Oatmeal Almond Butter Bars

Ingredients
  • 1 cup almond butter
  • 3 tablespoons honey
  • 1/3 cup almond milk
  • 2 tablespoons orange peel grated
  • 1 teaspoon salt
  • 3 cups rolled oats quick cooking
  • 1/4 cup chia seeds
  • 1 cup dried cranberries
  • 1 cup pecans chopped
Servings: 2x2 squares

Instructions
  1. In a large bowl combine the oatmeal, dried cranberries and pecans. Set aside
  2. In a small saucepan over low heat combine the almond butter, chia seeds and honey. Heat until combined.
  3. Remove from heat and add in almond milk, salt, and grated orange peel
  4. Add the almond butter mixture to the bowl of oats and mix until combined.
  5. Pour into an 8x8 baking pan lined with foil or parchment paper. Press lightly to even out and place in the refrigerator for 30 minutes to set-up.
  6. Cut into twelve 2x2 squares and enjoy.
  7. Store leftovers in an airtight container in the refrigerator for up to a week or freeze for later.
  8. To Thaw: place in the refrigerator to thaw.

Ingredients
  • 1/2 cup rolled oats
  • 1/2 cup Unsweetened Vanilla Almond Milk
  • 1/2 medium Banana mashed
  • 1 Tablespoon walnuts chopped
  • 1 teaspoonn vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 2 Tablespoons low fat vanilla Greek yogurt

  1. In a mason jar or tight seal container, place the rolled oats and almond milk. Stir together.
  2. Continue to add ingredients (banana, walnuts, vanilla extract, cinnamon, and Greek yogurt) and stir after adding each for even distribution.
  3. Once all the ingredients are mix, place in the refrigerator overnight or for 6-8 hours.
  4. Serve and enjoy! Overnight Oats are best when eaten within 3 days

Ingredients
  • 4 ripe bananas
  • 1 teaspoon vanilla or coconut extract
  • 3 cups old fashioned oats

  1. Preheat oven to 350 degrees F. Spray cooking spray in regular muffin pans, set aside.
  2. Mash 4 medium ripe bananas in a large bowl. Stir extract into mashed bananas.
  3. Add oats to bowl, mix well with a spoon.
  4. Scoop mixture into muffin molds, fill to the top. Add favorite fruit toppings for extra flavors.
  5. Bake in oven for 20-25 minutes.
  6. Enjoy warm or store in refrigerator for up to 5 days.
  7. Ideas for toppings: diced apples, berries, diced pears, diced peaches, unsweetened coconut flakes

Types of Oats

Types of oats - iconSteel-cut, old-fashioned, quick-cooking, instant…. Do you find yourself wondering what’s the difference between these types of oats? And more importantly, how long it takes to cook each type of oat? Here is a quick guide so you can decide which type of oats to use in your next recipe:

  • Steel Cut Oats are chopped with steel blades. The texture is more coarse and chewy compared to other types of oats. They need to be cooked slowly, about 40 minutes over low heat.
  • Old Fashioned Oats are toasted, hulled, steamed, and flattened. This helps them cook evenly and quickly. These oats can cook in as little as 5 minutes. These oats are typically used in baking.
  • Quick Cooking Oats are rolled and roughly cut. These oats can cook in as little as 1 minute over the stove-top in boiling water.
  • Instant Oats are the most processed form of oats available on the market. These oats are rolled, cooked, and dried before being packaged. These oats rehydrate in an instant with boiling water!

Oats are whole grains, meaning they have the bran and germ intact, making them an excellent source of fiber. Fiber is an important part of the diet and has many health benefits such as weight management, reduction in cholesterol, diabetes management, and digestive issue improvement.
