Ingredients
  • cooking spray
  • 16 6 inch low-carb flour tortillas
  • 1 pound low-sodium turkey breakfast sausage
  • 10 ounce can of diced tomatoes with green chilies drained
  • 1 Tablespoon olive oil
  • 1 pound Potatoes O’Brien frozen
  • 24 ounces fat free egg substitute
  • 1 cup low-fat milk
  • 1/4 cup reduced fat, sour cream
  • 1/2 teaspoon black pepper divided
  • 6 ounces reduced fat, mexican blend cheese shredded
  • fresh diced tomatoes, cilantro, diced onions optional

Instructions
  1. Wash hands and sanitize the preparation areas.
  2. Spray two 9x13 baking dishes with non-stick cooking spray. Set aside.
  3. In a large skillet, brown turkey sausage (remove from casings, if needed). Stir in drained diced tomatoes with chilies and heat through. Pour sausage/tomato mixture from skillet into a large bowl.
  4. Add margarine to skillet. Once margarine has melted, add in frozen potatoes and cook until they begin to get crisp and brown. Season with ÂĽ teaspoon of the black pepper. Once potatoes have browned, add them to the sausage mixture in the bowl.
  5. To prepare the enchiladas, add about ÂĽ cup of the prepared mixture to the center of each tortilla. Roll tortillas tightly and place in baking dish with seam side down. Repeat until both pans are full and all ingredients are used.
  6. In a bowl, whisk together egg substitute, milk, sour cream, and remaining black pepper.
  7. Pour egg mixture over rolled enchiladas. Top with shredded cheese.
  8. Cover tightly with plastic wrap and store in the refrigerator for 30 minutes or up to overnight. (see notes for freezing methods)
  9. When ready to cook, remove baking pans from refrigerator. Preheat oven to 350-degrees.
  10. When oven has reached 350 degrees, remove plastic wrap and bake for 30-40 minutes or until egg mixture is set. If the top starts to get too brown during baking, cover with foil for the last 10-15 minutes.
  11. FREEZING/BAKING INSTRUCTIONS: Freeze BEFORE final cooking – The egg mixture will still be raw. Thaw in the refrigerator overnight. Once thawed, bake as directed in the original recipe. Freeze AFTER final cooking – Once baked enchiladas have cooled, cover well and freeze. When you are ready to reheat the cooked enchiladas, thaw in the refrigerator. Reheat the entire dish in a 350-degree oven until internal temperature reaches 165-degrees. Individual servings could be reheated in the microwave.
Recipe Notes

Flour tortillas work best for this dish – they soak up the egg mixture better.

Ingredients
  • 12 ounces cooked light meat turkey, skinless chopped
  • 3 cups cooked white rice
  • 2.5 cups broccoli florets chopped
  • 1 cup mushroom pieces
  • 1/4 cup onion chopped
  • 2 Tablespoons unsalted butter
  • 2 Tablespoons flour
  • 1.5 cups 1% Milk
  • 1/2 cup nonfat yogurt
  • 1/2 cup low-fat cheddar cheese shredded
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon paprika

  1. Wash your hands and clean your preparation area.
  2. Preheat oven to 350 degrees.
  3. Cook rice according to package directions.
  4. Wash Broccoli and mushrooms. Chop broccoli, mushrooms, and onion into small pieces.
  5. In a saucepan, melt butter and Sauté mushrooms, broccoli, and onions until onions are tender
  6. Sprinkle flour over butter and vegetable mixture and stir until combined.
  7. Add milk, yogurt, and seasoning, and stir to blend
  8. In a large bowl, combine turkey, rice and vegetable mixture.
  9. Spread the mixture in a 9x13 casserole dish and sprinkle with shredded cheese.
  10. Bake at 350 for 35-40 minutes until edges are bubbly and the top is lightly browned

