Ingredients
  • 1 pound lean ground beef
  • 1 cup onion chopped
  • 1 cup green bell pepper chopped
  • 1 tablespoon garlic minced
  • 14 ounce can no salt added corn rinsed and drained
  • 14 ounce can low sodium black beans rinsed and drained
  • 10 ounce can no salt added diced tomatoes with green chilies
  • 8.8 ounce bag microwaveable brown rice
  • 1 ounce 40% less sodium taco seasonings
  • 1 cup lowfat cheddar cheese shredded

Instructions
  1. In a large skillet add the ground beef, onion, bell pepper and garlic. Cook until the ground beef has reached 150 degrees Fahrenheit
  2. Add the corn, black beans, diced tomatoes with green chilies, brown rice and taco seasoning. Mix until combined
  3. Heat on medium low heat for 10 to 15 minutes or until dish is thoroughly heated
  4. Top with cheddar cheese and enjoy

Ingredients
  • 12 ounces cooked light meat turkey, skinless chopped
  • 3 cups cooked white rice
  • 2.5 cups broccoli florets chopped
  • 1 cup mushroom pieces
  • 1/4 cup onion chopped
  • 2 Tablespoons unsalted butter
  • 2 Tablespoons flour
  • 1.5 cups 1% Milk
  • 1/2 cup nonfat yogurt
  • 1/2 cup low-fat cheddar cheese shredded
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon paprika

Instructions
  1. Wash your hands and clean your preparation area.
  2. Preheat oven to 350 degrees.
  3. Cook rice according to package directions.
  4. Wash Broccoli and mushrooms. Chop broccoli, mushrooms, and onion into small pieces.
  5. In a saucepan, melt butter and Sauté mushrooms, broccoli, and onions until onions are tender
  6. Sprinkle flour over butter and vegetable mixture and stir until combined.
  7. Add milk, yogurt, and seasoning, and stir to blend
  8. In a large bowl, combine turkey, rice and vegetable mixture.
  9. Spread the mixture in a 9x13 casserole dish and sprinkle with shredded cheese.
  10. Bake at 350 for 35-40 minutes until edges are bubbly and the top is lightly browned

Ingredients
  • 2 Tablespoons olive oil divided
  • 1/2 teaspoon garlic powder
  • 1/2 cup yellow onion sliced
  • 2 cups arborio rice dry -
  • 2 cups fresh Swiss Chard chopped
  • 1/2 cup white wine vinegar
  • 5 1/2 cups unsalted chicken broth divided
  • 1/2 cup grated Parmesan cheese
  • 1 1/2 Tablespoon unsalted butter divided
  • 1 teaspoon ground black pepper
  • 2 cups fresh kale chopped
  • 1 1/2 cups frozen sweet peas
  • 1/4 cup basil pesto
  • 1 pound fresh or frozen large scallops
  • 1 Tablespoon Italian seasoning
  • 1/2 Tablespoon lemon juice

Instructions
  1. Pre-heat the oven to 350 degrees, arranging a rack in the middle of the oven.
  2. Heat 1 Tbsp. olive oil in a 3-4 quart Dutch oven over medium heat. Add sliced onion and garlic powder, and sauté about 2 minutes until it begins to soften. Add the rice and stir until each grain is coated and begins to lightly toast (approximately 1-2 minutes).
  3. Turn heat up to high and pour white wine vinegar into the Dutch oven, scraping the pan and stirring constantly until liquid cooks out. Add 4 cups of the chicken broth into the pot, stirring to combine well, and bring to a boil.
  4. Cover the Dutch oven with the lid and place in the oven to bake for 15-20 minutes until rice is just slightly underdone.
  5. Remove risotto from the oven, and place back on the stove over medium heat. Uncover and add the leftover 1 ½ cups chicken broth, parmesan cheese, 1 Tbsp. butter, black pepper, kale, and Swiss chard. Continue to cook, stirring constantly until liquid absorbs and rice becomes creamy (about 5-7 minutes).
  6. Stir in the pesto and the frozen peas to the finished risotto.
  7. In a separate pan, heat the remaining 1 Tbsp. olive oil and ½ Tbsp. butter over medium heat. Add the scallops and sauté 2-3 minutes per side or until golden brown (internal temperature of 145 degrees). Season with Italian seasoning and drizzle with lemon juice, spooning remaining oil and butter over scallops to coat.
  8. Serve the risotto immediately in bowls, topped with the seared scallops. Enjoy!

