Ingredients
Stuffed Pork Loin
  • 3 pounds pork tenderloin
  • 2 tablespoons olive oil
  • 1 tablespoon fresh garlic finely chopped
  • 1 cup pears chopped
  • 1 cup red onion chopped
  • 1/2 cup walnuts chopped
  • 1/2 cup dried cranberries
  • 1 tablespoon Italian seasoning blend
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
Mustard Cream Sauce
  • 1/2 cup dijon mustard
  • 2 tablespoons maple syrup
  • 1 teaspoon black pepper
  • 1/2 cup plain greek yogurt
  • 1/2 cup plain greek yogurt

Instructions
  1. Wash hands and sanitize work station
  2. Preheat oven to 400 degrees
  3. Butterfly pork tenderloin using a sharp knife and set aside
  4. In a thick bottomed pan, heat up oil over medium heat add garlic and stir until fragrant. Add chopped pears, chopped onion, chopped walnuts, dried cranberries, Italian seasoning, salt and pepper sautéing for 2-3 minutes.
  5. Take pear mixture and spread on top of the butterflied pork tenderloin evenly. Roll pork loin back up and secure with baking twine.
  6. Spray a 9”x13” baking dish with cooking spray
  7. Place pork loin into baking dish, cover dish with foil and bake for 1 hour or until core temperature reaches 145 degrees.
  8. While pork loin is cooling for 5-10 minutes, in a saucepan combine mustard, maple syrup, black pepper and Greek yogurt. Simmer over medium-low heat for 5 minutes.
  9. Smother pork loin with mustard cream sauce before slicing and serving.

Tater tot Casserole has always been a family favorite.  However, the typical recipe is high in fat, preservatives and sodium.  This new and improved recipe adds cubed butternut squash for a delicious sweet flavor and added potassium.  This will soon be the new family favorite.

Ingredients
  • 1 pound ground turkey breast
  • 32 ounce frozen tater tots
  • 1 cup butternut squash cubed
  • 1 cup unsalted beef stock
  • 1 cup fat-free milk
  • 1 medium bell pepper chopped
  • 1/2 cup yellow onion chopped
  • 1/2 cup celery chopped
  • 8 ounce fresh mushrooms sliced
  • 2 tablespoons parsley dried
  • 2 tablespoons flour
  • 1 tablespoon minced garlic
  • 1 tablespoon thyme dried
  • 1 tablespoon olive oil

Instructions
  1. Clean and wipe your area.
  2. Preheat oven to 400 degrees.
  3. Coat a 9X13 pan with cooking spray
  4. Heat 1 tablespoon olive oil in a large skillet over medium high heat
  5. Add ground turkey and break up with a spoon.
  6. When meat is starting to brown, add all of the vegetables to the pan.
  7. Continue cooking until turkey is no longer pink and onions are translucent.
  8. Sprinkle flour over mixture and stir to combine.
  9. Gradually stir in beef stock and then milk.
  10. Stir in thyme and parsley.
  11. Bring to a bubble and continue cooking, stirring until sauce has thickened.
  12. Pour mixture into prepared pan.
  13. Top with tater tots.
  14. Bake in preheated oven for 20-30 minutes until sauce is bubbly and tater tots are browned and crispy.

Ingredients
  • 1 pound whole wheat elbow macaroni
  • 1/2 cup all-purpose flour
  • 1 1/2 cups 1% Milk
  • 1 cup lowfat Plain Greek Yogurt
  • 1/4 cup low sodium mozzarella cheese shredded
  • 1/2 pound shrimp cooked
  • 1 cup panko breadcrumbs
  • 1 Tablespoon nutritional yeast
  • 2 1/2 cups broccoli florets steamed
  • 1 cup cherry tomatoes halved
  • 8 ounces mushrooms cooked
  • 1/4 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions
  1. Preheat oven to 375 degrees F.
  2. Cook pasta according to package directions. Set aside.
  3. Spray your 8x8 baking dish with the avocado oil spray to lightly coat it.
  4. In a medium non-stick skillet, cook mushrooms until tender. Add in smoked paprika, garlic powder and onion powder.
  5. Add in flour and whisk until blended. Gradually pour in milk and Greek yogurt, while whisking to combine smoothly. Reduce heat to low.
  6. Sprinkle in nutritional yeast and mozzarella cheese and stir to combine.
  7. Add in cooked shrimp, halved cherry tomatoes and steamed broccoli to mushroom sauce mixture.
  8. Pour mixture into baking dish and top with panko bread crumbs.
  9. Bake at 375 degrees F for 30 minutes until heated through and breadcrumbs become a golden brown color. Serve immediately.

