Ingredients
  • 3 cups pears peeled and cubed
  • 1 cup fresh pomegranate aril seeds
  • 1/4 cup 100% orange juice
  • 2 teaspoons vanilla
  • 2 Tablespoons cornstarch
  • 1 teaspoon nutmeg
  • 2 teaspoons cinnamon
  • 3/4 cup old fashioned oats
  • 1/4 cup flour
  • 2 Tablespoons honey
  • 2 Tablepoons unsalted butter melted

Instructions
  1. Preheat oven to 350 degrees F and coat an 8X8 square baking pan with nonstick cooking spray.
  2. In a medium bowl, combine cubed pears, pomegranate seeds, orange juice, vanilla, cornstarch, nutmeg, and only 1 tsp of cinnamon.
  3. In another bowl, mix 1 tsp of cinnamon, oats, and flour. Pour over honey and melted butter. Combine well.
  4. Evenly spread fruit mixture into prepared pan and distribute flour mixture on top.
  5. Bake for 35-40 minutes, or until the crumble looks golden.
  6. Let cool so juices can thicken before serving.

Ingredients
  • 1 teaspoon olive oil
  • 1 pound chicken breast skinless, boneless
  • 14.4 ounces frozen peppers
  • 4 ounces canned mushrooms drained
  • 1 cup brown rice cooked
  • 3/4 cup low sodium chicken broth
  • 2 Tablespoons low sodium soy sauce
  • 1 Tablespoon honey
  • 1 teaspoon sesame oil
  • 2 teaspoons ginger root grated
  • 2 garlic cloves grated
  • 1/2 Tablespoon cornstarch

  1. Wash hands and clean preparation area. Clean the rims of any canned food before opening.
  2. Cut the chicken breasts into bite-size pieces, removing and discarding any fat.
  3. In a small bowl, add in all sauce ingredients and stir until well combined and cornstarch is dissolved.
  4. In a large skillet heat up olive oil over medium-high heat. Once hot, place chicken in the skillet and let brown for 2-3 minutes. Stir and let brown for another 2-3 minutes.
  5. Add in the frozen peppers and mushrooms, cook covered for 5-7 minutes stirring once.
  6. Remove covering and pour in the prepared sauce. Cook for another 5 minutes or until the sauce has thickened and the chicken has reached 165* Fahrenheit.
  7. Serve 1/4th of chicken stir fry with ¼ cup brown rice.

Ingredients
Dough
  • 1/2 cup sorghum flour
  • 1 Tablespoon granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 Tablespoon cornstarch
  • 2 Tablespoons margarine
  • 1/2 cup almond milk unsweetened
Fruit Filling
  • 3 cups frozen sliced peaches no sugar added
  • 1 cup frozen blueberries no sugar added
  • 2 Tablespoon granulated sugar
  • 1 Tablespoon cornstarch
  • 1 teaspoons ground cinnamon
  • 2 teaspoons vanilla extract
  • 1 Tablespon fresh orange juice
  • 1/3 cup water exclude in "oven instructions"
  • 1 Tablespon fresh orange juice
  • 1/3 cup water

Multifunction Cooker Instructions (Instant-pot)
  1. Combine sorghum flour, 1 tablespoon of sugar, baking powder, salt, baking soda, and cornstarch in a medium bowl. Knead margarine into dry mixture with fork or hands until mixture is course. Pour in almond milk and combine. Set aside.
  2. Select the SAUTE function on normal heat, on your multifunction cooker. Pour frozen peaches, blueberries, 2 Tbsp. of sugar, cornstarch, cinnamon, vanilla, and freshly squeezed orange juice into the cooker. Cook together for 2 minutes until the fruit is defrosted and juices are released. Select CANCEL on the cooker to prevent burning. Add water and stir together.
  3. Pour batter over fruit mixture, do not stir or spread. Secure the lid.
  4. Select MANUAL or PRESSURE COOK on NORMAL HEAT for 12 minutes.
  5. After cooking is complete, use a NATURAL RELEASE (about 10 minutes) and let cool for a few minutes. Liquid should thicken as it cools. Serve warm.
Oven Instructions (exclude added water)
  1. Preheat oven to 375 degrees F. Melt 2 Tbsp. of margarine in an 8X8 baking dish in the oven. Once melted, set aside.
  2. Combine sorghum flour, 1 tablespoon of sugar, baking powder, salt, baking soda, and cornstarch in a medium bowl. Add almond milk and combine. Set aside.
  3. In a medium bowl, combine frozen peaches, blueberries, 2 Tbsp. of sugar, cornstarch, cinnamon, vanilla, and freshly squeezed orange juice.
  4. Pour batter over melted margarine in pan, then slowly pour fruit filing mixture over batter. Do not stir or spread.
  5. Bake in oven for 40 minutes until fruit is bubbling and crust is brown.
  6. Store any leftover cobbler covered in the refrigerator for 3-4 days. To reheat, bake covered in a 350 degree F oven for 15-20 minutes until warm.

Ingredients
  • 1 tablespoon olive oil
  • 2/3 cup chopped onion
  • 1/4 cup flour
  • 2 1/2 cups diced green chilies
  • 2 cups reduced-fat unsalted chicken broth
  • 2 cups cooked shredded, skinless chicken breast 1/2 teaspoon garlic powder
  • 1 tablespoon cornstarch
  • 8 corn tortillas 6 inch
  • 1 cup reduced-fat extra-sharp finely shredded cheddar cheese

  1. Heat the oil in a medium sauce pan.
  2. Sauté the chopped onion in the oil.
  3. Add the flour and cook for 1 minute.
  4. Add the chilies, chicken broth, chicken and garlic powder.
  5. Simmer uncovered for 5 minutes.
  6. Mix the cornstarch into about 1/4 cup of cold water until all the lumps are gone.
  7. Add to the chile and chicken mixture.
  8. Cook for 2 more minutes.
  9. Tear the tortillas into strips and divide in- to thirds.
  10. Add them to the pan and cook until they are hot, stirring with a spoon from time to time.
  11. Sprinkle the cheese over the enchiladas.
  12. Cover the pan and cook until the cheese has melted. Serve immediately.

  • 1 14.5 ounce can diced tomatoes unsalted and undrained
  • 1 6 ounce can tomato paste unsalted
  • 1 green bell pepper chopped
  • 1 4 ounce package sliced fresh mushrooms
  • 1 small onion chopped
  • 1/2 tsp Italian herb blend no sodium added
  • 1 pound pork tenderloin
  • 2 cups penne pasta cooked
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 1/2 cup low fat mozzarella cheese grated or shredded

  1. Mix tomatoes and tomato paste in slow cooker until well blended. Stir in vegetables and add Italian seasoning.
  2. Cut mean into 8 pieces. Add to slow cooker; cover with lid. Cook low 4 to 4 1/2 hours.
  3. Cook pasta as directed on package, omitting salt. When meat is cooked, transfer to plate reserving sauce in slow cooker. Cover meat to keep warm. Mix cornstarch and water until well blended. Add to sauce; stir. Cover an cook for 6-8 minutes.
  4. Drain pasta; spoon onto plate. Top with meat, sauce and cheese.
