Ingredients
  • 1 tablespoon olive oil
  • 1/2 medium yellow onion diced
  • 1 medium zucchini diced
  • 15 ounce can no sodium chickpeas drained
  • 3 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoons crushed red pepper
  • 28 ounce can fire-roasted crushed tomatoes
  • 4 large eggs
  • 1/4 cup low fat feta

Instructions
  1. Heat olive oil in a deep non-stick sauté pan over medium heat. Add the onion and zucchini. Cook for about 5 minutes, until the onion becomes translucent.
  2. Add the chickpeas, garlic, cumin, paprika, crushed red pepper (if using). Cook for another minute, stirring frequently.
  3. Pour in the crushed tomatoes, stir and bring the sauce to a gentle simmer.
  4. Use a large spoon to make 4 small wells in the sauce. Crack one egg into each well. Cover the pan and cook for 2–8 minutes, or until the eggs are cooked to your liking.
  5. Remove from heat and sprinkle the crumbled feta.

Ingredients
Teriyaki Sauce
  • 1/2 cup reduced sodium soy sauce
  • 1/2 cup water
  • 1/4 cup brown sugar
  • 1 teaspoon crushed red pepper
  • 2 Tablespoons crushed garlic
  • 1/2 cup red onion thinly sliced
  • 1 teaspoon fresh ginger grated
  • 3 Tablespoons rice vinegar

  • 1 pound Flank Steak sliced into 1/2 inch strips
  • 1 medium red bell pepper sliced
  • 1 cup broccoli florets
  • 1 cup frozen edamame
  • 1/2 cup prepared teriyaki sauce
  • 1 Tablespoon sesame oil
  • 1 Tablespoon fresh garlic minced

Teriyaki Sauce
  1. Prepare onion, ginger and garlic.
  2. In a small saucepan add soy sauce, water, brown sugar, crushed red pepper, onion, garlic, ginger, and rice vinegar.
  3. In a separate small bowl make a paste with water and corn starch. Whisk the paste into the saucepan.
  4. Bring the saucepan to a boil over high heat and then reduce to a low heat.
  5. Stirring occasionally, simmer for 5-7 minutes or until desired thickness is achieved.
  6. Store in an airtight glass container in the refrigerator for up to 1 week.
Skillet
  1. On a clean cutting board, trim any excess fat from the flank steak. Slice steak into ½ inch slices.
  2. On a separate cutting board from the steak cutting board (to avoid cross contamination) dice red bell pepper.
  3. Add ½ tablespoon of sesame oil to pan and cook steak to desired doneness with an internal temperature of 145 degrees. Transfer cooked steak to a bowl, keep warm.
  4. Add remaining sesame oil to pan and sauté garlic. Once garlic is cooked, add vegetables and cook thoroughly.
  5. Add cooked steak back to pan with cooked vegetables. Add teriyaki sauce and mix with all vegetables and steak.
  6. Enjoy this easy and quick weeknight recipe!

Ingredients
  • 1 pound lean ground beef cooked
  • 1 medium yellow onion chopped
  • 3 cloves garlic minced
  • 1 28 ounce can crushed tomatoes unsalted
  • 1 16 ounce can petite diced tomatoes no salt added
  • 1 teaspoon kosher salt
  • 2 Tablespoons Italian seasoning
  • 2 teaspoons crushed red pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 cup water
  • 2 cups 1% cottage cheese unsalted
  • 2 cups nonfat mozzarella cheese
  • 1/4 cup Parmesan cheese
  • 8 ounces lasagna noodles uncooked
  • cooking spray

Instructions
  1. Wash your hands and clean your preparation area. Wash the lid and rim area of the cans before opening.
  2. In a large pan, add ground beef and cook until brown.
  3. Once the beef is lightly browned, add the chopped onion and garlic to the pan. Cook until the onion turns translucent.
  4. Next, add diced and crushed tomatoes, salt, Italian seasoning, crushed red pepper, garlic powder, onion powder, and water and stir together. Reduce heat after 5-10 minutes.
  5. Add cottage cheese, 1 ½ cups of mozzarella cheese, and parmesan cheese to a bowl and mix until combined.
  6. Spray slow cooker with non-stick cooking spray and add the sauce mixture to the bottom of the slow cooker covering the entire bottom.
  7. Next, layer with noodles (noodles can be broken up to better fit the slow cooker) and top with a portion of the cheese mixture.
  8. Continue adding layers of sauce, pasta, and cheese mixture until finished. Finish with sauce on top and sprinkle remaining mozzarella cheese to top it off.
  9. Cook lasagna on low for 4-4.5 hours. Serve and enjoy!

  • 1 cup uncooked orzo pasta
  • 2 tablespoons olive oil
  • 2 garlic cloves minced
  • 1/4 teaspoon crushed red pepper
  • 2 (8 ounce) skinless, boneless chicken breast halves cut into bite-sized pieces
  • 1 tablespoon chopped fresh parsley
  • 2 cups fresh spinach leaves
  • 1/4 cup reduced fat, grated Parmesan cheese for topping

  1. Bring a large pot of water to boil. Add orzo pasta, cook fro 8-10 minutes,until all dente, and drain.
  2. Heat the oil in a skilled over medium-high heat, and cook the garlic and red pepper 1 minutes, until garlic is golden brown.
  3. Stir in chicken and cook 2 to 5 minutes, until lightly browned and it reaches an internal temperature of 165°F.
  4. Reduce heat to medium, and mix in the parsley and cooked orzo.
  5. Plain spinach in the skillet. Continue cooking 5 minutes, stirring occasionally, until spinach is wilted.
  6. Serve topped with Parmesan cheese and enjoy!
