Ingredients
  • 2 pounds tilapia fillets thawded
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 3/4 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon dried thyme leaves
  • 1/2 teaspoon dried oregano
  • 1 medium lemon
Servings: 5.3 ounce filets

Instructions
  1. Wash hands and disinfect work surfaces.
  2. Pre-heat oven to 350 degrees.
  3. Thaw tilapia if needed.
  4. Mix all the spices in a small bowl.
  5. Press spice mixture onto each piece of fillet, covering both sides.
  6. Cook coated fillet for about 10 minutes. Tilapia is cooked when it will flake with a fork and is opaque in color and reaches an internal temperature of 145 Degrees F.
  7. Transfer to a serving dish and squeeze lemon to top for a zing and enjoy!

  • 1/4 cup extra virgin olive oil
  • 1 lemon zest, and juiced
  • 1 Tablespoon fresh basil minced
  • 1/2 teaspoon salt
Salad
  • 6 ounces baby spinach and spring mix
  • 1/4 cup reduced fat feta cheese crumbled
  • 1/4 cup almonds sliced
  • 1/2 pint fresh blackberries halved
  • 2 medium peaches sliced

  1. Wash your hands and clean your food preparation area.
  2. Wash all produce and fruit before preparing salad.
  3. Using a canning jar, pour in olive oil, zest, and juice of 1 lemon, minced fresh basil, and salt. Cover the jar with lid and shake till blended well, let sit.
  4. Toss spinach and spring mix in a large bowl. Top greens with feta cheese, walnut pieces, blackberries, and sliced peaches.
  5. Pour dressing over salad and gently toss.

Ingredients
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 whole roasting chicken 4-5 pound
  • 1 lemon halved
  • 1 tablespoons oil

  1. Wash your hands and surface well. In a small bowl, mix together all spices.
  2. Place chicken on cutting board and remove giblets and excess fat from the chicken cavity. Dry chicken with paper towels. (Do not rinse chicken with water) Sprinkle and rub chicken with spice mixture. Insert halved lemon into chicken cavity.
  3. Set 6-qt pressure cooker to the high sauté setting, pour in oil. Place in chicken, breast side down, and cook until golden brown, about 5 minutes. Flip chicken over with tongs and cook for an additional 5 minutes. Remove chicken from pressure cooker and set aside.
  4. Add water to pressure cooker and scrap bottom using a wooden spoon to prevent remainder pieces from burning. Place metal trivet into the pot and gently place chicken on top. Close top of pressure cooker and select manual setting to high and set time for 28 minutes.
  5. After timed cooking, naturally release pressure according to manufacturer’s directions, about 30 minutes.
  6. Open lid and remove chicken using tongs. Let chicken rest 10-15 minutes. Remove lemon and serve

Ingredients
  • 1/2 pint cherry tomatoes rinsed
  • 1 squash rinsed and sliced into ¼ - ½ inch rounds
  • 1 zucchini rinsed and sliced into ¼ - ½ inch rounds
  • 1 orange bell pepper rinsed and sliced into ¾ inch squares
  • 4-ounce mushrooms rinsed and wiped clean
  • 1 tablespoon olive oil
  • 1 lemon lemon juice and zest
  • 1 tablespoon fresh rosemary chopped

  1. Soak wooden skewers in water for 20 minutes.
  2. Combine olive oil, lemon zest and juice, and rosemary. Set aside.
  3. Heat oven broiler to high.
  4. Remove wooden skewers from water and begin to alternate threading tomatoes, squash, zucchini, bell pepper, and mushroom.
  5. Place vegetable skewers on rimmed baking sheet and brush with lemon-herb oil.
  6. Place under broiler 5 minutes. Remove and carefully flip skewers (they will be hot). Place back in oven and broil another 5-7 minutes. NOTE: Carefully watch vegetables under broiler to avoid burning.
