Ingredients
  • 1 cup cashews raw, whole
  • 3/4 cup almonds raw, unsalted
  • 1/4 cup pistachios raw
  • 1/4 cup sunflower seed kernels
  • 40 fat-free mini pretzels unsalted, (about 2 cups)
  • 1 large egg white large
  • 1 teaspoon light brown sugar
  • 1 tablespoon sesame seeds
  • 1 tablespoon Poppy seeds
  • 1 teaspoon coarse kosher salt
  • 1 teaspoons dehydrated onion flakes

Instructions
  1. Begin with a clean work surface and wash your hands.
  2. Preheat the oven to 325 degrees.
  3. In a large bowl, stir to combine the cashews, almonds, pistachios, sunflower seed kernels, and pretzels.
  4. I a small bowl, lightly whisk to combine the egg white, light brown sugar, sesame seeds, poppy seeds, kosher salt, and dehydrated onion flakes.
  5. Pour the egg mixture over the nut mixture and stir to evenly coat the nut mixture.
  6. Line a baking sheet with parchment paper and spread the nut mixture evenly over the top.
  7. Bake for 15 minutes. Let cool before serving.
  8. Store in an airtight container in a cool, dry place.

Ingredients
Cake
  • 16.5 ounce Classic white box cake mix
  • 1 ounce Lemon instant pudding mix fat free, sugar free
  • 6 ounces nonfat vanilla greek yogurt
  • 3 each egg whites
  • 1 1/2 cup water
Topping
  • 1 ounce Vanilla instant pudding mix fat free, sugar free
  • 1 cup skim milk
  • 8 ounces whipped topping thawed, fat free
  • 2 Tablespoons almonds sliced
  • 1/3 cup Blackberries halved
  • 1/3 cup raspberries halved
  • 1/3 cup blueberries whole
  • 1/3 cup strawberries chopped

Instructions
  1. Wash your hands and clean your cooking area. Pre-heat oven to 350 degrees Fahrenheit
  2. In a large mixing bowl, combine the cake mix, lemon pudding, yogurt, egg whites, and water. Mix contents together for 3-5 minutes until well blended.
  3. Spray a 9x11 baking pan using a non-stick cooking spray.
  4. Pour cake batter into the cake pan and bake for 35-40 minutes.
  5. To begin the topping, place the vanilla pudding and milk in a medium mixing bowl and combine. Once mixed, fold in the thawed whipped topping.
  6. Once the cake is done and cooled, add cake topping. Finally, top the cake with almonds and berries. Serve and enjoy!

Dressing
  • 1/4 cup extra virgin olive oil
  • 1 lemon zest, and juiced
  • 1 Tablespoon fresh basil minced
  • 1/2 teaspoon salt
Salad
  • 6 ounces baby spinach and spring mix
  • 1/4 cup reduced fat feta cheese crumbled
  • 1/4 cup almonds sliced
  • 1/2 pint fresh blackberries halved
  • 2 medium peaches sliced

  2. Wash all produce and fruit before preparing salad.
  3. Using a canning jar, pour in olive oil, zest, and juice of 1 lemon, minced fresh basil, and salt. Cover the jar with lid and shake till blended well, let sit.
  4. Toss spinach and spring mix in a large bowl. Top greens with feta cheese, walnut pieces, blackberries, and sliced peaches.
  5. Pour dressing over salad and gently toss.

Ingredients
  • 2 Tablespoon olive oil
  • 1 teaspoon Red Crushed Pepper Flakes
  • 2 teaspoon garlic powder
  • 1 teaspoon cayenne pepper
  • 4 cups broccoli florets Chopped into small pieces or steaks, about 3 heads
  • 1/3 cup almonds Sliced
  • 1/2 cup Parmesan cheese Shredded
  • 1/2 teaspoon salt
  • 1 Tablespoon lemon zest
  • 2 Tablespoon lemon juice

  1. Preheat oven to 375 degrees Fahrenheit. Spray non-stick spray on a baking sheet.
  2. In a small bowl, combine olive oil, red crushed pepper flakes, garlic powder, and cayenne powder.
  3. Place chopped broccoli into a large bowl and evenly pour in the olive oil mix. Distribute evenly over broccoli and gently mix until broccoli has been coated.
  4. Evenly spread broccoli on baking sheet leaving space in between.
  5. Roast broccoli for 8 to 10 minutes. Remove broccoli from oven and flip broccoli and evenly sprinkle almonds. Roast for an additional 8 to 10 minutes (or until desired doneness).
  6. Once broccoli is out of the oven, sprinkle with parmesan cheese and salt.
  7. Complete the dish by topping the broccoli with lemon zest and lemon juice. Serve and enjoy!

Ingredients
  • 4 medium tomatoes
  • 6 apricots
  • 1/2 medium red onion
  • 1/4 cup red wine vinegar
  • 1 1/2 tablespoons honey
  • 1 tablespoon dijon mustard
  • 1/3 cup goat cheese crumbles
  • 1/4 cup almonds sliced

  1. Wash your hands and clean your preparation area. Rinse all fruits under cool running water to remove dirt and debris.
  2. Slice tomatoes and apricots into bite-sized wedges and place in a large bowl.
  3. Slice the red onion into very thin strips and place them in the bowl as well.
  4. In a small bowl, combine the vinegar, honey, and mustard until smooth and combined. Pour vinegar dressing over the tomato combination and stir to evenly distribute.
  5. Top with goat cheese and almonds just before serving.
