Ingredients
Grain Base
  • 1 cup dry pearled barley
  • 3 cups low-sodium vegetable broth or water
Roasted Vegetables
  • 1 cup broccoli florets
  • 1 cup carrots chopped
  • 1 cup zucchini chopped
  • 1 small red onion chopped
  • 1 Tablespoon olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp dried thyme
  • 1/4 tsp black pepper
Simple Lemon Dressing
  • 2 Tablespoons olive oil
  • 2 Tablespoons lemon juice
  • 1 teaspoon dijon mustard
  • 1 teaspoon dried parsley
  • 1/4 teaspoon garlic powder
Toppings
  • 1/4 cup low fat feta

Instructions
  1. Rinse barley under cold water.
  2. Combine barley and broth in a saucepan.
  3. Bring to a boil, reduce heat to low, cover, and simmer 30–40 minutes until tender.
  4. Drain excess liquid if needed; set aside.
  5. While the barley is cooking, preheat oven to 400°F.
  6. Toss vegetables with olive oil, garlic powder, thyme, and pepper.
  7. Spread evenly on a baking sheet.
  8. Roast 20 minutes, stirring halfway, until tender and lightly browned.
  9. While the barley and vegetables are cooking whisk together olive oil, lemon juice, mustard, parsley, and garlic.
  10. Combine cooked barley and roasted vegetables.
  11. Drizzle with dressing and toss gently.
  12. Top with feta.

Ingredients
  • 8 large eggs
  • 3/4 cup 1% Milk
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 cup lean cured ham diced
  • 1/2 cup reduced fat cheddar cheese shredded
  • 1/2 cup lowfat monterey jack cheese shredded
  • 1 cup diced frozen potatoes
  • cooking spray

  1. Wash your hands and clean your preparation area.
  2. Preheat your oven to 375 Degrees F.
  3. In a large bowl whisk the eggs and milk together until well combined. Add in mustard and spices and continue to whisk until blended.
  4. Next, add in the diced ham, shredded cheese, and diced potatoes.
  5. Spray a pie dish with nonstick cooking spray. Add egg mixture to the dish and use a spoon to even out the mix-ins.
  6. Cook in the oven for 45 minutes or until the egg is set. Remove from the oven and let set for 10 minutes.

Ingredients
  • 1 1/4 cups panko breadcrumbs
  • 3/4 cup reduced fat grated Parmesan cheese
  • 1 tablespoons dried parsley
  • 1 large egg
  • 3 tablespoons mayonnaise
  • 2 tablespoons dijon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1.5 pounds red snapper fillets
  • Avocado oil spray

Instructions
  1. In a shallow dish combine the panko, Parmesan, and parsley.
  2. In a separate shallow dish, whisk together egg, mayonnaise, Dijon, garlic, salt, and pepper.
  3. Pat the snapper fillets dry with a paper towel and cut into 4 ounce sections.
  4. Dredge the fillets in the egg mixture, flipping to coat both sides.
  5. Pick up the fillet pieces one at a time, letting excess drip off before placing in the panko mixture. Coat both sides of each fillet in panko mixture, gently pressing down on the fillets to get the coating to adhere. Repeat with all fillets.
  6. Transfer fillets to your air fryer basket, taking care to not overcrowd as that will prevent the fish from crisping, spray the top of each fillet with avocado oil.
  7. Cook in the air fryer at 400°F for 12-15 minutes. After the first 6-8 minutes, open the air fryer and flip over the fillets, spray again with oil and then continue cooking.
  8. You might need to adjust the cooking times depending on the kind and the thickness of the fish that you’re using and the model of your air fryer. Fish is ready when it’s easily flaked with a fork.

Ingredients
  • 15 ounces canned cannellini beans, no salt added rinsed and drained
  • 10 ounces canned solid white tuna, packed in water drained and broken into chunks
  • 1/4 cup red onion chopped
  • 1/4 cup green olives pitted and chopped
  • 1 Tablespoon dry mustard powder
  • 4 Tablespoons red wine vinegar
  • 2 Tablespoon lemon juice
  • 4 Tablespoons olive oil
  • 1 teaspoon dried dill
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 15 ounces canned beets, no salt added rinsed, drained, and chopped into bite size pieces
  • 8 cups spring mix lettuce

  1. Combine beans, tuna, red onion, and green olives in a large bowl.
  2. Whisk together mustard powder, red wine vinegar, lemon juice, olive oil, dill, parsley, salt, pepper, garlic powder, and onion powder in a small bowl.
  3. Add half of the vinaigrette to tuna mixture, mix thoroughly.
  4. Combine spring mix salad and beets in a large bowl.
  5. Add remaining vinaigrette to the salad mixture and toss gently to coat.
  6. To serve, divide the salad and beet mixture evenly on to four plates and top with ¼ of the tuna mixture.

Ingredients
  • 1 pound boneless, skinless chicken breast poached and shredded
  • 1/2 cup frozen or fresh celery chopped
  • 12 ounces frozen peas and carrots
  • 1 cup yellow onion chopped
  • 3 cloves garlic finely minced
  • 32 ounces low sodium chicken broth
  • 15.5 ounces unsalted cannellini beans rinsed and drained
  • 8 ounces potato gnocchi
  • 2 Tablespoons olive oil
  • 2 teaspoons dried thyme
  • 2 leaves bay
  • 2 teaspoons dried parsley
  • 1 cup water
  • 1/2 teaspoons salt
  • 3/4 teaspoons black pepper

Instructions
  1. Begin with a clean prep area and poached chicken breasts, cooled and shredded. Set chicken aside on plate.
  2. In a large stock pot or Dutch oven over medium high heat, add olive oil to heat. Stir in chopped yellow onion, then add chopped frozen celery and frozen peas and carrots into the pot, and saute until they begin to soften (around 3-4 minutes).
  3. Add thyme, bay leaves, parsley, salt and pepper in with vegetable mixture, stirring to coat. Continue sauteing an additional 2 minutes.
  4. Add minced garlic cloves and sauté an additional 30 seconds, stirring carefully to make sure the garlic doesn’t burn.
  5. Add poached shredded chicken into the pot with vegetable and seasoning mixture. Pour in chicken broth, and stir well.
  6. Bring soup mixture to a low boil; reduce heat and simmer on low heat for 15-20 minutes to let flavors combine.
  7. While soup is simmering, add drained and rinsed cannellini beans into a high speed blender with 1 cup of water. Blend until well pureed.
  8. In the last 5 minutes of cooking time, add cannellini bean puree into soup mixture, stirring to combine well.
  9. Stir potato gnocchi into pot, and continue cooking until gnocchi dumplings float to the top. Serve hot, and enjoy!
