Ingredients
  • 2 red bell peppers cut into 2-inch pieces
  • 2 yellow Bell peppers cut into 2-inch pieces
  • 1 red onion cut into wedges
  • 3 cups cherry tomatoes
  • 14 ounce canned quartered artichoke hearts drained
  • 2 lemons wedged
  • 4 garlic cloves minced
  • 1/4 cup olive oil
  • 2 Tablespoons balsamic vinegar
  • 2 teaspoon dried oregano
  • 1/2 teaspoon pepper
  • 1.5 pounds boneless center loin pork chops 1 inch thick (about 6 chops)
  • 1/4 cup kalamata olives pitted and halved
  • 2 Tablespoons reduced fat feta cheese crumbled
  • 1/4 cup fresh basil chopped

Instructions
  1. Preheat oven to 400 degrees Fahrenheit. Clean produce and surfaces.
  2. Combine red and yellow bell pepper, red onion, cherry tomatoes, artichoke hearts, and lemon wedges in a large skeet pan (22 X 16).
  3. In a small bowl, whisk together garlic, olive oil, balsamic vinegar, oregano, and pepper. Pour half over the vegetables, stirring and coating well.
  4. Place the pork chops over the vegetables and top each with the remainder of the mixture. Place prepared sheet pan in the oven and bake for 20 minutes.
  5. Remove the sheet pan from the oven and check the pork temperature with a food thermometer. Once the pork has reached 145 degrees, add olives and feta cheese over the vegetables and return to the oven for 5-10 minutes until golden brown.
  6. Remove the sheet pan from the oven and cover with foil. Let the pork rest for 5-10 minutes.
  7. Slice the pork and return over the vegetables. Squeeze the lemon juice from the cooked lemon wedges over the pork and vegetables. Top with fresh basil.
  8. Serve pork and vegetables together.

Ingredients
  • 1 pound skinless boneless chicken breast, cut into ½ inch strips
  • 1/2 cup nonfat Greek yogurt, plain
  • 1 lemon, juice of
  • 2 tablespoons white wine vinegar
  • 4 cloves garlic
  • 1/4 teaspoon pepper
  • 1/2 Tablespoon dried oregano
  • 1 teaspoon paprika
  • 1/4 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 red onion cut into thick strips
  • 1 bell pepper cut into strips
  • 1 head butter lettuce
  • 6 Pita bread

Instructions
  1. In a sealable plastic bag or glass container with a lid combine the chicken, greek yogurt, lemon juice, vinegar, garlic, pepper, oregano, paprika, cumin, coriander, rosemary, thyme, cinnamon, salt, red onion and bell pepper. Marinate in the refrigerator for at least 30 minutes but can be up to overnight.
  2. On a sheet pan lined with tin foil, spread out the chicken and vegetables in an even layer.
  3. Cook in a 375 F degree oven for 25 to 30 minutes or until chicken reaches an internal temperature of 165 degrees F.
  4. Toss to combine the chicken and vegetables together on the sheet pan.
  5. Serve on pita bread with 2-3 leaves of lettuce and any additional suggested toppings. *Additional Topping ideas: cucumber, tomatoes, kalamata olives, tzaziki sauce.

  • 2 Tbsp Avocado Oil
  • 1 Tbsp garlic Minced
  • 1/4 Cup onion Diced
  • 1/2 Cup carrot Diced
  • 2 Stalks celery Diced
  • 2 Tbsp tomato paste
  • 1/4 Cup tomato sauce no salt added
  • 1 1/4 Cup Brown dry lentils
  • 14.5 Oz Canned Potatoes Drained
  • 2 Cups water
  • 2 Cups low sodium chicken broth no sugar added option
  • 1/2 Tsp black pepper
  • 1/2 Tsp dried oregano
  • 1 Tsp cumin
  • 3 Cups baby spinach leaves

  1. In a large pot, add avocado oil. Add in the garlic, diced onion, diced carrot, and diced celery. Cook for 2-3 minutes until carrots and celery are soft, stirring frequently.
  2. Add tomato paste, tomato sauce, and lentils to the pot and combine with the carrot and celery mixture. Cook for 1 minute.
  3. Add canned potatoes to the pot.
  4. Pour in 2 cups water and 2 cups chicken broth.
  5. Add in black pepper, oregano and cumin. Stir to combine, cover, and bring to a boil.
  6. Reduce heat to medium low and simmer for 25 minutes until lentils are cooked.
  7. With a handheld emulsion blender, briefly emulsify about ¼ of the soup in the pot while leaving the texture chunky. If using a regular blender, remove ¼ of the soup and add the blender. Blend until smooth and place back in the pot.
  8. Stir in spinach leaves into the soup and let simmer for 5 more minutes or until spinach is wilted.

Ingredients
  • 1 tablespoon olive oil
  • 1/2 cup yellow onion chopped
  • 1 cup carrots diced

  • 7 cups no salt added chicken stock
  • 2 cups black beans dry
  • 1/2 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 1 avocado cut into 10 slices
  • 1/2 cup reduced tat shredded cheddar cheese

  1. On the sauté function of an electric pressure cooker add the olive oil, onion, garlic, carrots, and celery to the inter pot and sauté for 5 to 7 minutes.
  2. Add Chicken stock, dried black beans, chili powder, and dried oregano. Stir to combine.
  3. Place the lid on the electric pressure cooker. Set it to manual and set the time for 35 minutes. Once the time is up let the pressure cooker naturally releases pressure for about 10 minutes.
  4. Remove the lid and stir. Top each serving with 2 teaspoons of cheese and a slice of avocado.

  • 1 tablespoon olive oil

  • 1 quart chicken stock – no salt added
  • 15 ounce can crushed tomatoes – no salt added

  • 1/2 cup frozen spinach thaw and drained
  • 1/3 cup of dried orzo pasta

  1. Heat oil in a large pot and add onion, carrots, celery, and garlic. Cook, stirring until softened. Add cut-up meatballs. Cook for 2 minutes.
  2. Add chicken stock, crushed tomatoes, beans, dried basil and dried oregano. Bring the pot to a boil and then turn it down to a simmer.
  3. Add dried orzo pasta and spinach. Cook for 10 minutes or until orzo pasta is tender. Serve and enjoy!
