Ingredients
  • 15 ounce can diced tomatoes low sodium
  • 1 cup yellow onion chopped
  • 1 cup green bell pepper chopped
  • 1/2 cup chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 4 ounce can chop green chilis
  • 2 pounds Chicken Thighs boneless, skinless
  • 2 limes slice into wedges
  • 3 cups cheddar cheese low-fat
  • 24 6-inch corn tortillas

Instructions
  1. Either spray the slow cooker with nonstick cooking spray or line with a liner.
  2. Add diced tomatoes, onion, green bell pepper, chicken broth, chili powder, oregano, cumin, onion powder, garlic powder and green chilis to the slow cooker. Stir to combine
  3. Add chicken thighs and stir. Cover and cook on low for 5 to 6 hours and on high for 3 to 4 hours.
  4. Once done remove chicken and shred with two forks. Add back to the slow cooker and stir to mix with the remaining juices.
  5. To warm the corn tortilla, use a dry-skillet over medium heat. Add a tortilla and heat for 15 to 30 seconds on each side or until warm and toasty brown spots on it.
  6. To serve: top the tortilla with the chicken fajita mixture, 2 tablespoons of cheese and a squeeze of lime.

Ingredients
  • 1 pound boneless, skinless chicken breast thinly sliced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 4 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 cup low sodium chicken broth
  • 1/4 cup sun-dried tomatoes rehydrated and chopped
  • 1/2 cup plain nonfat Greek yogurt
  • 2 cups fresh spinach roughly chopped
  • 2 tablespoons grated Parmesan cheese

Instructions
  1. Pat the chicken dry and season both sides with salt, pepper, garlic powder and onion powder.
  2. Place a large skillet over medium heat and coat lightly with cooking spray. Add the chicken and cook for 4-5 minutes per side, until golden brown and cooked through (internal temperature of 165°F). Work in batches if needed. Remove chicken from the skillet and set aside.
  3. In the same skillet, spray additional oil and add the minced garlic. Sauté for 1 minute until fragrant then add the oregano, thyme, and crushed red pepper flakes sautéing an additional minute.
  4. Pour in the low-sodium chicken broth and add the sun-dried tomatoes, bring to a simmer. Simmer for 2-3 minutes. Turn heat to low and whisk in the Greek yogurt until well combined.
  5. Stir in the chopped spinach and cook until wilted, about 1-2 minutes. Remove from heat.
  6. Place one-piece of chicken per plate, spoon ¼ of the sauce on the top, and sprinkle with ½ tablespoon parmesan.
  7. Pair with quinoa, brown rice, or a side of steamed broccoli.

Ingredients
  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 cup yellow onion diced

  • 2 teaspoons ground cumin
  • 1/2 teaspoon dried oregano
  • 1 cup long grain dry, white rice
  • 15 ounce can low sodium black beans drained and rinsed
  • 4 ounce can diced green chilis
  • 15 ounce can no sodium added diced tomatoes
  • 2 cups low-sodium beef broth
  • 1 1/2 cups frozen corn
  • 1 cup shredded low-fat cheese
  • 2 cups shredded lettuce

Instructions
  1. Press the sauté button on the multi-function cooker. Once hot add oil and ground turkey, onion and garlic. Cook until turkey is cooked, and onions are softened.
  2. Add onion powder, paprika, chili powder, cumin, oregano. Stir to mix.
  3. Add in the rice, black beans, green chilis, diced tomatoes, beef broth, and frozen corn. Mix to combine.
  4. Put the lid on the multi-function cooker and set to manual, high pressure and time for 8 minutes.
  5. Once the time is done use the quick release function and once the pressure has dropped, open and fluff the rice.
  6. Top each serving with 1 ½ tablespoons of cheese and 3 tablespoons of shredded lettuce

Ingredients
  • 1 pound okra
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper

  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon ground cayenne pepper
  • 1/2 teaspoon dried thyme

  1. Clean the Okra by rinsing under cold running water and then trim off the very tip of the stem with a paring knife. Set aside.
  2. In a small bowl mix together paprika, garlic powder, ground black pepper, salt, onion powder, dried oregano, ground cayenne pepper, and dried thyme and sit aside.
  3. In a large bowl add the cleaned okra, olive oil and the paprika spice mix. Either with your clean hands or spoon mix until all the okra is cover with the oil and spice mix.
  4. Preheat the air frier to 400°F and set the timer for 7 minutes. Once air frier is preheated add a single layer of okra to the basket/tray. Shake or turn okra over halfway thru cooking. Note: you might have to cook in batches in the air frier depending on the size of your air frier.

Ingredients
  • 2 pounds tilapia fillets thawded
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 3/4 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon dried thyme leaves
  • 1/2 teaspoon dried oregano
  • 1 medium lemon

  1. Wash hands and disinfect work surfaces.
  2. Pre-heat oven to 350 degrees.
  3. Thaw tilapia if needed.
  4. Mix all the spices in a small bowl.
  5. Press spice mixture onto each piece of fillet, covering both sides.
  6. Cook coated fillet for about 10 minutes. Tilapia is cooked when it will flake with a fork and is opaque in color and reaches an internal temperature of 145 Degrees F.
  7. Transfer to a serving dish and squeeze lemon to top for a zing and enjoy!
