Mini Apple Pies Airfryer

Craving something sweet? These quick and easy mini apple pies are perfect for a snack or holiday dessert! Just mix diced apples with cinnamon, maple syrup, coconut oil and sugar, fill store bought wonton wrappers, and air fry until golden. Serve warm with vanilla ice cream for an extra treat!

Ingredients

  • 10 each wonton wrappers
Apple Filling
  • 4 small apples
  • 2 Tablespoonss maple syrup
  • 1 teaspoon coconut oil
  • 1 teaspoon cinnamon
  • 1/4 cup sugar
  • 1 teaspoon cinnamon
Sauce
  • 10 each Medjool dates pitted
  • 1/2 cup coconut milk
  • 2 Tablespoonss maple syrp
  • 1/4 teaspoon cinnamon
  • 4 Tablespoons water
  • 1/4 teaspoon vanilla extract

Apple Pie Filling
  1. Preheat airfryer to 380 degrees F and spray with Spray oil.
  2. In a medium mixing bowl, add the peeled apple cubes and toss with 1 tablespoon maple syrup, coconut oil, sugar and cinnamon
  3. Add mixture to air fryer basket in an even single layer.
  4. Airfry for 10-14 minutes, shaking half way through. They should be soft and golden.
  5. Remove from airfryer and toss with remaining 1 tablespoon of maple syrup.
Sauce
  1. Boil the dates in a saucepan with just enough water to cover for 10 minutes.
  2. Drain, but reserve 4 tablespoons of the water and let sit until cool to the touch. Lightly chop dates and place in food processer with coconut milk, maple syrup, cinnamon and reserved water. Blend until super smooth.
  3. Pour sauce back into the saucepan and bring to a rolling boil. Simmer for about 5 minutes or until sauce thickens.
Assembly
  1. Lay out wonton wrappers out on a flat surface.
  2. Place 1 ½ teaspoons of the apple mixture in the middle of the wonton wrapper.
  3. Place 1 teaspoon of the caramel sauce on top of filling.
  4. Using the back of the teaspoon, dip it in the caramel sauce and run it along the edges of the wonton wrapper
  5. Pull the 4 edges of the wrapper up in a little bunch and pinch together to secure.
  6. Place assembled wonton wrappers in the airfryer until full and spray with spray oil to coat the wontons.
  7. Close airfryer and bake at 350 degrees F for 7 minutes.
  8. When baked, remove wontons from airfryer and drizzle with caramel sauce if desired.

* Perfect on toast topped with berries for breakfast!

* Pack ahead of time for ready to go snacking.

* Spread on graham crackers or dip with pretzels.

  • 4 tablespoons coconut milk
  • 5 tablespoons unsweetened cocoa powder
  • 2 tablespoons maple syrup
  • 1 tablespoon olive oil
  • 1 teaspoon vanilla extract

  1. Clean your area and wash your hands before you begin.
  2. Blend garbanzo beans in a food processor until smooth.
  3. Add coconut milk, cocoa powder, maple syrup, olive oil and vanilla extract, blend well.
  4. Refrigerate until ready to serve.

Ingredients
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 1 head broccoli chopped
  • 1 tablespoon curry powder
  • 2 - 14.5 ounce can diced tomatoes unsalted
  • 1 cup coconut milk light
  • 14.5 ounce chickpeas low sodium, rinsed and drained
  • 10 ounces frozen spinach thawed and drained

  1. Heat oil in a large skillet over medium heat. Add onion; cook 5 minutes, stirring occasionally.
  2. Add broccoli and curry powder and cook for an additional 5 minutes
  3. Add tomatoes and coconut milk, stirring to combine, about 5 minutes. Mix in your chickpeas and spinach and cook until spinach has heated through.

  • 2 cups non-fat vanilla yogurt
  • 1 cup strawberries hulled
  • 1 cup blueberries
  • 1/4 cup coconut milk

  1. Wash your hands and clean your preparation area.
  2. Run your strawberries, blueberries and the top of the can of coconut milk under cool running water.
  3. Blend 1 cup of the yogurt and the strawberries together in a blender until smooth. Reserve strawberry mixture.

  5. In popsicle mold evenly distribute coconut milk, then strawberry mixture, then blueberry mixture. Freeze for a minimum of 3 hours. Store in the freezer for up to 1 week.
