle of the wonton wrapper.
  3. Place 1 teaspoon of the caramel sauce on top of filling.
  4. Using the back of the teaspoon, dip it in the caramel sauce and run it along the edges of the wonton wrapper
  5. Pull the 4 edges of the wrapper up in a little bunch and pinch together to secure.
  6. Place assembled wonton wrappers in the airfryer until full and spray with spray oil to coat the wontons.
  7. Close airfryer and bake at 350 degrees F for 7 minutes.
  8. When baked, remove wontons from airfryer and drizzle with caramel sauce if desired.

  • 1/2 teaspoon cinnamon
  • 1/4 cup dried cranberries
  • 1/4 cup chopped pecans
  • 1/4 cup shredded coconut unsweetened

  1. In food processor with S blade attachment, add pitted dates and process until they form a paste.
  2. Add the almond butter and cinnamon process until combined.
  3. Add the cranberries, pecans, and ¼ cup coconut and pulse until combined.
  4. Remove blade from food processor, scoop out dough into 2 tablespoon portions and roll into balls.
  5. Refrigerate 30 minutes to set.
  6. Enjoy!

  • 2 large eggs
  • 1 overripe banana mashed
  • 1 cup fresh spinach
  • 1 cup grated carrots
  • 1/4 cup Avocado Oil
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 2 teaspoons apple cider vinegar
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 cup cocoa powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup chocolate chips

  1. Preheat your oven to 350 ℉ and spray a 12-hole muffin tin with baking spray. Set aside.
  2. In a food processer, combine eggs, banana, spinach, carrots, oil, maple syrup, vanilla, and vinegar. Blend until mixture is smooth.
  3. Add flour, baking soda, baking powder, cocoa powder, cinnamon, and salt. Process until just mixed.
  4. Fold in chocolate chips. Portion batter into prepared muffin tin. Bake for 20-22 minutes or until a toothpick inserted into the middle comes out clean. Let cool in pan for 5 minutes before transferring to a cooling rack.