Ingredients
Main Ingredients:
  • 1 pound chicken breasts
  • 15 ounces can chickpeas (also called garbanzo beans) drained and rinsed
  • 1 pint cherry tomatoes
  • 1 cup cucumber chopped
  • 1 cup red onion chopped
  • 1 Tablespoon fresh parsley chopped
Turmeric Rice
  • 1 Tablespoon extra virgin olive oil
  • 2 Tablespoons minced shallot
  • 1 clove garlic minced
  • 1 1/2 teaspoons turmeric
  • 1 cup long grain brown rice
  • 2 cups low sodium chicken broth
Marinade
  • 1/4 cup lemon juice
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • 1 teaspoon dried oregano
  • 1/2 teaspoon pepper
  • 1/2 teaspoon dijon mustard
  • 2 cloves garlic minced
  • 1/4 cup extra virgin olive oil
Garlic Sauce
  • 3/4 cup plain greek yogurt
  • 3 Tablespoons lemon juice
  • 2 cloves garlic minced

Recipe Overview
  1. Prepare the marinade for chicken and chickpeas per directions below.
  2. Once chicken and chickpeas are marinating, prepare rice per directions below.
  3. While rice is cooking, chop the tomatoes, onions, cucumbers and parsley for toppings.
  4. Cook the chicken per the directions below.
  5. Make the garlic sauce and assemble bowls when all ingredients are finished cooking.
Make the Marinade:
  1. Whisk marinade ingredients together in a small bowl then reserve 1/4 cup marinade and pour the rest into a large sealable plastic bag.
  2. Add chicken to the plastic bag, then place in the refrigerator to marinate while preparing the rest of the dish.
  3. Combine reserved 1/4 cup marinade with chickpeas in a bowl and place in the refrigerator to marinate alongside the chicken.
Make the Turmeric Rice
  1. Heat oil in a small saucepan over medium heat. In a strainer, rinse the rice under cold water.
  2. Add shallots, then sauté until softened, 2 minutes.
  3. Add garlic then sauté for 30 seconds, and then add turmeric and sauté for 30 seconds.
  4. Add rinsed rice and sauté until fragrant, 1 minute, and then add chicken broth and turn heat up to bring to a boil.
  5. Place a lid on top then turn heat down to low and simmer for 30-45 minutes until rice is tender (heat should be low enough that the broth is at a very gentle, barely-there simmer.) Remove the pan from the heat then let sit for 5 minutes before removing the lid and fluffing the rice. Set aside to cool slightly.
Make the Chicken
  1. Preheat oven to 400 degrees F, then line a baking sheet with foil.
  2. Remove chicken from marinade then place on the baking sheet and roast for 15-20 minutes or until cooked all the way through (internal temperature of 165 degrees F).
  3. Chop once cool enough to handle.
Make the Garlic Sauce
  1. Combine ingredients in a blender or food processor then blend or process until smooth. Refrigerate until ready to use (can be done several days ahead of time.)
Assemble the Bowls
  1. Scoop ½ cup of rice into bowls. Top with about 3 oz. chopped chicken, heaping ¼ cup of marinated chickpeas, cherry tomatoes, cucumbers, and red onion.
  2. To finish drizzle with garlic sauce and sprinkle with chopped parsley.
  3. NOTE: These make great meal prep lunches. All the components can be made ahead of time. It might be best to separate fresh toppings from chicken and rice to be able to reheat.

Ingredients
Tacos
  • 8 Street Taco Flour Tortillas about 4.5 in.
  • 1 teaspoon olive oil
  • 2 cups low sodium garbanzo beans drained, rinsed
  • 1 teaspoon ground oregano
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon Ground Basil
  • 1/2 teaspoon ground dill
  • 1/2 teaspoon black pepper
  • 1/8 teaspoon salt
  • 1/2 English cucumber chopped (reserve the other half)
  • 1/4 cup red onion chopped
  • 1/4 cup cherry tomatoes quartered
  • 1/8 cup black olives chopped
  • 1/8 cup feta cheese crumbled
Tzatziki
  • 1/2 English cucumber grated and excess water drained
  • 1/2 cup plain nonfat Greek yogurt
  • 1 clove garlic minced
  • 2 Tablespoons fresh dill chopped
  • 1 Tablespoon lemon juice

Instructions
  1. Wash your hands and clean your preparation area.
  2. Cut cucumber in half. Use one half in step 3, reserve the other half for tacos in step 5.
  3. For the tzatziki, use a box grater or food processor to shred one half of cucumber. Drain any excess liquid.
  4. In a small bowl, combine grated cucumber, greek yogurt, minced garlic, fresh dill, and lemon juice. Cover and refrigerate for flavors to meld up to 2 hours before serving.
  5. In a medium bowl, combine cucumber, red onion, tomatoes, olives, and feta. Set aside until ready to serve.
  6. To a medium pan, heat olive oil over medium heat. Add garbanzo beans, oregano, onion powder, garlic powder, ground basil, ground dill, salt, and pepper. Stir to evenly coat the garbanzo beans.
  7. Continue to cook the garbanzo beans over medium heat, stirring frequently until cooked through, about 5 minutes.
  8. Once the chickpeas are cooked, keep warm while warming the tortillas. Heat a small pan over medium high heat, gently toast both sides of the tortillas to desired warmth or toastiness.
  9. Evenly divide the garbanzo mixture onto the 8 tortillas. Evenly divide the cucumber mixture and add over the top of garbanzo mixture. Finally, evenly divide the tzatziki and drizzle over the top of tacos.
