Balsamic Chicken and Spinach Salad

Texas produce is a great way to increase fresh vegetable consumption and eat local. The Balsamic Chicken and Spinach Salad recipe features fresh spinach which is a grows well in early spring. This delicious salad is a crowd pleaser for an easy springtime meal.

Ingredients
  • 3/4 cup balsamic vinegar
  • 3 teaspoons honey
  • 1 pound boneless, skinless chicken breast
  • 6 cups spinach
  • 1 cup strawberries sliced
  • 1/4 cup pecans toasted and chopped
  • 1/4 cup sweet onion thinly sliced

Instructions
  1. Wash your hands and clean your preparation area.
  2. Wash spinach and strawberries and set aside.
  3. Heat balsamic vinegar and honey in a saucepan to make Balsamic glaze. Heat until boiling and then reduce heat and simmer for approximately 15 minutes until thick enough to coat the back of a spoon. Set aside and let cool.
  4. Baste chicken breast with balsamic glaze , reserving some to drizzle over finished salad, and then grill or oven roast until it reaches an internal temperature of 165.
  5. Prepare the salad by placing spinach, sliced strawberries, and thinly sliced onion in a large bowl.
  6. Toast chopped peans in a dry skillet for 2-3 minutes.
  7. Slice the chicken breast and place on top of the salad, add toasted pecans, and a drizzle of the balsamic glaze.

Ingredients
  • 2 Tablespoons Tablespoons unsalted butter
  • 2 large apples
  • 1.5 teaspoon cinnamon
  • 12 slices 100% whole wheat bread
  • 6 large eggs
  • 1.5 cups 2% milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon nutmeg
  • 1/4 cup brown sugar divided
  • 1/3 cup pecans chopped

Instructions
  1. Wash hands and clean preparation area, rinse apples under cool running water. Preheat your oven to 375 Degrees F.
  2. Remove the core from the apples and chop into small chunks.
  3. In a medium saucepan melt the butter.
  4. Add the apples and toss until all of the apples are coated with butter. Let the apples sit and begin to soften on a medium heat, stir occasionally.
  5. Add in ground cinnamon and toss. Add 1 Tablespoon brown sugar and add to the apples. This will help the apples brown and soften more. Lower the heat to simmer and set aside after 5 minutes.
  6. In a medium bowl, whisk eggs and milk together, adding in ground nutmeg and vanilla and remaining brown sugar. Cut the bread into large chunks and add pieces to a baking pan.
  7. Pour the egg mixture over the bread, letting the bread soak up the egg and milk. Make sure to coat all of the bread.
  8. Once the apples are done, layer the apples onto the bread and fill all open spaces with apples.
  9. Cover the casserole and place in the oven and bake for 30 minutes. Remove from oven and sprinkle chopped pecans on top, cook for an additional 10 minutes or until the egg has set and the pecans are aromatic.

Ingredients
  • 1 cup almond butter
  • 3 tablespoons honey
  • 1/3 cup almond milk
  • 2 tablespoons orange peel grated
  • 1 teaspoon salt
  • 3 cups rolled oats quick cooking
  • 1/4 cup chia seeds
  • 1 cup dried cranberries
  • 1 cup pecans chopped

  1. In a large bowl combine the oatmeal, dried cranberries and pecans. Set aside
  2. In a small saucepan over low heat combine the almond butter, chia seeds and honey. Heat until combined.
  3. Remove from heat and add in almond milk, salt, and grated orange peel
  4. Add the almond butter mixture to the bowl of oats and mix until combined.
  5. Pour into an 8x8 baking pan lined with foil or parchment paper. Press lightly to even out and place in the refrigerator for 30 minutes to set-up.
  6. Cut into twelve 2x2 squares and enjoy.
  7. Store leftovers in an airtight container in the refrigerator for up to a week or freeze for later.
  8. To Thaw: place in the refrigerator to thaw.

Ingredients
  • 3 large ripe bananas divided
  • 1 cup 2% milk
  • 1/4 cup heavy whipping cream
  • 2 tablespoons sugar
  • 1.5 tablespoons corn starch
  • 1/4 cup chia seeds
  • 1/2 teaspoon vanilla extract
  • 16 ounces frozen fat free whipped topping
  • 8 tablespoons graham cracker crumbs
  • 8 tablespoons pecans chopped and toasted

  1. Mash 2 of the bananas, reserve the 3rd for slicing.
  2. In a medium pot, heat the bananas, 3/4 cup milk, ¼ cup heavy whipping cream and sugar. Wisk together the remaining ¼ cup milk and corn starch. When banana mixture is heated through, lower the heat and stir in the milk and cornstarch.
  3. Remove from heat and stir in chia seeds and vanilla extract. Let cool slightly then place in the fridge to chill and let thicken, at least an hour.
  4. Preheat oven to 300 degrees and toast pecans for 5-7 minutes.
  5. Top with the whipped topping, sliced banana, graham cracker crumbs and toasted pecans. Serve in either one large dish, or single servings divided into 8 parfait cups or double servings into 4 dishes.

Ingredients
  • ¾ Cup unsweetened applesauce
  • 2 egg whites (1/4 cup)
  • 2 Tablespoons brown sugar
  • 1 Tablespoons orange zest
  • 1/2 Cup 100% orange juice
  • ½ Cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1/4 Cup chia seeds
  • 4 Cups rolled “old fashion” oats
  • 1/4 teaspoon baking soda
  • 1/2 Cup dried cranberries
  • 1/2 Cup pecans chopped

  1. Preheat oven to 350°F and spray a 9x9 casserole dish with nonstick cooking spray.
  2. In a small bowl whisk applesauce, egg whites, and brown sugar until combined.
  3. To the mixture add orange zest, orange juice, almond milk, vanilla extract, and chia seeds. Mix until combined and set aside.
  4. In a large bowl add rolled oats, baking soda, dried cranberries, and pecans. Stir until mixed.
  5. Add the liquid mixture to the dried oat mixture and stir until combined.
  6. Pour mixture into the prepared casserole dish and bake in preheated oven for 25 to 30 minutes or until set. Serve warm or once cooled cut into to 12 pieces and store in an airtight container in the refrigerator for up to five days.
