Ingredients
  • 1 Tablespoon olive oil
  • 1 medium onion sliced
  • 1 medium red bell pepper sliced
  • 1/2 cup sugar snap peas
  • 1/2 cup sliced shiitake, bella, or brown mushrooms
  • 1/4 tsp salt
  • 32 ounces boneless, skinless chicken breasts cut into 1-inch pieces
  • 2 teaspoons turmeric
  • 2 teaspoons curry powder
  • 1 Tablespoons Thai red curry paste
  • 4 medium plum tomatoes chopped
  • 13.5 ounce can unsweetened lite coconut milk
  • 1 can of water measured with can of coconut milk
  • 1 Tablespoon fish sauce
  • 2 teaspoons brown sugar
  • 1/2 cup cilantro roughly chopped
  • 5 ounces spinach

Instructions
  1. In a large sauté pan over high heat, heat 1 tablespoon of olive oil. Add the onions and a pinch of salt and immediately turn the heat to medium. Stir every so often and cook until the onions until they are softened and beginning to brown at the edges (about 5 minutes).
  2. Place the chicken in a large bowl and season with salt.
  3. Add the curry powder, turmeric, and Thai red curry paste to the onions and stir until onions are coated  in the spices (about 1 minute). Add the chicken pieces to the pan, stirring frequently to prevent sticking and encourage stir-frying. Cook thoroughly (about 5-7 minutes) until chicken is cooked through and temps at 165 degrees Fahrenheit. Use tongs to remove chicken and transfer to a plate.
  4. Add the bell pepper, sugar snap peas, and mushroom into the pan and sauté (about 5-6 minutes).
  5. Add the tomatoes and stir until they just begin to soften (about 1 minute). Add the can of coconut milk. Fill up the empty can of coconut milk with water and add to the pan. Add the fish sauce and brown sugar and bring to a simmer.
  6. Add the chicken pieces back into the pan and stir to coat evenly. Add chopped cilantro and spinach into the pan and stir to combine all ingredients.
  7. Spoon rice into bowls (if serving over rice). Top with chicken and sauce, and serve immediately. Enjoy!

Ingredients
  • 1 pound lean ground beef
  • 1 cup onion chopped
  • 1 cup green bell pepper chopped
  • 1 tablespoon garlic minced
  • 14 ounce can no salt added corn rinsed and drained
  • 14 ounce can low sodium black beans rinsed and drained
  • 10 ounce can no salt added diced tomatoes with green chilies
  • 8.8 ounce bag microwaveable brown rice
  • 1 ounce 40% less sodium taco seasonings
  • 1 cup lowfat cheddar cheese shredded

  1. In a large skillet add the ground beef, onion, bell pepper and garlic. Cook until the ground beef has reached 150 degrees Fahrenheit
  2. Add the corn, black beans, diced tomatoes with green chilies, brown rice and taco seasoning. Mix until combined
  3. Heat on medium low heat for 10 to 15 minutes or until dish is thoroughly heated
  4. Top with cheddar cheese and enjoy

  • 2 pounds Salsa Verda Pork
  • 1 tablespoon olive oil
  • 1 cup onion chopped
  • 2 teaspoons garlic minced
  • 8 ounces green chilies chopped, canned
  • 3 cups low sodium chicken broth
  • 15 ounce can low sodium white beans
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground cummin
  • 1/2 teaspoon oregano

  1. In a medium pot add olive oil and add onions and cook until translucent.
  2. Add garlic and green chilies and cook for an additional 2 minutes.
  3. Add chicken stock, white beans, shredded pork, black pepper, cummin and oregano.
  4. Bring to a simmer and cook for 10 to 15 minutes. It's ready to enjoy.
  5. Leftovers can be frozen for up to 2 months in an air tight container.

Ingredients
  • 1 pound Salsa Verda Pork see link in notes
  • 16 4 inch white corn tortillas
  • 1/3 cup Mexican blend cheese reduced fat
  • 1/2 cup onion chopped
  • 4 tablespoons cilantro chopped
  • 1 lime cut into wedges

  1. In a dry skillet heat 2 tortillas flip after 2 minutes and add 1 teaspoon of Mexican blend cheese and some of the shredded pork.
  2. After another 2 minutes or when they are golden brown remove from the skillet and top with chopped onion and cilantro and a squeeze of lime.
  3. Repeat process until all tortillas have been used.

Ingredients
  • 3 pounds country style pork ribs
  • 1 cup onion sliced
  • 1 1/2 cups salsa verde

  1. Either place a slow cooker liner in the slow cooker or spray with nonstick cooking spray
  2. Place the sliced onions on the bottom of the slow cooker.
  3. Add the country style pork ribs on top of the onions
  4. Then pour the salsa verda over the pork.
  5. Cover with slow cooker lid and cook on low for 6 -8 hours or on high for 3 to 4 hours.
  6. Once done pull out the pork and discard the bones. Shred the pork and add back to the slow cooker to combine with juices.
  7. Enjoy as is or use in either the Salsa Verda Pork Street Tacos or the Green Chili Pork Stew recipes.
