Ingredients
  • 1/2 cup whole wheat bread crumbs or panko
  • 2 teaspoons Italian seasoning
  • 1/3 cup flour
  • 1 egg beaten lightly
  • 4 boneless skinless chicken breasts, thinly sliced
  • 2 teaspoons olive oil
  • 1/2 cup reduced fat mozzarella cheese
  • 1 cup reduced-sodium marinara sauce
  • 2 Tablespoons water

Instructions
  1. Heat oven to 350° F.
  2. Place flour and Italian seasonings in a shallow dish.
  3. Place bread crumbs and eggs each in a separate shallow dish.
  4. Coat chicken in the flour mixture, then in the egg mixture, and finally the bread crumbs.
  5. Place on a plate when done coating the chicken.
  6. In a large non-stick skillet, heat 2 teaspoons of olive oil over medium-high heat.
  7. Sauté chicken 2 to 3 minutes per side, until browned. In the bottom of a baking dish, mix 1/4 cup marinara sauce with 2 Tablespoons of water.
  8. Place chicken in dish and top each with 3 Tablespoons of marinara sauce and 3 Tablespoons cheese.
  9. Bake at 350̊ F, covered, for 15 minutes..

Ingredients
  • 1 lb extra lean ground beef cooked and drained
  • 16 ounces uncooked jumbo pasta shells
  • 1 tbsp olive oil
  • 1/2 cup frozen bell pepper/onion stir fry vegetables
  • 2 cloves garlic finely chopped
  • 1 small zucchini diced
  • 1 (2 1/4 ounce) can sliced ripe olives drained
  • 1 (14 ounce) jar unsalted tomato sauce
  • 1/2 cup fat free ricotta cheese
  • 1/4 cup fat free egg substitute
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup reduced fat mozzarella cheese shredded

Instructions
  1. Heat oven to 350°F.
  2. Spray 11x7-inch (2-quart) glass baking dish with cooking spray.
  3. Cook and drain pasta shells as directed on package.
  4. Meanwhile, in 10-inch skillet, heat oil over medium heat until hot.
  5. Cook stir-fry vegetables, ground beef and garlic in oil 2 to 3 minutes, stirring occasionally, until crisp-tender.
  6. Add zucchini; cook 4 minutes, stirring occasionally.
  7. Stir in olives and 1/4 cup of the tomato sauce.
  8. Cook until hot, stirring frequently.
  9. Remove from heat.
  10. In medium bowl, mix ricotta cheese, egg, Parmesan cheese and 1/2 cup of the shredded cheese. Stir in zucchini mixture until well mixed.
  11. Fill each cooked pasta shell with about 2 tablespoons zucchini mixture.
  12. Place in baking dish.
  13. Pour remaining tomato sauce over shells.
  14. Cover with foil; bake 30 minutes.
  15. Sprinkle with remaining 1/2 cup shredded cheese.
  16. Bake uncovered 5 to 10 minutes longer or until bubbly and cheese is melted.

Ingredients
  • 1 pound lean ground beef
  • 15 ounce can tomato sauce no salt added
  • cooking spray
  • 10 ounce refrigerated pizza crust
  • 1 cup reduced fat mozzarella cheese shredded
  • 1 cup fresh baby spinach
  • 1 yellow bell pepper sliced
  • 1/2 cup cherry tomatoes halved

Instructions
  1. Wash hands, clean surface and pre-heat oven to 425 degrees F.
  2. Brown lean ground beef in a pan over medium heat.
  3. Add tomato sauce to cooked, browned meat. Cook together and let simmer.
  4. Spray 9 X 13 inch baking pan with cooking spray.
  5. Unroll refrigerated package of pizza crust, pat well and smooth out up to the sides.
  6. Sprinkle ½ of mozzarella cheese on crust and cover with all of the meat sauce.
  7. Top with spinach, bell peppers and tomatoes.
  8. Bake in oven for 12 minutes.
  9. Remove from oven, top with remainder of cheese and return to oven till melted.
