Back to school and busy schedules create a need for healthy breakfast meals on the go. These Western Omelette bites can be made ahead and stored in the refrigerator or freezer to use throughout the week. It is a delicious grab and go breakfast for the whole family.

Ingredients
  • 8 large eggs
  • 1/2 cup 2% low-fat cottage cheese
  • 1/4 cup white onion diced
  • 1/2 cup green chiles diced
  • 1/2 cup bell pepper chopped
  • 1 cup chopped frozen spinach
  • 6 ounces uncured ham diced
  • 4 ounces fat-free cheddar cheese shredded

Instructions
  1. Wash your hands and clean your preparation area.
  2. Preheat oven to 350 degrees.
  3. Spray skillet lightly with non-stick cooking spray and sauté spinach, onions, bell pepper, and green chiles until tender. Set aside.
  4. Add eggs and cottage cheese to the blender and blend until smooth.
  5. Add to mixing bowl and stir in vegetable mixture, ham, and cheese.
  6. Evenly distribute mixture into 48 mini muffin tins. If using a metal plan, spray lightly with nonstick cooking spray.
  7. Bake for 18-20 minutes. Check to be sure the center of the omelet bite is firm.
  8. Cool 3-5 minutes then remove from the pan.
  9. You can enjoy the bites warm or refrigerate or freeze bites to serve later.

Ingredients
  • 1 cup fine-grind or coarse yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon cayenne pepper
  • 2 tablespoon white granulated sugar
  • 2 large eggs
  • 1 cup skim milk
  • 14 ounces of corn canned, drained
  • 2 jalapenos seedless, diced
  • 1/2 cup red bell peppers diced
  • 2 green onions diced
  • 4 ounces fat-free cheddar cheese
  • 1 tablespoon canola oil

Instructions
  1. Preheat oven to 375° F. In a 12-count muffin tin add muffin liners and spray with non-stick cooking spray.
  2. In a large bowl, mix the cornmeal, all-purpose flour, baking powder, kosher salt, cayenne pepper, and granulated sugar.
  3. In a medium bowl, mix the eggs, skim milk, canned corn, jalapenos, red bell peppers, green onions, and fat free cheddar cheese.
  4. Add a portion of the wet ingredients to the dry ingredients and slowly fold them in. Continue to slowly fold and add the ingredients until all combined.
  5. Evenly pour the canola oil over the combined mixture and fold in slowly to distribute evenly into the mixture.
  6. Pour the cornbread mixture into the lined muffin tin and place in the oven.
  7. Bake cornbread muffins for 30 minutes or until golden brown.

  • 4 portabella mushrooms
  • 1 zucchini squash chopped
  • 1 red bell pepper chopped
  • 1 small onion diced
  • 1 tablespoon olive oil
  • 2 teaspoons Worcestershire sauce
  • 1/2 cup fat-free cheddar cheese shredded

  1. Remove the stems from the mushroom caps and chop stems, leaving mushroom cap in tact.
  2. Add chopped vegetables to the mushroom stems and sauté in a hot pan with non stick cooking spray until vegetables are tender. Drain off any access liquid.
  3. Place mushroom caps on a baking sheet and top with approximately 1/2 cup of sautéed vegetables. Add a 1/2 teaspoon of Worcestershire sauce to each mushroom and top with cheddar cheese.
  4. Bake at 350F for approximately 10 minutes.
