Ingredients
  • 1 10 inch pie crust
  • 1 cup fresh or frozen cranberries
  • 1/2 cup fresh blueberries
  • 1/2 cup fresh raspberries
  • 2 teaspoons lemon zest
  • 1 Tablespoon vanilla extract
  • 1/4 teaspoon salt
  • 1 Tablespoon mint leaves
  • 1/2 cup unsalted pistachios chopped

Instructions
  1. Preheat oven to 425 degrees Fahrenheit. Line a cookie sheet with parchment paper to place your galette for baking.
  2. Roll out the pie crust out to a 12 in. circle. It does not have to be a perfect circle, but make sure the ends to not tear. Place your dough onto the cookie sheet.
  3. In a medium mixing bowl, combine cranberries, raspberries, blueberries, lemon zest, vanilla, and salt. Mix until all the ingredients are well incorporated.
  4. Pour in the fruit mixture into the middle of your dough, but make sure to leave 1 ½ inches of crust around the edges.
  5. Fold the edges of your crust dough over the fruit mixture, pinching the folds together to prevent it from unfolding. The center top of your fruit mixture should remain exposed.
  6. Place it in the oven for 30-35 minutes or until the crust is golden brown.
  7. Allow it to cool for 20 minutes before placing it in a serving dish and top with fresh mint leaves and pistachios. Serve warm.

Ingredients
Cake
  • 16.5 ounce Classic white box cake mix
  • 1 ounce Lemon instant pudding mix fat free, sugar free
  • 6 ounces nonfat vanilla greek yogurt
  • 3 each egg whites
  • 1 1/2 cup water
Topping
  • 1 ounce Vanilla instant pudding mix fat free, sugar free
  • 1 cup skim milk
  • 8 ounces whipped topping thawed, fat free
  • 2 Tablespoons almonds sliced
  • 1/3 cup Blackberries halved
  • 1/3 cup raspberries halved
  • 1/3 cup blueberries whole
  • 1/3 cup strawberries chopped

  1. Wash your hands and clean your cooking area. Pre-heat oven to 350 degrees Fahrenheit
  2. In a large mixing bowl, combine the cake mix, lemon pudding, yogurt, egg whites, and water. Mix contents together for 3-5 minutes until well blended.
  3. Spray a 9x11 baking pan using a non-stick cooking spray.
  4. Pour cake batter into the cake pan and bake for 35-40 minutes.
  5. To begin the topping, place the vanilla pudding and milk in a medium mixing bowl and combine. Once mixed, fold in the thawed whipped topping.
  6. Once the cake is done and cooled, add cake topping. Finally, top the cake with almonds and berries. Serve and enjoy!

Storing Berries

Storing berries can be kind of tricky and costly if not done properly.  In order to get your monies worth with these fragile delicacies, it’s important to use a method that will help to sustain their short life span.  In the case of berries, timing is everything.  These quick and easy tips will help to keep your berries fresher and longer.

Choosing Berries

  • Inspect your berries before you put them in the shopping cart – look for mold, mushy spots, leaky packages, discoloration, or berries that are shriveled – all of these are signs that the berries are old or damaged and you shouldn’t purchase.

Storing Berries

  • Store berries in the refrigerator for longest life and best quality. If your refrigerator has a fruit & vegetable drawer, store them there.

Washing Berries

  • Wash berries only just before using or consuming. Washing berries before storing can add excess moisture and promote mold growth.
  • Using a colander – rinse berries under gentle, cool, running water to remove and dirt or debris.

Freezing Berries

  • In most cases berries can be washed, laid in a single layer to dry on a clean surface.
  • Option 1: lay berries in a single layer on a cookie sheet and set in the freezer. After a couple of hours, remove berries from the freezer and place in a freezer safe container to be placed back in the freezer. This helps prevent clumping.
  • Option 2: place berries in a freezer safe baggie and lay as flat as you can in the freezer to try and prevent clumping.
