Ingredients
Pizza Base:
  • 1 long flatbread
  • 1 ounce mozzarella
  • 4 ounces chicken breast cooked and cubed
  • 1/2 Tablespoon fresh parsley
  • 1 Tablespoon Balsamic Glaze
Caramelized Onions
  • 1 Tablespoon olive oil
  • 1 sweet onion or Texas 1015 Onion
  • 2 Tablespoons white cooking wine
Mushroom Mixture:
  • 4 ounces water
  • 1 1/2 cup baby Bella mushrooms sliced
  • 1 Tablespoon balsamic vinegar
  • 1/4 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
Garlic White Sauce
  • 3/4 cup cottage cheese,
  • 3 cloves garlic
  • 1/8 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
Caramelized Onions:
  1. Slice onions into thin, even strips.
  2. In a sauté pan, heat olive oil over medium heat. Add the onions and cook until they start to become translucent and soft.
  3. Turn the heat down to low. Add cooking wine to deglaze the pan. Cook for at least 20 minutes or until onions become a deep caramel-brown. Stir every 5 minutes to encourage even browning.
Mushroom Mixture:
  1. To a saucepan, add water and bring to a simmer
  2. Add paprika, garlic powder, and black pepper. Allow to simmer for 1 minute.
  3. Add in sliced mushrooms and cook on medium heat until they become soft.
  4. Add Balsamic vinegar and cook for 1-2 minutes on medium heat.
  5. Drain the mushrooms and save the hot liquid.
Garlic White Sauce:
  1. To a blender, add the cottage cheese, garlic cloves, salt, and black pepper. Then, add 2-3 T of hot mushroom liquid from the previous step. Blend until completely smooth. Add more hot liquid, if needed, to make it smoother.
Assemble Flatbread:
  1. Lay the flatbread on a sheet pan. Spread the Garlic White Sauce all over the top.
  2. Add Mushroom Mixture on top of the sauce.
  3. Next, add a thin layer of Caramelized Onions over the mushrooms.
  4. Finally, top with fresh mozzarella cheese.
  5. Bake or air fry at 400-degrees F for 10-15 minutes.
  6. Slice into 8 slices, top with chopped parsley and drizzle with Balsamic glaze. Enjoy!
  7. Notes: You can broil for 1 minute at the end of the baking time to make the cheese extra bubbly. Use any variety of mushrooms that you like.

Ingredients
Cauliflower Alfredo Sauce
  • 1 cup medium head cauliflower chopped
  • 3 cloves garlic peeled
  • 1 cup Low Sodium Vegetable Broth
  • 1/2 cup unsweetened cashew milk or other plant-based or skim milk
  • 2 tablespoons olive oil
  • 2 tablespoons nutritional yeast
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
Casserole
  • 2 cups broccoli florets
  • 2 cups zucchini sliced
  • 1 cup mushrooms sliced
  • 1 cup baby spinach
  • 1/2 cup whole-grain breadcrumbs or panko
  • 2 tablespoons nutritional yeast or plant-based Parmesan alternative
  • 1 tablespoon olive oil

Sauce
  1. Steam cauliflower and garlic until tender (8–10 minutes).
  2. Drain and transfer to a blender with broth, milk, olive oil, nutritional yeast, and seasonings. Blend until smooth and creamy. Adjust consistency with extra broth if needed.
Vegetables
  1. Preheat oven to 425°F.
  2. Toss broccoli, zucchini, and mushrooms with a drizzle of olive oil. Roast on a sheet pan for 20 minutes, until just tender.
  3. After roasting lower the oven temperature to 375°F.
  4. Wilt spinach in a skillet, then drain and squeeze out all excess liquid, using paper towels or cheese cloth.
Assemble & Bake
  1. Lightly oil a 9x13" baking dish.
  2. Layer roasted veggies and spinach evenly in the dish.
  3. Pour cauliflower Alfredo sauce over the top, spreading to coat.
  4. Sprinkle breadcrumbs and nutritional yeast evenly.
  5. Bake uncovered at 375°F for 20 minutes, until golden and bubbling.
  6. Let rest 5 minutes before serving.

