Berry Cherry Tart

This summer tart is perfect for dessert, brunch, and even festive enough for the Fourth of July.  Our Berry Cherry Tart is lighter than other cheesecake pastries but equally delicious.

Ingredients
  • 1 frozen pastry puff thawed
  • 1 cup non-fat vanilla yogurt
  • 3 tablespoon s Cheesecake flavored instant pudding mix
  • 3/4 cup fresh blueberries
  • 3/4 cup fresh cherries pitted and halved

Instructions
  1. Remove pastry puff from freezer, let thaw for 15-20 minutes. Preheat oven to 400 degrees F.
  2. Prepare a baking sheet with parchment paper and unfold pastry puff on the baking sheet.
  3. Using a sharp knife, score a 1 ½ inch border around the edge of the pastry sheet. Do not cut all the way through. Prick the center of the sheet thoroughly using a fork.
  4. Bake in the oven for 10-12 minutes until golden. The pastry will puff in the oven, remove, and let cool. Carefully press down the center of the puff sheet that is puffed with your fingers.
  5. In a medium bowl, mix together yogurt and 3 Tbsp of the instant pudding mix.
  6. Pour pudding mixture in the center of cooled pastry, spreading evenly.
  7. Top with fresh blueberries and cherries.
  8. Serve immediately, or store in the refrigerator covered for 1 day to minimize soggy crust.

Ingredients
  • 1 pound pork tenderloin
  • 1/4 cup cherry preserves
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon ground allspice
  • 1 tablespoon olive oil
  • 1/4 cup shallots chopped
  • 1 cup dark cherries fresh or frozen pitted
  • 1/4 teaspoon cayenne pepper

  1. Wash your hands and clean your preparation area.
  2. Preheat oven to 350 degrees.
  3. Mix the preserves, balsamic vinegar, and allspice in a small bowl. Reserve half of the mixture.
  4. Brush 1/2 of the mixture on the pork tenderloin, covering the entire tenderloin.
  5. Cover and cook the tenderloin for 45-50 minutes, or until a food thermometer reaches 145 degrees F.
  6. While the tenderloin is cooking, heat the olive oil in a skillet over medium-high heat. Add the shallots and saute for 1-2 minutes or until tender. Add the cherries, cayenne, and the reserved preserve mixture. Let simmer for 8-10 minutes or until sauce has thickened.
  7. Using an immersion blender, food processor, or regular blender blend the dark cherry sauce until it is smooth. Be careful with the hot liquid.
  8. Slice the tenderloin and spoon the dark cherry sauce over top. Enjoy!

  • 2 cups frozen dark cherries
  • 1 teaspoon vanilla extract
  • 2 cups nonfat vanilla greek yogurt
  • 1 cup fat free half & half

  1. Blend frozen cherries, vanilla extract, greek yogurt, and half & half in a large blender.
  2. Pour in a baking loaf pan.
  3. Cover and press against surface with wax paper and freeze until solid (1-2 hours).
  4. Serve and enjoy! Top with a few pitted fresh cherries.

Ingredients
  • 1 pie crust pre-made
  • 2 cup fruit blueberries, blackberries, cherries, pears, apples, raspberries, apricots, and plums work best
  • 1 cup 2% milk
  • 3 eggs
  • 1 tsp vanilla extract
  • 1/4 cup sugar
  • 1/2 cup all-purpose flour

  1. In a 9x9 round baking pan, place the pre-made pie crust and press down to mold it to the pan.
  2. Place your fruit of choice evenly around the bottom of the pan. For fruit like blueberries, blackberries, raspberries, and cherries just rinse and dry the fruit. For fruit like pears, apples, and plums, you will want to wash, core, and slice the fruit, and peel if you prefer.
  3. In a large bowl mix the milk, eggs, vanilla, sugar, and flour together. Then pour evenly over fruit and crust.
  4. Bake in the oven at 375 degrees for 35 to 40 minutes or until an inserted fork comes out clean.
