Bok Choy Salad

Ingredients
  • 4 cups bok choy chopped
  • 1/2 cup green onions chopped
  • 6 ounces dry Chow Mein noodles
  • 1/4 cup olive oil
  • 1/4 cup Vinegar
  • 1/4 cup sugar
  • 2 tablespoons low sodium soy sauce

Instructions
  1. Wash and chop bok choy and green onions.
  2. Add to large mixing bowl.
  3. Break up chow Mein noodles and add to mixing bowl.
  4. Add olive oil, vinegar, sugar, and low sodium soy sauce to jar and close lid.
  5. Shake well to combine.
  6. Drizzle dressing over contents of mixing bowl.
  7. Gently toss and serve

Ingredients
  • 1 tablespoon olive oil
  • 3 tablespoons garlic minced
  • 1 cup shallots minced
  • 2 small heads bok choy chopped
  • 2 red bell peppers chopped
  • 1 cup mushrooms chopped
  • 2 tablespoons low sodium soy sauce
  • 1 teaspoon sesame oil
  • 2 teaspoons cayenne pepper

Instructions
  1. Heat olive oil in large nonstick skillet or wok over medium- high heat. Evenly distribute oil over the skillet.
  2. Add minced garlic and minced shallots to the skillet and heat for 2 minutes.
  3. Add bok choy, red bell peppers, and mushrooms to the skillet and continue to cook for 2 minutes.
  4. Add low sodium soy sauce and sesame oil to the skillet coating the bok choy, bell peppers, and mushrooms.
  5. Evenly distribute cayenne pepper over dish and continuously stir vegetables for an additional 2- 4 minutes or to desired doneness.
  6. Serve as a side to your favorite dish or store in refrigerator for 1 to 2 days.

Bok Choy Nutrition

Bok choy is a great vegetable to choose for adding to your dinner tonight!  With only 9 calories per 1 cup of raw shredded bok choy it is a great addition to a healthy eating pattern.   Bok choy is an excellent source of vitamins C, A, and K and a good source of folate.   As part of a healthy eating pattern, adults should aim for 2 1/2 cups of vegetables a day.   Be sure to follow proper food safety and wash all fruits and vegetables before preparing.
