Ingredients
  • 3 boneless, skinless chicken breasts
  • 1/4 tsp black pepper
  • 1/2 cup Parmesan cheese low sodium
  • 1/3 cup onion chopped
  • 8 oz sour cream fat free
  • 1 cup 1% Milk
  • 10 oz frozen spinach thawed and drained
  • 2 10.75 oz cans cream of chicken soup reduced sodium
  • 16 oz whole wheat pasta noodles parboiled
  • 1 cup shredded mozzarella cheese fat free

Instructions
  1. Preheat oven to 350 degrees Fahrenheit; spray a 9x13 inch baking pan with cooking spray.
  2. Poach chicken breasts in water until done. Drain and cut into bite size pieces and place in a large mixing bowl.
  3. Add parmesan cheese, onion, sour cream, milk, spinach, pepper and cream of chicken soup to the chicken and mix well.
  4. Place 3 parboiled noodles in bottom of the pan. Spoon 1/3 of the chicken mixture on top. Sprinkle with 1/3 of mozzarella cheese. Repeat layers.
  5. Bake for 30 to 45 minutes or until mixture begins to bubble. Let rest 10 minutes before cutting.

Ingredients
  • 1 pound boneless, skinless chicken breast cubed
  • 2 tsp olive oil
  • 1/4 tsp pepper
  • 2 Tbsp Louisiana style hot sauce
  • 1 bunch romaine lettuce chopped
  • 3 ribs celery chopped
  • 1 cup shredded carrots
  • 1/2 cup fat-free ranch salad dressing

  1. Wash your hands and clean your cooking area.
  2. In a large nonstick skillet, saute chicken in oil over medium high heat until the chicken reaches an internal temperature of 165 degrees F. Drain, and stir in hot sauce and pepper.
  3. Divide romaine among 4 plates. Top with chicken, celery and carrots. Serve with dressing.

Ingredients
Ingredient for Enchiladas
  • 1 - 4 ounce package nonfat cream cheese
  • 2 cups cooked chicken breast chopped
  • 12 ounces chunky salsa mild
  • 1 cup shredded Mexican blend cheese reduced fat
  • 10 corn tortillas
Sauce
  • 2 cups plain yogurt nonfat
  • 1 cup fresh cilantro chopped
  • 1 teaspoon ground cumin

Instructions
  1. Heat cream cheese in large skillet over medium heat until soft.
  2. Stir in chicken and ½ cup of the salsa; mix well.
  3. Add 1/2 cup shredded cheese; stir until melted.
  4. Spoon enchilada filling onto each tortilla; roll up.
  5. Place seam side down in baking dish.
  6. Top with remaining salsa and cheese.
  7. Bake at 350̊ F for about 15 minutes, or until heated through and through.
  8. Serve with yogurt sauce.

Ingredients
  • 1 pound lean ground beef
  • 15 ounce can tomato sauce no salt added
  • cooking spray
  • 10 ounce refrigerated pizza crust
  • 1 cup reduced fat mozzarella cheese shredded
  • 1 cup fresh baby spinach
  • 1 yellow bell pepper sliced
  • 1/2 cup cherry tomatoes halved

  1. Wash hands, clean surface and pre-heat oven to 425 degrees F.
  2. Brown lean ground beef in a pan over medium heat.
  3. Add tomato sauce to cooked, browned meat. Cook together and let simmer.
  4. Spray 9 X 13 inch baking pan with cooking spray.
  5. Unroll refrigerated package of pizza crust, pat well and smooth out up to the sides.
  6. Sprinkle ½ of mozzarella cheese on crust and cover with all of the meat sauce.
  7. Top with spinach, bell peppers and tomatoes.
  8. Bake in oven for 12 minutes.
  9. Remove from oven, top with remainder of cheese and return to oven till melted.
