Ingredients
Tacos
  • 8 Street Taco Flour Tortillas about 4.5 in.
  • 1 teaspoon olive oil
  • 2 cups low sodium garbanzo beans drained, rinsed
  • 1 teaspoon ground oregano
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon Ground Basil
  • 1/2 teaspoon ground dill
  • 1/2 teaspoon black pepper
  • 1/8 teaspoon salt
  • 1/2 English cucumber chopped (reserve the other half)
  • 1/4 cup red onion chopped
  • 1/4 cup cherry tomatoes quartered
  • 1/8 cup black olives chopped
  • 1/8 cup feta cheese crumbled
Tzatziki
  • 1/2 English cucumber grated and excess water drained
  • 1/2 cup plain nonfat Greek yogurt
  • 1 clove garlic minced
  • 2 Tablespoons fresh dill chopped
  • 1 Tablespoon lemon juice

Instructions
  1. Wash your hands and clean your preparation area.
  2. Cut cucumber in half. Use one half in step 3, reserve the other half for tacos in step 5.
  3. For the tzatziki, use a box grater or food processor to shred one half of cucumber. Drain any excess liquid.
  4. In a small bowl, combine grated cucumber, greek yogurt, minced garlic, fresh dill, and lemon juice. Cover and refrigerate for flavors to meld up to 2 hours before serving.
  5. In a medium bowl, combine cucumber, red onion, tomatoes, olives, and feta. Set aside until ready to serve.
  6. To a medium pan, heat olive oil over medium heat. Add garbanzo beans, oregano, onion powder, garlic powder, ground basil, ground dill, salt, and pepper. Stir to evenly coat the garbanzo beans.
  7. Continue to cook the garbanzo beans over medium heat, stirring frequently until cooked through, about 5 minutes.
  8. Once the chickpeas are cooked, keep warm while warming the tortillas. Heat a small pan over medium high heat, gently toast both sides of the tortillas to desired warmth or toastiness.
  9. Evenly divide the garbanzo mixture onto the 8 tortillas. Evenly divide the cucumber mixture and add over the top of garbanzo mixture. Finally, evenly divide the tzatziki and drizzle over the top of tacos.

  • 4 nopales
  • 1 lata garbanzos drenados, sin sal
  • 2 cdas de aceite de oliva
  • 1/2 cebolla cortada en pedazos

  • 1/2 pimiento morrón
  • 1 pimiento de chile sin semillas, cortado en pedacitos
  • 1/2 taza de cilantro cortado en pedazos
  • 3 tazas de agua

  1. Lave sus manos, su area de trabajo y los vegetales a utilizar.
  2. Pele y recorte el nopal. Lave completamente. Corte el nopal en cuadrados. En una cacerola hierva las tres tazas de agua. Añada el nopal y hierva por 15 minutos. Remueva del fuego y drene el agua en un colador.
  3. Caliente el aceite de oliva en un sarten. Añada la cebolla, los tomates, el pimiento, los pimientos morrón, y el cilantro. Cocine hasta que las cebollas se vean translucidas.
  4. Añada los garbanzos, los nopales, y el cilantro en la mezcla de cebolla. Añada las 3 tazas de agua y cocine a fuego lento por 15 minutos.

Ingredients
  • 4 cactus paddles
  • 1 can garbanzo beans drained, no salt added
  • 2 tablespoons olive oil
  • 1 clove garlic diced
  • 1 1/2 tomatoes chopped
  • 1/2 bell pepper
  • 1 chile pepper seeded, dice
  • 1/2 cup cilantro chopped
  • 3 cups water

  1. Wash your hands, clean your cooking area, and wash vegetables.
  2. Peel and trim the cacti. Wash thoroughly. Cut the cacti in small squares. In a sauce pan bring about 3 cups water to a boil. Add cacti and boil for 15 minutes. Remove from heat and drain in a colander.
  3. Heat olive oil in a skillet. Add the onion, tomatoes, chile pepper, bell pepper, and pepper, and cilantro and saute until onions are translucent.
  4. Add the drained garbanzo beans, the cacti, and the chopped cilantro to the onion mixture. Add 3 cups water and simmer for 15 minutes.
