Ingredients
  • 4 large eggs
  • 1/4 teaspoon black pepper
  • 1 tbsp olive oil
  • 1 cup white onion chopped
  • 1/2 cup red bell pepper chopped
  • 2 teaspoons garlic
  • 3 cups cold cooked brown rice
  • 3 tbsp low sodium soy sauce
  • 4 slices turkey bacon cooked, cut in bit size pieces
  • 1 cup frozen peas and carrots
  • 1/2 cup frozen sweet corn
  • 1/3 cup green onions chopped

Instructions
  1. Wash hands and clean work surfaces
  2. In a small bowl crack eggs and add pepper. Beat with a fork
  3. In a large non-stick skillet or wok, add eggs and scramble over low heat until cooked. Remove eggs from skillet.
  4. In the same skillet, heat olive oil over medium heat. Once hot, add onion, red bell pepper and garlic. Cook until onion is translucent, and mixture is fragrant.
  5. Add brown rice to vegetable mixture and stir until well combined. Fry the rice for 4-5 minutes.
  6. Add soy sauce over brown rice and stir until well combined.
  7. In the same skillet with the fried rice, add bacon, frozen peas and carrots, and frozen corn. Stir and cook until vegetables and bacon are heated through.
  8. Remove skillet from heat. Gently stir in eggs. Garnish with green onions.
  9. Serve immediately.

Ingredients

  • 1 pound fresh salmon skin removed and cubed
  • 1 Tablespoon olive oil
  • 1 Tablespoon low sodium soy sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • 1 teaspoon lemon zest
  • 3 nori sheets (seaweed wraps)
  • 1 1/2 cups white sticky sushi rice cooked
Sauce
  • 1/4 cup plain Greek yogurt, nonfat
  • 2 teaspoons Sriracha Sauce
  • 1 teaspoon honey
Toppings
  • 1/2 avocado diced
  • 1/2 English cucumber diced
  • 1 jalapeno sliced

Instructions
  1. Preheat oven to 400 degrees F. Wash hands and clean the prep area.
  2. Remove skin from salmon and cut into cubed bitesize pieces. Place salmon in a large bowl adding olive oil, soy sauce, garlic powder, onion powder, chili powder, and zest. Mix well.
  3. Cut nori seaweed sheets into 4 equal squares, and set aside.
  4. Using a measuring spoon, place 2 Tablespoons of rice in the middle of a nori square.
  5. Gently push down rice and nori sheet into an individual cup of a nonstick muffin pan. (tip: Use a little olive oil on your fingers to evenly press down sticky rice. The edges for the nori sheet will stand up along the edge.)
  6. Evenly distribute the salmon mixture into the 12 muffin pan cups.
  7. Insert the pan into the preheated oven for 15 minutes.
  8. Remove from the oven and cool slightly.
  9. Top with avocado, cucumber, jalapenos, and spicy sauce.
  10. Store in the refrigerator for 2-3 days, and reheat in the oven for 10 minutes in a 400 degrees preheated oven.

In Freezer Bag
  • 1 pound Chicken Thighs boneless and skinless
  • 1 cup Peach Jam sugar-free
  • 1 small red onion sliced ¼” thin
  • 1 Tablespoon low sodium soy sauce
  • 1 inch Piece Fresh Ginger Root peeled and grated
  • 3 teaspoon garlic minced

For Freezer Bag
  1. Place chicken thighs and onion in a freezer bag.
  2. In a bowl, combine peach jam, soy sauce, ginger root, and minced garlic to form a sauce.
  3. Pour the sauce to evenly coat the chicken thighs and onions.
  4. Remove as much air as possible from the bag, seal, and lay flat in the freezer until ready to cook.
When Ready to Cook
  1. The day before you are ready to cook, transfer from freezer to refrigerator to thaw.
  2. When thawed, empty contents into a slow cooker and cover with a lid.
  3. Cook on a low setting for 3-5 hours or until the internal temperature of the chicken is 165 degrees and shreds easily with a fork.
  4. While the chicken is cooking, prepare brown rice according to package instructions.
  5. Shred chicken and return to juices in the slow cooker until ready to serve.
  6. Serve over brown rice and enjoy!

  • 1 teaspoon olive oil
  • 1 pound chicken breast skinless, boneless
  • 14.4 ounces frozen peppers
  • 4 ounces canned mushrooms drained
  • 1 cup brown rice cooked
  • 3/4 cup low sodium chicken broth
  • 2 Tablespoons low sodium soy sauce
  • 1 Tablespoon honey
  • 1 teaspoon sesame oil
  • 2 teaspoons ginger root grated
  • 2 garlic cloves grated
  • 1/2 Tablespoon cornstarch

  1. Wash hands and clean preparation area. Clean the rims of any canned food before opening.
  2. Cut the chicken breasts into bite-size pieces, removing and discarding any fat.
  3. In a small bowl, add in all sauce ingredients and stir until well combined and cornstarch is dissolved.
  4. In a large skillet heat up olive oil over medium-high heat. Once hot, place chicken in the skillet and let brown for 2-3 minutes. Stir and let brown for another 2-3 minutes.
  5. Add in the frozen peppers and mushrooms, cook covered for 5-7 minutes stirring once.
  6. Remove covering and pour in the prepared sauce. Cook for another 5 minutes or until the sauce has thickened and the chicken has reached 165* Fahrenheit.
  7. Serve 1/4th of chicken stir fry with ¼ cup brown rice.

  • 4 cups bok choy chopped
  • 1/2 cup green onions chopped
  • 6 ounces dry Chow Mein noodles
  • 1/4 cup olive oil
  • 1/4 cup Vinegar
  • 1/4 cup sugar
  • 2 tablespoons low sodium soy sauce

  1. Wash and chop bok choy and green onions.
  2. Add to large mixing bowl.
  3. Break up chow Mein noodles and add to mixing bowl.
  4. Add olive oil, vinegar, sugar, and low sodium soy sauce to jar and close lid.
  5. Shake well to combine.
  6. Drizzle dressing over contents of mixing bowl.
  7. Gently toss and serve
