Ingredients

ground turkey breast

frozen tater tots

butternut squash
cubed

unsalted beef stock

fat-free milk

medium
bell pepper
chopped

yellow onion
chopped

cup
celery
chopped

fresh mushrooms
sliced

parsley
dried

tablespoons
flour

tablespoon
minced garlic

tablespoon
thyme
dried

tablespoon
olive oil
Instructions
Clean and wipe your area.
Preheat oven to 400 degrees.
Coat a 9X13 pan with cooking spray
Heat 1 tablespoon olive oil in a large skillet over medium high heat
Add ground turkey and break up with a spoon.
When meat is starting to brown, add all of the vegetables to the pan.
Continue cooking until turkey is no longer pink and onions are translucent.
Sprinkle flour over mixture and stir to combine.
Gradually stir in beef stock and then milk.
Stir in thyme and parsley.
Bring to a bubble and continue cooking, stirring until sauce has thickened.
Pour mixture into prepared pan.
Top with tater tots.
Bake in preheated oven for 20-30 minutes until sauce is bubbly and tater tots are browned and crispy.
