Happy Valentine’s Day! This holiday twist on hummus will make you fall in love with chocolate all over again!

* Serve with fresh fruit such as; apple slices, pear slices, berries, and banana slices.

* Perfect on toast topped with berries for breakfast!

* Pack ahead of time for ready to go snacking.

* Spread on graham crackers or dip with pretzels.

  • 15 ounce can garbanzo beans drained and rinsed
  • 4 tablespoons coconut milk
  • 5 tablespoons unsweetened cocoa powder
  • 2 tablespoons maple syrup
  • 1 tablespoon olive oil
  • 1 teaspoon vanilla extract

  1. Clean your area and wash your hands before you begin.
  2. Blend garbanzo beans in a food processor until smooth.
  3. Add coconut milk, cocoa powder, maple syrup, olive oil and vanilla extract, blend well.
  4. Refrigerate until ready to serve.

Ingredients
  • 1 pound pork tenderloin
  • 1/4 cup cherry preserves
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon ground allspice
  • 1 tablespoon olive oil
  • 1/4 cup shallots chopped
  • 1 cup dark cherries fresh or frozen pitted
  • 1/4 teaspoon cayenne pepper

Instructions
  1. Wash your hands and clean your preparation area.
  2. Preheat oven to 350 degrees.
  3. Mix the preserves, balsamic vinegar, and allspice in a small bowl. Reserve half of the mixture.
  4. Brush 1/2 of the mixture on the pork tenderloin, covering the entire tenderloin.
  5. Cover and cook the tenderloin for 45-50 minutes, or until a food thermometer reaches 145 degrees F.
  6. While the tenderloin is cooking, heat the olive oil in a skillet over medium-high heat. Add the shallots and saute for 1-2 minutes or until tender. Add the cherries, cayenne, and the reserved preserve mixture. Let simmer for 8-10 minutes or until sauce has thickened.
  7. Using an immersion blender, food processor, or regular blender blend the dark cherry sauce until it is smooth. Be careful with the hot liquid.
  8. Slice the tenderloin and spoon the dark cherry sauce over top. Enjoy!

Make your Valentine’s Day Dinner Romantically Safe!

Valentine's DAY - FS (2)Valentine’s Day is a great time to share a meal with your loved ones. Whether it is a table for two or a quiet night in, preparing foods safely just might make or break the romantic evening.   Following these food safety tips may help to keep your Valentine’s Day from going sour!

  1. Make sure your restaurant has a clean reputation! Before choosing a restaurant for the evening, look them up on your local city or area Food Inspection list!  See if they passed the inspection for a clean safe food establishment before enjoying your evening.
  2. Always order food cooked thoroughly. Keep bacteria from interrupting a lovely evening. Cook or order all raw meat, poultry, eggs, and seafood to a safe internal temperature.  Beef, pork, lamb, veal steaks, chops, and roasts should be cooked to an internal temperature of 145°F.  Ground beef, pork, lamb, or veal should be cooked to a minimum temperature of 160°F.  Poultry should be cooked to a safe minimum internal temperature of 165°F.
  3. Don’t forget to refrigerate your doggie bag leftovers! Leftovers for lunch is a great idea when you are on a budget or watching calories. However, can ruin a wonderful week! Remember to refrigerate foods within two hours and eat leftovers within three to four days.

Our Sweetheart Waffles are a low-fat option for a quick breakfast recipe.  We reduced the fat in this recipe by using unsweetened applesauce which also makes these waffles moist.   Add this to your list of recipes for a great Valentine’s Day treat.

  • 1 box red velvet cake mix
  • 3/4 cup water
  • 1/3 cup unsweetened applesauce
  • 3/4 cup egg substitute
  • Non stick cooking spray
Fresh Fruit Topping
  • 2 cups fresh rasperries
  • 1 cup pomegranate seeds
Optional Toppings
  • 1 tbsp powdered sugar sprinkled on top of waffles

  1. Wash hands and cooking area.
  2. In a large mixing bowl, combine cake mix, water, applesauce, and egg substitute. Stir well. Spray waffle maker with a small amount of non-stick spray; preheat until ready to use.
  3. Once waffle maker is warmed, fill waffle maker with 3/4 cup of waffle mixture. Cook for 2-3 minutes or until done. Remove from waffle maker.
  4. In a separate bowl, combine raspberries and pomegranate seeds.
  5. Top waffles with raspberry and pomegranate mixture.
  6. Optional: Sprinkle waffles with 1 tablespoon of powdered sugar.
