Ingredients
Tacos
  • 8 Street Taco Flour Tortillas about 4.5 in.
  • 1 teaspoon olive oil
  • 2 cups low sodium garbanzo beans drained, rinsed
  • 1 teaspoon ground oregano
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon Ground Basil
  • 1/2 teaspoon ground dill
  • 1/2 teaspoon black pepper
  • 1/8 teaspoon salt
  • 1/2 English cucumber chopped (reserve the other half)
  • 1/4 cup red onion chopped
  • 1/4 cup cherry tomatoes quartered
  • 1/8 cup black olives chopped
  • 1/8 cup feta cheese crumbled
Tzatziki
  • 1/2 English cucumber grated and excess water drained
  • 1/2 cup plain nonfat Greek yogurt
  • 1 clove garlic minced
  • 2 Tablespoons fresh dill chopped
  • 1 Tablespoon lemon juice

Instructions
  1. Wash your hands and clean your preparation area.
  2. Cut cucumber in half. Use one half in step 3, reserve the other half for tacos in step 5.
  3. For the tzatziki, use a box grater or food processor to shred one half of cucumber. Drain any excess liquid.
  4. In a small bowl, combine grated cucumber, greek yogurt, minced garlic, fresh dill, and lemon juice. Cover and refrigerate for flavors to meld up to 2 hours before serving.
  5. In a medium bowl, combine cucumber, red onion, tomatoes, olives, and feta. Set aside until ready to serve.
  6. To a medium pan, heat olive oil over medium heat. Add garbanzo beans, oregano, onion powder, garlic powder, ground basil, ground dill, salt, and pepper. Stir to evenly coat the garbanzo beans.
  7. Continue to cook the garbanzo beans over medium heat, stirring frequently until cooked through, about 5 minutes.
  8. Once the chickpeas are cooked, keep warm while warming the tortillas. Heat a small pan over medium high heat, gently toast both sides of the tortillas to desired warmth or toastiness.
  9. Evenly divide the garbanzo mixture onto the 8 tortillas. Evenly divide the cucumber mixture and add over the top of garbanzo mixture. Finally, evenly divide the tzatziki and drizzle over the top of tacos.

Ingredients
Salad
  • 14.5 ounce low sodium green beans drained
  • 15.5 ounce low sodium garbanzo beans drained
  • 15.5 ounce low sodium kidney beans drained and rinsed
  • 1/2 cup red onion sliced thinly
  • 2 jalapenos seeds removed, chopped
  • 1/4 cup cilantro chopped
Marinade
  • 3/4 cup apple cider vinegar
  • 1 packet sucralose
  • 1/4 cup canola oil
  • 1/2 teaspoon pepper

Instructions
  1. Wash hands and sanitize the working area
  2. Open green bean and garbanzo bean cans, drain and add to a large bowl.
  3. Open the kidney bean can drain and rinse. Add to a large bowl.
  4. Add prepared red onion, jalapeno, and cilantro to a large bowl and stir.
  5. Prepare marinade in a separate bowl by combining, apple cider vinegar, sucralose, canola oil, and pepper.
  6. Add marinade to bean mixture and toss to coat.
  7. Cover bowl and refrigerate for at least 20 to 30 minutes and up to 2 days for best flavor.

  • 1 garlic clove minced
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice

  • 2 teaspoons paprika
  • 2 teaspoons cinnamon

  1. Puree garbanzo beans in a food processor.
  2. Add pumpkin puree and mix well
  3. Add garlic, olive oil, lemon juice, ground cumin, and paprika. Mix well.
  4. If this recipe is too bland, add more cumin and paprika to taste.

Ingredients
  • 3 cups whole wheat pasta shells uncooked
  • 2 medium carrots sliced
  • 1 medium bell pepper chopped
  • 1 (15 ounce) can low sodium kidney beans drained and rinsed
  • 1 (15 ounce) can low sodium garbanzo beans drained and rinsed
  • 1 (14.5 ounce) can Italian style stewed tomatoes about 1.75 cups
  • 2/3 cup fat free Italian dressing
  • 1/4 cup shredded Parmesan cheese

  1. Cook pasta according to package directions, drain, and set aside to cool. In a large bowl, add carrots, bell pepper, kidney beans, garbanzo beans, and tomatoes.
  2. In a separate small mixing bowl, combine Italian dressing and parmesan cheese.
  3. Add pasta and dressing to vegetables mixture.
  4. Refrigerate for 15 minutes allowing flavors to combine and serve.
