Ingredients
  • 4 medium carrots grated or julienne
  • 2 medium apples chopped
  • 1 stalk celery chopped
  • 1 tablespoon lemon juice
  • 1/2 cup raisins
  • 1/2 cup nonfat vanilla yogurt no sugar added
  • 1 teaspoon ground cinnamon

Instructions
  1. Clean your area and wash your hands before you begin.
  2. Wash carrots, apples, and celery. With a knife or peeler, peel the carrots.
  3. Grate the carrots, and chop the apples, and celery and place in large mixing bowl.
  4. Add the lemon juice, raisins, yogurt, and cinnamon to the bowl of chopped carrots, apples, and celery.
  5. Stir until evenly coated.
  6. Eat immediately or cover and allow to chill in the refrigerator before serving.

Ingredients
  • 4 cup broccoli florets
  • 3/4 cup real bacon bits
  • 1 large apple diced
  • 1/2 cup slivered almonds
  • 1/2 cup shredded lowfat cheddar cheese
  • 2/3 cup fresh or frozen cranberries sliced in half
  • 1/2 cup raisins
  • 1/4 cup water
  • 1 cup plain nonfat, greek yogurt
  • 1/8 teaspoon salt and pepper each

Instructions
  1. Clear your area for preparation and wash your hands
  2. Whisk water, greek yogurt, salt and pepper together, set aside
  3. In a large bowl, combine broccoli florets, bacon bits, apple, almonds, cheese, cranberries and raisins.
  4. Add greek yogurt mixture to broccoli mixture and toss together
  5. Keep refrigerated until ready to serve

Ingredients
  • 2 cups cooked pinto beans drained, mashed
  • 1/2 cup margarine
  • 1/2 cup sugar
  • 1/2 cup applesauce
  • 1 egg
  • 2 teaspoons vanilla
  • 1 cup flour
  • 1/4 cup non-fat milk
  • 1 1/2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1 teaspoon allspice
  • 1 cup raisins
  • 1/2 cup walnuts chopped

Instructions
  1. Wash your hands and clean your work area.
  2. Preheat the oven to 350 degrees.
  3. Spray a 9X9 square baking pan with non-stick cooking spray or 12 muffin cups.
  4. Cream margarine and sugar in a bowl until light and fluffy. Add remaining wet ingredients.
  5. Mix in dry ingredients. Fold in the raisins and walnuts.
  6. Bake for 50 minutes for 9X9 cake or 20 minutes for muffins.

Ingredients
  • 1 tablespoon olive oil
  • 4 4oz boneless, skinless chicken breast
  • 2 medium onions sliced into wedges
  • 1 1/2 teaspoons garlic powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon cumin
  • 1 14.5 oz can reduced sodium diced tomatoes
  • 1/4 cup honey
  • 1/3 cup raisins
  • 4 cups cooked couscous

  1. Heat oil in non-stick pan over medium-high heat.
  2. Add chicken, cook for 5 minutes on each side, or until brown. Transfer chicken to plate, cover to keep warm.
  3. Cook onion in the same skillet for 7 minutes. Add spices, honey, and tomatoes.
  4. Return chicken to the skillet. Cover and simmer for 5 minutes.
  5. Stir in raisins and simmer for 10 minutes, stirring occasionally until chicken is done. Serve over couscous.
