Cherry Orange Cranberry Sauce

Ingredients
  • 12 ounces dried cranberries no sugar added
  • 1/2 cup unsweetened dried cherries coarsely chopped
  • 1/3 cup water
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1/2 cup sugar-free orange marmalade
  • 1/4 cup brown sugar

Instructions
  1. Combine cranberries, cherries, water, cinnamon, and salt in the inner pot of a multi-functional pressure cooker. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 2 minutes. Allow 10 to 15 minutes for pressure to build.
  2. Release pressure using the natural-release method according to manufacturer's instructions, about 5 minutes. Switch to the quick-release method according to manufacturer's instructions to release remaining pressure, about 5 minutes. Unlock and remove the lid.
  3. Select sauté function and low heat. Add orange marmalade and brown sugar to the cranberry mixture. Cook and stir to combine, breaking up cranberries, 2 to 3 minutes. Turn off the pressure cooker and let cranberry sauce cool. Sauce will thicken upon cooling. Store in the refrigerator. For the best flavor, bring to room temperature before serving.

Ingredients
  • 5 pounds yellow squash cut into large pieces
  • 2 large large eggs
  • 1 cup panko breadcrumbs divided
  • 1/2 cup plain greek yogurt
  • 1/2 cup white onion diced
  • 1/2 cup green bell pepper diced
  • 4 ounces mild green chiles diced
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 Tablespoon olive oil

  1. Wash your hands and clean your preparation area.
  2. Preheat oven to 350 degrees.
  3. Wash squash and remove tips. Cut each squash into large pieces.
  4. In a large saucepan, cover squash with water and boil until tender.
  5. Drain squash in a colander and return to pan.
  6. Use a fork or potato masher to mash boiled squash.
  7. Heat olive oil in small skillet and sauté onion, bell pepper, green chilis, pepper and garlic powder until onions and bell peppers are tender.
  8. Lightly beat eggs in a separate dish.
  9. Add Greek yogurt, ¾ cup breadcrumbs, and sautéed vegetables to the saucepan with the squash and stir to combine.
  10. Spread mixture into a shallow baking dish and sprinkle the remaining breadcrumbs on top.
  11. Bake at 350 degrees for 30-35 minutes until the top is lightly browned.

  • 15 ounces low sodium chickpeas rinsed
  • 2 teaspoons extra virgin olive oil
  • 2 tablespoons za’atar seasoning

  1. Spread out chickpeas on a paper towel and pat or rub dry.
  2. Heat oven to 425 degrees.
  3. Place chickpeas in a bowl and drizzle with olive oil and za’atar. Stir to mix, ensuring that the chickpeas are evenly coated with seasoning.
  4. Line a heavy rimmed sheet pan with foil and spread chickpeas evenly on the pan.
  5. Bake in the center of the oven until crunchy, about 20 minutes, stirring and rotating after 10 minutes.
  6. Store any cooled leftovers in an airtight container for up to a week.

Ingredients

  • 15 ounces canned no salt added chickpeas drained and rinsed
  • 1 Tablespoon extra virgin olive oil
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 2 medium hearts romaine chopped (about 4 to 5 cups)
  • 3 medium ears corn grilled
  • 15 ounces canned no salt added petite diced tomatoes drained
  • 1 medium red bell pepper diced
  • 1/3 cup diced red onion
  • 2 jalapenos diced
Chipotle Ranch Dressing
  • 1/4 cup Plain non-fat Greek Yogurt
  • 1 Tablespoon chipotle style hot sauce
  • 2 Tablespoons fresh lemon juice
  • 1 Tablespoon Ranch Seasoning
  • 1/4 cup skim milk

Charring the Corn
  1. In a Pan: Add 1 Tbsp. of the oil to a large cast-iron skillet (or grill pan) over medium-high heat. Once hot, add corn and roll in oil; let cook, undisturbed for 4 minutes, until bottoms are lightly charred. Toss, and continue cooking in 2 minute intervals, until the corn is charred to your liking.  On the Grill: Preheat grill to medium-high heat. Brush corn cobs with oil, and grill for 10 to 12 minutes, turning occasionally, until kernels are lightly charred.  Over a Gas Range: Heat burner to medium-high heat. Lightly spray corn cobs with cooking spray, and place directly over flame for 6 to 8 minutes, turning to char all sides.
Preparing the Salad
  1. Preheat oven to 425ºF. Drain and rinse chickpeas and pat them dry with a paper towel.
  2. Spread on a rimmed baking sheet and toss with 1 Tbsp. olive oil, 1/2 tsp. paprika, 1/2 tsp. ground cumin, and 1/4 tsp. each salt and black pepper.
  3. Bake for 20 minutes, shaking the pan halfway through. Let cool for 10 minutes.
  4. While chickpeas roast, prepare Chipotle Ranch Dressing. In a medium bowl, combine Greek yogurt, hot sauce, lemon juice, ranch seasoning, and milk; whisk to combine.
  5. Add chopped romaine, drained tomatoes, diced bell pepper, diced red onion, and diced jalapenos. Add in the charred corn after using your preferred method, cut kernals from the cob if needed.
  6. Add half of the chickpeas and about two-thirds of dressing; toss to combine. Scatter remaining chickpeas overtop (crouton style) and drizzle with remaining dressing.

Ingredients
  • 1 pound okra
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon ground cayenne pepper
  • 1/2 teaspoon dried thyme

Instructions
  1. Clean the Okra by rinsing under cold running water and then trim off the very tip of the stem with a paring knife. Set aside.
  2. In a small bowl mix together paprika, garlic powder, ground black pepper, salt, onion powder, dried oregano, ground cayenne pepper, and dried thyme and sit aside.
  3. In a large bowl add the cleaned okra, olive oil and the paprika spice mix. Either with your clean hands or spoon mix until all the okra is cover with the oil and spice mix.
  4. Preheat the air frier to 400°F and set the timer for 7 minutes. Once air frier is preheated add a single layer of okra to the basket/tray. Shake or turn okra over halfway thru cooking. Note: you might have to cook in batches in the air frier depending on the size of your air frier.
