Ingredients
  • 1 10 inch pie crust
  • 1 cup fresh or frozen cranberries
  • 1/2 cup fresh blueberries
  • 1/2 cup fresh raspberries
  • 2 teaspoons lemon zest
  • 1 Tablespoon vanilla extract
  • 1/4 teaspoon salt
  • 1 Tablespoon mint leaves
  • 1/2 cup unsalted pistachios chopped

Instructions
  1. Preheat oven to 425 degrees Fahrenheit. Line a cookie sheet with parchment paper to place your galette for baking.
  2. Roll out the pie crust out to a 12 in. circle. It does not have to be a perfect circle, but make sure the ends to not tear. Place your dough onto the cookie sheet.
  3. In a medium mixing bowl, combine cranberries, raspberries, blueberries, lemon zest, vanilla, and salt. Mix until all the ingredients are well incorporated.
  4. Pour in the fruit mixture into the middle of your dough, but make sure to leave 1 ½ inches of crust around the edges.
  5. Fold the edges of your crust dough over the fruit mixture, pinching the folds together to prevent it from unfolding. The center top of your fruit mixture should remain exposed.
  6. Place it in the oven for 30-35 minutes or until the crust is golden brown.
  7. Allow it to cool for 20 minutes before placing it in a serving dish and top with fresh mint leaves and pistachios. Serve warm.

A refreshing lemonade lower in sugar that will help hydrate you this summer.  Our Blueberry Lemonade recipe can be made with either fresh or frozen blueberries which are a high antioxidant super fruit.

Ingredients
  • 2 cups fresh blueberries frozen may be used
  • 6 cups water
  • 2 tablespoons Agave Nectar
  • 1/3 cup freshly squeezed lemon juice
  • 8 sprigs Mint-garnish

  1. Clean your area and wash your hands before you begin.
  2. Combine blueberries and 1 cup of water in a blender until liquefied: about 1 min.
  3. Using a mesh strainer over the mouth of a 2-quart pitcher, pour the blueberry puree slowly to strain. Use a spoon to move puree back and forth over the mesh strainer to drain liquid.
  4. Add agave nectar into freshly squeezed lemon juice, stir well.
  5. Pour in agave nectar and lemon juice into a pitcher, stir.
  6. Add the remaining 5 cups of water to the pitcher and stir.
  7. Serve over ice. Add blueberries, thinly sliced lemon, or mint for garnish.
  8. Store in the refrigerator for 2-3 days.
  9. ** Stir lemonade before pouring. **Blend frozen blueberries longer to liquify.

Ingredients
  • 1 frozen pastry puff thawed
  • 1 cup non-fat vanilla yogurt
  • 3 tablespoon s Cheesecake flavored instant pudding mix
  • 3/4 cup fresh blueberries
  • 3/4 cup fresh cherries pitted and halved

  1. Remove pastry puff from freezer, let thaw for 15-20 minutes. Preheat oven to 400 degrees F.
  2. Prepare a baking sheet with parchment paper and unfold pastry puff on the baking sheet.
  3. Using a sharp knife, score a 1 ½ inch border around the edge of the pastry sheet. Do not cut all the way through. Prick the center of the sheet thoroughly using a fork.
  4. Bake in the oven for 10-12 minutes until golden. The pastry will puff in the oven, remove, and let cool. Carefully press down the center of the puff sheet that is puffed with your fingers.
  5. In a medium bowl, mix together yogurt and 3 Tbsp of the instant pudding mix.
  6. Pour pudding mixture in the center of cooled pastry, spreading evenly.
  7. Top with fresh blueberries and cherries.
  8. Serve immediately, or store in the refrigerator covered for 1 day to minimize soggy crust.

  • 6 cups mixed greens (spinach, kale, and lettuce) pre-washed
  • 1 teaspoon olive oil
  • juice of 1/2 lemon
  • Zest of 1 lemon
  • 1 cup fresh blueberries washed
  • 6 tablespoons goat cheese crumbled

  1. Wash your hands and clean your food preparation area.
  2. Wash all produce and fruits before preparing the salad.
  3. Place the mixed greens in a bowl. (If you don’t have mixed greens, use what greens you have on hand.)

  5. Divide among 6 servings and top each serving with 1 tablespoon of goat cheese.
