Ingredients
  • 1 lb extra lean ground beef cooked and drained
  • 16 ounces uncooked jumbo pasta shells
  • 1 tbsp olive oil
  • 1/2 cup frozen bell pepper/onion stir fry vegetables
  • 2 cloves garlic finely chopped
  • 1 small zucchini diced
  • 1 (2 1/4 ounce) can sliced ripe olives drained
  • 1 (14 ounce) jar unsalted tomato sauce
  • 1/2 cup fat free ricotta cheese
  • 1/4 cup fat free egg substitute
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup reduced fat mozzarella cheese shredded

Instructions
  1. Heat oven to 350°F.
  2. Spray 11x7-inch (2-quart) glass baking dish with cooking spray.
  3. Cook and drain pasta shells as directed on package.
  4. Meanwhile, in 10-inch skillet, heat oil over medium heat until hot.
  5. Cook stir-fry vegetables, ground beef and garlic in oil 2 to 3 minutes, stirring occasionally, until crisp-tender.
  6. Add zucchini; cook 4 minutes, stirring occasionally.
  7. Stir in olives and 1/4 cup of the tomato sauce.
  8. Cook until hot, stirring frequently.
  9. Remove from heat.
  10. In medium bowl, mix ricotta cheese, egg, Parmesan cheese and 1/2 cup of the shredded cheese. Stir in zucchini mixture until well mixed.
  11. Fill each cooked pasta shell with about 2 tablespoons zucchini mixture.
  12. Place in baking dish.
  13. Pour remaining tomato sauce over shells.
  14. Cover with foil; bake 30 minutes.
  15. Sprinkle with remaining 1/2 cup shredded cheese.
  16. Bake uncovered 5 to 10 minutes longer or until bubbly and cheese is melted.

Ingredients
  • 1 lb extra lean ground beef chuck or round
  • 2 green bell peppers chopped
  • 1 1/2 tsp garlic cloves minced
  • 1/4 onion chopped
  • 2 (15 ounce) cans unsalted tomato sauce
  • 1 cup water
  • 1/4 cup Italian dressing reduced fat
  • 1 10 ounce package oven ready wheat lasagna noodles broken into quarters
  • 3/4 cup shredded, reduced fat mozzerella cheese

Instructions
  1. In a large sauce pan, brown meat and drain excess fat.
  2. Add peppers, onion, garlic, tomato sauce, water, and dressing and bring to a boil.
  3. Stir in noodles and cover.
  4. Cook on medium heat 10 to 15 minutes or until noodles are tender, stirring often.
  5. Remove from heat and sprinkle with cheese; cover and let stand 5 minutes or until cheese is melted.

Ingredients
  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 2 cloves garlic finely chopped
  • 4 tbsp unsalted tomato sauce
  • 1/4 tsp Italian seasoning
  • 1/4 tsp crushed red pepper flakes
  • 1/2 cup uncooked, whole wheat, small shell shaped pasta
  • 2 (14.5 ounce) cans chicken broth reduced fat and reduced sodium
  • 1 (15.5 ounce) can red kidney beans reduced sodium, drained and rinsed
  • 1 (15.5 ounce) can garbanzo beans reduced sodium, drained and rinsed
  • 1 (14.5 ounce) can Italian style stewed tomatoes unsalted, undrained
  • 2 cups chopped kale
  • 1/4 cup grated Parmesan cheese for garnish

  1. In a medium saucepan, heat oil over medium high heat until hot.
  2. Cook and stir onion and garlic 3 to 5 minutes or until onion is translucent.
  3. Add broth, beans, tomatoes, kale, or swiss chard (if desired), pasta and seasonings; bring to a boil.
  4. Reduce heat; cover and simmer 10 to 12 minutes or until pasta is tender.
  5. Serve with Parmesan cheese.