Ingredients
  • 3 Tablespoons olive oil Divided
  • .5 Cup red onion Chopped
  • .5 Cup red bell pepper Chopped
  • .5 Cup zucchini Chopped
  • .5 Cup Mushroom Chopped
  • 1/2 Teaspoon fresh ground pepper
  • 1/2 Teaspoon garlic powder
  • 1/2 Teaspoon paprika
  • 1/4 Teaspoon salt
  • 4 Cups Frozen Shredded Hashbrowns Thawed
  • 6 Cups spinach
  • .5 Cup Fat Free Mozzarella Cheese Shredded
  • 1/4 Cup green onion tops Chopped

Instructions
  1. Wash hands and food preparation area.
  2. Heat 1 tablespoon of olive oil over medium-high heat. Add onions and sauté for about 3 minutes.
  3. To the onions, add peppers, zucchini, mushrooms, and seasonings. Stir to evenly distribute the seasonings. Cook for about 8 – 10 minutes, or until vegetables are cooked through.
  4. Remove all vegetables from the pan and set aside.
  5. Add 2 tablespoons of olive oil to the pan over medium-high heat. Add hashbrowns in an even layer. Cook for 12-15 minutes, occasionally stirring to ensure even browning.
  6. When the hashbrowns are cooked through, lower the heat, and add the sauteed vegetables. Stir to combine.
  7. Add spinach and stir gently to combine. Cook until spinach is just wilted.
  8. Evenly top with cheese and green onions, then serve.

Ingredients
  • 1.25 pounds Flank Steak lean and fat trimmed
  • 1/2 teaspoon course kosher salt
  • 2 teaspoons olive oil
  • 2 cups mushrooms chopped
  • 4 cups fresh spinach
  • 2 cloves garlic
  • 1/2 cup Fat Free feta cheese
  • Cooking twine

  1. Wash your hands and clean your preparation area. Rinse fresh vegetables under cool running water.
  2. Lay the flank steak on a work surface, cover it with a sheet of plastic wrap. Use a meat mallet or other hard and sanitized kitchen object to tenderize the meat. Once flattened and tenderized a bit, remove the plastic wrap.
  3. To butterfly your flank steak using a sharp knife, lay your hand flat on the top of the steak, and slice horizontally to cut the flank steak in half. Cut almost all the way across, leave about 1/2 to ¾ of an inch intact on the far end of the flank steak. Lay open the flank steak flat like a book.
  4. Sprinkle the salt on both sides of the steak and set it aside.
  5. In a skillet heat the olive oil over medium-high heat. Once the olive oil is heated saute the mushrooms, spinach, and garlic until softened, wilted, and fragrant. Remove from heat.
  6. Spread the spinach mixture across the laid open flank steak, leaving about ½ an inch on all sides with no filling. Spread the feta cheese on top of the spinach mixture.
  7. Select a long side to begin rolling from, begin by tucking a corner and rolling evenly across the steak, and continue to roll until it is entirely rolled.
  8. Using the cooking twine tie around the rolled flank steak to secure the roll and prevent the filling from spilling out.
  9. Place the flank steak on a heated grill over direct heat at between 450-500 degrees. Brown on all sides, about 2 minutes per side, then move to indirect heat or turn the temperature down to between 350-400 degrees. Continue to cook for approximately 25 minutes or until steak reaches a minimum internal temperature of 145 degrees F.
  10. Remove from heat and let rest for about 5 minutes. Slice into 6 pinwheels, remove string with a knife, or clean scissors before serving.

  • 1 zucchini squash chopped
  • 1 red bell pepper chopped
  • 1 small onion diced
  • 1 tablespoon olive oil
  • 2 teaspoons Worcestershire sauce
  • 1/2 cup fat-free cheddar cheese shredded

  1. Remove the stems from the mushroom caps and chop stems, leaving mushroom cap in tact.
  2. Add chopped vegetables to the mushroom stems and sauté in a hot pan with non stick cooking spray until vegetables are tender. Drain off any access liquid.
  3. Place mushroom caps on a baking sheet and top with approximately 1/2 cup of sautéed vegetables. Add a 1/2 teaspoon of Worcestershire sauce to each mushroom and top with cheddar cheese.
  4. Bake at 350F for approximately 10 minutes.