Ingredients
Main Ingredients:
  • 1 pound chicken breasts
  • 15 ounces can chickpeas (also called garbanzo beans) drained and rinsed
  • 1 pint cherry tomatoes
  • 1 cup cucumber chopped
  • 1 cup red onion chopped
  • 1 Tablespoon fresh parsley chopped
Turmeric Rice
  • 1 Tablespoon extra virgin olive oil
  • 2 Tablespoons minced shallot
  • 1 clove garlic minced
  • 1 1/2 teaspoons turmeric
  • 1 cup long grain brown rice
  • 2 cups low sodium chicken broth
Marinade
  • 1/4 cup lemon juice
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • 1 teaspoon dried oregano
  • 1/2 teaspoon pepper
  • 1/2 teaspoon dijon mustard
  • 2 cloves garlic minced
  • 1/4 cup extra virgin olive oil
Garlic Sauce
  • 3/4 cup plain greek yogurt
  • 3 Tablespoons lemon juice
  • 2 cloves garlic minced

Recipe Overview
  1. Prepare the marinade for chicken and chickpeas per directions below.
  2. Once chicken and chickpeas are marinating, prepare rice per directions below.
  3. While rice is cooking, chop the tomatoes, onions, cucumbers and parsley for toppings.
  4. Cook the chicken per the directions below.
  5. Make the garlic sauce and assemble bowls when all ingredients are finished cooking.
Make the Marinade:
  1. Whisk marinade ingredients together in a small bowl then reserve 1/4 cup marinade and pour the rest into a large sealable plastic bag.
  2. Add chicken to the plastic bag, then place in the refrigerator to marinate while preparing the rest of the dish.
  3. Combine reserved 1/4 cup marinade with chickpeas in a bowl and place in the refrigerator to marinate alongside the chicken.
Make the Turmeric Rice
  1. Heat oil in a small saucepan over medium heat. In a strainer, rinse the rice under cold water.
  2. Add shallots, then sauté until softened, 2 minutes.
  3. Add garlic then sauté for 30 seconds, and then add turmeric and sauté for 30 seconds.
  4. Add rinsed rice and sauté until fragrant, 1 minute, and then add chicken broth and turn heat up to bring to a boil.
  5. Place a lid on top then turn heat down to low and simmer for 30-45 minutes until rice is tender (heat should be low enough that the broth is at a very gentle, barely-there simmer.) Remove the pan from the heat then let sit for 5 minutes before removing the lid and fluffing the rice. Set aside to cool slightly.
Make the Chicken
  1. Preheat oven to 400 degrees F, then line a baking sheet with foil.
  2. Remove chicken from marinade then place on the baking sheet and roast for 15-20 minutes or until cooked all the way through (internal temperature of 165 degrees F).
  3. Chop once cool enough to handle.
Make the Garlic Sauce
  1. Combine ingredients in a blender or food processor then blend or process until smooth. Refrigerate until ready to use (can be done several days ahead of time.)
Assemble the Bowls
  1. Scoop ½ cup of rice into bowls. Top with about 3 oz. chopped chicken, heaping ¼ cup of marinated chickpeas, cherry tomatoes, cucumbers, and red onion.
  2. To finish drizzle with garlic sauce and sprinkle with chopped parsley.
  3. NOTE: These make great meal prep lunches. All the components can be made ahead of time. It might be best to separate fresh toppings from chicken and rice to be able to reheat.

  • 1 Tablespoon extra virgin olive oil
  • 1/2 large onion diced
  • 1 medium poblano diced
  • 1 medium jalapeno diced
  • 2 medium Roma tomatoes diced
  • 2 cloves garlic diced
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 12 ounces frozen riced cauliflower
  • 1 Tablespoon lime juice
  • 1/4 cup fresh cilantro loosely chopped

  1. Heat a large skillet over medium heat. When the pan is hot, pour in the olive oil.
  2. Add in the onions, jalapeno, poblano and sauté until softened, about 5-7 minutes.
  3. Add in the Cumin, Chili powder and salt. Mix well.
  4. Add the minced garlic and cook until fragrant, about 30 seconds.
  5. Add cauliflower rice and cook until desired texture is reached. Approx. 3 minutes for al dente rice or 5 minutes for more tender rice. Add the lime juice and mix thoroughly.
  6. Stir in the cilantro and serve!
