Skillet Vegetable Enchiladas

This delicious skillet dish includes all the flavors you love from traditional enchiladas, with a plant-forward twist and less prep!

Featuring black beans as the main protein source and pairing it with a rainbow of vegetables (zucchini, red bell pepper, mushrooms, sweet potatoes, and spinach) makes this all-in-one meal a nutrition powerhouse. The addition of the corn tortillas helps to create a more complete protein in this meal, while the easy to make sauce and blend of cheeses make these “enchiladas” both comforting and tasty!

Ingredients
Ingredients
  • 1 Tablespoon olive oil
  • 1 small zucchini diced
  • 1 large red bell pepper diced
  • 1 small red onion diced
  • 8 ounce fresh sliced baby bell mushrooms
  • 1 cup frozen sweet potatoes
  • 15 ounce can low sodium black beans
  • 3 cups chopped fresh baby spinach
  • 8 medium corn tortillas 8-inch
  • 3 cloves garlic
  • 1/3 cup low-fat Mexican blend cheese
  • 1 ounce grated cotija cheese
Sauce
  • 3.5 Tablespoons olive oil
  • 1.5 Tablespoons all-purpose flour
  • 1/2 Tablespoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon oregano
  • 1 Tablespoon tomato paste no salt added
  • 1 cup Low Sodium Vegetable Broth
  • 1/2 teaspoon apple cider vinegar
  • 1/3 teaspoon black pepper

Instructions
  1. In a large skillet, heat 1 Tbsp. olive oil over medium high heat. Add the onion, red pepper, zucchini, mushrooms, and frozen sweet potatoes. Sauté for 4 to 5 minutes, or until vegetables are tender, then stir in the garlic, cooking for about 30 more seconds or until garlic smells fragrant. Set aside.
  2. While vegetables are cooking, mix together the broth, apple cider vinegar, and tomato paste in a small bowl or measuring cup.
  3. In a separate saucepan, heat the remaining 3.5 Tbsp. olive oil over medium heat. Add the chili powder, garlic powder, cumin, oregano, and black pepper. Whisk the mixture for about 90 seconds until spices are very fragrant and everything is well-mixed.
  4. Pour the tomato mixture into the saucepan of spices. Bring the mixture to a boil, whisking it occasionally, then lower the heat and let it simmer for about 5-7 minutes until sauce thickens.
  5. Add the black beans and fresh spinach to the vegetable skillet and stir.
  6. Pour the enchilada sauce into the skillet, then top with the corn tortilla strips and stir. Pour the remaining half of the sauce in and continue to stir until all tortilla strips are coated in sauce. Continue cooking for 2-3 minutes, letting the sauce thicken even more.
  7. Remove the skillet from the heat and top with the low-fat Mexican blend cheese. Place a lid on the skillet and let it sit for 3-5 minutes to allow the cheese to melt.
  8. Serve warm, topped with a sprinkle of cotija cheese and chopped cilantro.

Ingredients
  • 2 large eggs
  • 1 overripe banana mashed
  • 1 cup fresh spinach
  • 1 cup grated carrots
  • 1/4 cup Avocado Oil
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 2 teaspoons apple cider vinegar
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 cup cocoa powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup chocolate chips

Instructions
  1. Preheat your oven to 350 ℉ and spray a 12-hole muffin tin with baking spray. Set aside.
  2. In a food processer, combine eggs, banana, spinach, carrots, oil, maple syrup, vanilla, and vinegar. Blend until mixture is smooth.
  3. Add flour, baking soda, baking powder, cocoa powder, cinnamon, and salt. Process until just mixed.
  4. Fold in chocolate chips. Portion batter into prepared muffin tin. Bake for 20-22 minutes or until a toothpick inserted into the middle comes out clean. Let cool in pan for 5 minutes before transferring to a cooling rack.

Ingredients
  • 3 cups fresh broccoli chopped
  • 3/4 cup blueberries
  • 1/2 cup low sodium mozzarella cheese diced
  • 1/4 cup whole walnuts chopped
  • 1/4 cup sucralose sweetener
  • 1 tablespoon apple cider vinegar
  • 3/4 cup non-fat plain greek yogurt

  1. Clean and prep your area.
  2. Wash broccoli and blueberries under cool running water.
  3. Chop broccoli and walnuts into small pieces.
  4. Dice mozzarella cheese into small pieces.
  5. Place chopped broccoli, walnuts, mozzarella cheese and blueberries in a large bowl.
  6. In small bowl mix together yogurt, sweetener and vinegar.
  7. Toss the dressing into the broccoli salad mixture until well combined.

  • 14.5 ounce low sodium green beans drained
  • 15.5 ounce low sodium garbanzo beans drained
  • 15.5 ounce low sodium kidney beans drained and rinsed
  • 1/2 cup red onion sliced thinly
  • 2 jalapenos seeds removed, chopped
  • 1/4 cup cilantro chopped
Marinade
  • 3/4 cup apple cider vinegar
  • 1 packet sucralose
  • 1/4 cup canola oil
  • 1/2 teaspoon pepper

  1. Wash hands and sanitize the working area
  2. Open green bean and garbanzo bean cans, drain and add to a large bowl.
  3. Open the kidney bean can drain and rinse. Add to a large bowl.
  4. Add prepared red onion, jalapeno, and cilantro to a large bowl and stir.
  5. Prepare marinade in a separate bowl by combining, apple cider vinegar, sucralose, canola oil, and pepper.
  6. Add marinade to bean mixture and toss to coat.
  7. Cover bowl and refrigerate for at least 20 to 30 minutes and up to 2 days for best flavor.

Chimichurri Sauce
  • 1/2 cup red onion diced
  • 2 jalapeno peppers deseeded and diced
  • 1 Tablespoon garlic cloves chopped
  • 1 cup parsley Stems Removed and chopped
  • 1/2 cup cilantro leaves Stems Removed and chopped
  • 1 Tablespoon Tablespoon Italian Seasoning
  • 1/2 teaspoon red pepper flakes
  • 1/3 cup fresh lime juice
  • 1/4 cup apple cider vinegar
  • 1 Tablespoon olive oil
Zucchini
  • 3 large zucchini cuthalf lengthwisestrips
  • 1/2 cup reduced fat parmesan cheese

  1. Wash your hands and sanitize all surfaced
  2. Wash and prepare ingredients
  3. Combine the ingredients for the chimichurri sauce in a large bowl and set aside
  4. Prepare zucchini, slice into uniform strips so they grill evenly.
  5. Heat up grill and spray with oil
  6. Add sliced zucchini to your chimichurri sauce and mix well.
  7. Place zucchini on grill and cook until tender
  8. Remove from heat and top with parmesan cheese
  9. Serve and enjoy

Chimichurri sauce is a very versatile condiment: You can add it to beef, chicken, or pork. It can be incorporated into meatballs or used as a marinade for fajitas. It can also be utilized as a unique salad dressing.
