- 1 cup frozen diced sweet potatoes
- 2 cups bell pepper chopped
- 4 links turkey sausage chopped
- 1/4 cup canned green chiles
- 3 cups baby spinach
- 4 large eggs
- 2 ounces 2% shredded cheddar cheese
- Heat a nonstick skillet with a lid to medium high heat
- Begin sauteing sweet potatoes until tender, about 3 minutes
