Ingredients
  • 12 ounces cooked light meat turkey, skinless chopped
  • 3 cups cooked white rice
  • 2.5 cups broccoli florets chopped
  • 1 cup mushroom pieces
  • 1/4 cup onion chopped
  • 2 Tablespoons unsalted butter
  • 2 Tablespoons flour
  • 1.5 cups 1% Milk
  • 1/2 cup nonfat yogurt
  • 1/2 cup low-fat cheddar cheese shredded
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon paprika

Instructions
  1. Wash your hands and clean your preparation area.
  2. Preheat oven to 350 degrees.
  3. Cook rice according to package directions.
  4. Wash Broccoli and mushrooms. Chop broccoli, mushrooms, and onion into small pieces.
  5. In a saucepan, melt butter and Sauté mushrooms, broccoli, and onions until onions are tender
  6. Sprinkle flour over butter and vegetable mixture and stir until combined.
  7. Add milk, yogurt, and seasoning, and stir to blend
  8. In a large bowl, combine turkey, rice and vegetable mixture.
  9. Spread the mixture in a 9x13 casserole dish and sprinkle with shredded cheese.
  10. Bake at 350 for 35-40 minutes until edges are bubbly and the top is lightly browned

Ingredients
  • 1 pound ground chicken white meat
  • 1 large egg
  • 1/4 cup flour
  • 1/3 cup finely grated carrots
  • 2 stalks of celery chopped fine
  • 2 Tablespoons fresh chives chopped
  • 1/2 teaspoon garlic powder
  • 2 Tablespoons buffalo sauce no sugar added
  • 1/4 cup blue cheese crumbles

  1. Clean and prep your area.
  2. In a large bowl, combine all ingredients and mix well. If meatballs are too dry, add a teaspoon of water at time until mixture holds shape.
  3. Use a medium cookie scoop to portion 25 meatballs. Roll each into a ball.
  4. Brush your air fryer with oil or line the air fryer with a piece of parchment paper. Place meatballs in the basket in a single layer.
  5. Cook at 400 degrees for 8 minutes or until the center of the meatball reaches 165 degrees.
  6. Remove the cooked meatballs to a plate and cover with foil while cooking any remaining meatballs. Meatballs are best after they have rested for about 5 minutes.
  7. Serve with an additional drizzle of buffalo sauce. Garnish with chives or green onions, if desired.

Tater Tot Casserole

Tater tot Casserole has always been a family favorite.  However, the typical recipe is high in fat, preservatives and sodium.  This new and improved recipe adds cubed butternut squash for a delicious sweet flavor and added potassium.  This will soon be the new family favorite.

Ingredients
  • 1 pound ground turkey breast
  • 32 ounce frozen tater tots
  • 1 cup butternut squash cubed
  • 1 cup unsalted beef stock
  • 1 cup fat-free milk
  • 1 medium bell pepper chopped
  • 1/2 cup yellow onion chopped
  • 1/2 cup celery chopped
  • 8 ounce fresh mushrooms sliced
  • 2 tablespoons parsley dried
  • 2 tablespoons flour
  • 1 tablespoon minced garlic
  • 1 tablespoon thyme dried
  • 1 tablespoon olive oil

Instructions
  1. Clean and wipe your area.
  2. Preheat oven to 400 degrees.
  3. Coat a 9X13 pan with cooking spray
  4. Heat 1 tablespoon olive oil in a large skillet over medium high heat
  5. Add ground turkey and break up with a spoon.
  6. When meat is starting to brown, add all of the vegetables to the pan.
  7. Continue cooking until turkey is no longer pink and onions are translucent.
  8. Sprinkle flour over mixture and stir to combine.
  9. Gradually stir in beef stock and then milk.
  10. Stir in thyme and parsley.
  11. Bring to a bubble and continue cooking, stirring until sauce has thickened.
  12. Pour mixture into prepared pan.
  13. Top with tater tots.
  14. Bake in preheated oven for 20-30 minutes until sauce is bubbly and tater tots are browned and crispy.

Ingredients
  • 3 cups pears peeled and cubed
  • 1 cup fresh pomegranate aril seeds
  • 1/4 cup 100% orange juice
  • 2 teaspoons vanilla
  • 2 Tablespoons cornstarch
  • 1 teaspoon nutmeg
  • 2 teaspoons cinnamon
  • 3/4 cup old fashioned oats
  • 1/4 cup flour
  • 2 Tablespoons honey
  • 2 Tablepoons unsalted butter melted

  1. Preheat oven to 350 degrees F and coat an 8X8 square baking pan with nonstick cooking spray.
  2. In a medium bowl, combine cubed pears, pomegranate seeds, orange juice, vanilla, cornstarch, nutmeg, and only 1 tsp of cinnamon.
  3. In another bowl, mix 1 tsp of cinnamon, oats, and flour. Pour over honey and melted butter. Combine well.
  4. Evenly spread fruit mixture into prepared pan and distribute flour mixture on top.
  5. Bake for 35-40 minutes, or until the crumble looks golden.
  6. Let cool so juices can thicken before serving.

  • 2 Tablespoons parsley flakes
  • 1 Tablespoon garlic powder
  • 2 teaspoon pepper
  • 1 Tablespoon onion powder
  • 1 teaspoon crushed red peppers
  • 2 1/2 Tablespoons paprika
  • 1 teaspoon salt
  • 1 pound 95% lean ground beef
  • 3/4 cup 1% Milk
  • 2 large eggs
  • 2 cups flour
  • 2 cups panko breadcrumbs

  1. Wash hands and clean the food prep area.
  2. In one bowl, combine ingredients for homemade seasoning and put aside.
  3. To prepare breading stations, set out 3 medium size bowls. In the first bowl, place flour and one-third of the homemade seasoning and mix. In the second bowl, whisk 2 eggs with milk. In the third bowl, lightly mix panko breadcrumbs with another one-third of the homemade seasoning mix.
  4. Next, take the ground beef in a bowl and lightly mix the remaining one-third homemade seasoning mix into the beef. Take about 1 tablespoon size piece of beef and form into palm size square minis. Place in a bowl or on a plate until all are ready to coat.
  5. To bread, first place steak minis in the flour bowl to coat, then place in egg bowl to dredge, and then place in breadcrumb bowl to cover the minis with breadcrumb mixture.
  6. Continue the process until all steak minis are breaded.
  7. Place steak minis in the air fryer basket in one even layer and air fry at 370 degrees for 10 minutes turning halfway.