Ingredients
  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 cup yellow onion diced
  • 3 cloves garlic minced
  • 1/2 teaspoon onion powder
  • 1 teaspoon paprika
  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 1/2 teaspoon dried oregano
  • 1 cup long grain dry, white rice
  • 15 ounce can low sodium black beans drained and rinsed
  • 4 ounce can diced green chilis
  • 15 ounce can no sodium added diced tomatoes
  • 2 cups low-sodium beef broth
  • 1 1/2 cups frozen corn
  • 1 cup shredded low-fat cheese
  • 2 cups shredded lettuce

Instructions
  1. Press the sauté button on the multi-function cooker. Once hot add oil and ground turkey, onion and garlic. Cook until turkey is cooked, and onions are softened.
  2. Add onion powder, paprika, chili powder, cumin, oregano. Stir to mix.
  3. Add in the rice, black beans, green chilis, diced tomatoes, beef broth, and frozen corn. Mix to combine.
  4. Put the lid on the multi-function cooker and set to manual, high pressure and time for 8 minutes.
  5. Once the time is done use the quick release function and once the pressure has dropped, open and fluff the rice.
  6. Top each serving with 1 ½ tablespoons of cheese and 3 tablespoons of shredded lettuce

Tater tot Casserole has always been a family favorite.  However, the typical recipe is high in fat, preservatives and sodium.  This new and improved recipe adds cubed butternut squash for a delicious sweet flavor and added potassium.  This will soon be the new family favorite.

Ingredients
  • 1 pound ground turkey breast
  • 32 ounce frozen tater tots
  • 1 cup butternut squash cubed
  • 1 cup unsalted beef stock
  • 1 cup fat-free milk
  • 1 medium bell pepper chopped
  • 1/2 cup yellow onion chopped
  • 1/2 cup celery chopped
  • 8 ounce fresh mushrooms sliced
  • 2 tablespoons parsley dried
  • 2 tablespoons flour
  • 1 tablespoon minced garlic
  • 1 tablespoon thyme dried
  • 1 tablespoon olive oil

Instructions
  1. Clean and wipe your area.
  2. Preheat oven to 400 degrees.
  3. Coat a 9X13 pan with cooking spray
  4. Heat 1 tablespoon olive oil in a large skillet over medium high heat
  5. Add ground turkey and break up with a spoon.
  6. When meat is starting to brown, add all of the vegetables to the pan.
  7. Continue cooking until turkey is no longer pink and onions are translucent.
  8. Sprinkle flour over mixture and stir to combine.
  9. Gradually stir in beef stock and then milk.
  10. Stir in thyme and parsley.
  11. Bring to a bubble and continue cooking, stirring until sauce has thickened.
  12. Pour mixture into prepared pan.
  13. Top with tater tots.
  14. Bake in preheated oven for 20-30 minutes until sauce is bubbly and tater tots are browned and crispy.

Ingredients
  • 4 large eggs
  • 1/4 teaspoon black pepper
  • 1 tbsp olive oil
  • 1 cup white onion chopped
  • 1/2 cup red bell pepper chopped
  • 2 teaspoons garlic
  • 3 cups cold cooked brown rice
  • 3 tbsp low sodium soy sauce
  • 4 slices turkey bacon cooked, cut in bit size pieces
  • 1 cup frozen peas and carrots
  • 1/2 cup frozen sweet corn
  • 1/3 cup green onions chopped

  1. Wash hands and clean work surfaces
  2. In a small bowl crack eggs and add pepper. Beat with a fork
  3. In a large non-stick skillet or wok, add eggs and scramble over low heat until cooked. Remove eggs from skillet.
  4. In the same skillet, heat olive oil over medium heat. Once hot, add onion, red bell pepper and garlic. Cook until onion is translucent, and mixture is fragrant.
  5. Add brown rice to vegetable mixture and stir until well combined. Fry the rice for 4-5 minutes.
  6. Add soy sauce over brown rice and stir until well combined.
  7. In the same skillet with the fried rice, add bacon, frozen peas and carrots, and frozen corn. Stir and cook until vegetables and bacon are heated through.
  8. Remove skillet from heat. Gently stir in eggs. Garnish with green onions.
  9. Serve immediately.
