Ingredients
  • 2 large eggs
  • 1 overripe banana mashed
  • 1 cup fresh spinach
  • 1 cup grated carrots
  • 1/4 cup Avocado Oil
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 2 teaspoons apple cider vinegar
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 cup cocoa powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup chocolate chips

Instructions
  1. Preheat your oven to 350 ℉ and spray a 12-hole muffin tin with baking spray. Set aside.
  2. In a food processer, combine eggs, banana, spinach, carrots, oil, maple syrup, vanilla, and vinegar. Blend until mixture is smooth.
  3. Add flour, baking soda, baking powder, cocoa powder, cinnamon, and salt. Process until just mixed.
  4. Fold in chocolate chips. Portion batter into prepared muffin tin. Bake for 20-22 minutes or until a toothpick inserted into the middle comes out clean. Let cool in pan for 5 minutes before transferring to a cooling rack.

Fruity Oat Muffins

This is a “make it your own recipe” use your favorites to create the flavor of your muffins.  The recipe is the base of your creation.  The banana and oats are the foundation for the muffin.  You can also make mini muffins with this recipe, a good hands-on activity for kids.  Makes 12 muffins or 24 mini muffins.

Ingredients
  • 4 ripe bananas
  • 1 teaspoon vanilla or coconut extract
  • 3 cups old fashioned oats

  1. Preheat oven to 350 degrees F. Spray cooking spray in regular muffin pans, set aside.
  2. Mash 4 medium ripe bananas in a large bowl. Stir extract into mashed bananas.
  3. Add oats to bowl, mix well with a spoon.
  4. Scoop mixture into muffin molds, fill to the top. Add favorite fruit toppings for extra flavors.
  5. Bake in oven for 20-25 minutes.
  6. Enjoy warm or store in refrigerator for up to 5 days.
  7. Ideas for toppings: diced apples, berries, diced pears, diced peaches, unsweetened coconut flakes

  • 2 cups cooked pinto beans drained, mashed
  • 1/2 cup margarine
  • 1/2 cup sugar
  • 1/2 cup applesauce
  • 1 egg
  • 2 teaspoons vanilla
  • 1 cup flour
  • 1/4 cup non-fat milk
  • 1 1/2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1 teaspoon allspice
  • 1 cup raisins
  • 1/2 cup walnuts chopped

  1. Wash your hands and clean your work area.
  2. Preheat the oven to 350 degrees.
  3. Spray a 9X9 square baking pan with non-stick cooking spray or 12 muffin cups.
  4. Cream margarine and sugar in a bowl until light and fluffy. Add remaining wet ingredients.
  5. Mix in dry ingredients. Fold in the raisins and walnuts.
  6. Bake for 50 minutes for 9X9 cake or 20 minutes for muffins.

This banana-apple muffin is a yummy way to provide a nutritious start to your family’s day or as a snack to refuel kids after school. The whole-wheat base, and mix of applesauce and bananas, makes these muffins an easy way to incorporate whole grains and fruit into your day. We like to pair a muffin with fruit and low-fat yogurt for a simple, yet filling breakfast. After school, this muffin and a side of fruit is perfect served alongside homework!

  • 1/4 cup skim milk
  • 1/4 cup granulated white sugar
  • 1/2 teaspoon vanilla extract
  • 1 large egg
  • 2 medium ripe bananas peeled and mashed

  1. Preheat oven to 350 degrees.
  2. Wash your hands and clean your cooking area.
  3. Combine white whole wheat flour, baking powder, baking soda, and salt. Set aside.
  4. Whisk applesauce, milk, sugar, vanilla, and egg until well combined. Gently add bananas to wet ingredients.
  5. Fold flour mixture into wet ingredients, just until combined.
  6. Divide muffin batter among 12 lined muffin tins.
  7. Bake 18-20 minutes, until cooked through.
