Ingredients
  • 13 ounces Smoked Turkey Sausage Sliced into 24 pieces
  • 1 each red bell pepper (Cut into 1x1 inch pieces)
  • 1 each green bell pepper (Cut into 1x1 inch pieces)
  • 1 each yellow bell pepper (Cut into 1x1 inch pieces)
  • 1.5 cups portabella mushrooms halved
  • 1.5 cups onions approximately ½ large onion
  • 1 cup cherry tomatoes
  • 1 cup asparagus
  • 3 each jalapeno peppers (Cut into 1x1 inch pieces)
  • 2 Tablespoons olive oil
  • 1 Tablespoon garlic Minced
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon Red Crushed Pepper Flakes
  • 1 teaspoon dried parsley
  • 1/4 tsp pepper
  • 1/2 tsp salt

Instructions
  1. Clean and prepare your working space.
  2. Prepare your outside grill or inside grill/grilling pan, as necessary.
  3. Cut and prepare all of your ingredients as directed.
  4. Take your smoked turkey sausage and vegetables (bell peppers, mushrooms, onions, tomatoes, asparagus, and jalapenos) and place them in a large mixing bowl, and mix.
  5. In a smaller bowl, add your olive oil, minced garlic, onion powder, garlic powder, cayenne pepper, red pepper flakes, dried parsley, pepper, and salt. Mix until well combined.
  6. Next, add the oil and spice mixture to the large bowl of sausage and veggies. Mix until everything is well-coated.
  7. Grab your skewers and evenly distribute the sausage and vegetables on the eight metal skewers in the pattern of your choice.
  8. (If you are using wooden skewers, make sure to soak them prior to use)
  9. Once the sausage and veggies have been added to the skewers, place them on your grill for approximately 10-20 minutes or until your desired doneness.
  10. Remove from grill. Eat and enjoy!

Ingredients
  • 1 tablespoon canola oil
  • 1 large yellow bell pepper chopped
  • 1/2 large onion chopped
  • 3 tablespoons minced garlic
  • 2 14.5 ounce cans Mexican-style stewed tomatoes drained and chopped
  • 2 limes
  • 4 14 ounce reduced sodium chicken broth
  • 2 pounds chicken breast cooked, chopped
  • 1/4 cup cilantro chopped
  • 1 jalapeno chopped
  • 1/8 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
  1. Heat oil in large stock pot over medium high heat.
  2. Add bell pepper, onion, and garlic; sauté until vegetables are tender.
  3. Cut limes in half and squeeze lime juice directly into the vegetable mixture; tomatoes, and chicken broth to soup.
  4. Bring to a boil and reduce heat and simmer for 10 minutes.
  5. Stir in chicken, Cilantro, Jalapeño, salt, and pepper.
  6. Cook until thoroughly heated; about 10-15 minutes.
  7. Serve immediately.

  • 1 zucchini coarsely chopped
  • 1 yellow squash coarsely chopped
  • 1 red bell pepper seeded and coarsely chopped
  • 1 green bell pepper seeded and coarsely chopped
  • 1 yellow bell pepper seeded and coarsely chopped
  • 1 cup grape tomatoes halved
  • 2 tablespoons vegetable oil
  • 2 tablespoons reduced-fat Italian dressing
  • 1/4 cup grated Parmesan cheese

  1. Wash your hands and clean your cooking area.
  2. Wash and chop vegetables as indicated above.
  3. Heat skillet to medium; add vegetable oil.
  4. Add zucchini, squash, bell peppers and grape tomatoes and sauté until

Ingredients
  • 1 pound lean ground beef
  • 15 ounce can tomato sauce no salt added
  • cooking spray
  • 10 ounce refrigerated pizza crust
  • 1 cup reduced fat mozzarella cheese shredded
  • 1 cup fresh baby spinach
  • 1 yellow bell pepper sliced
  • 1/2 cup cherry tomatoes halved

  1. Wash hands, clean surface and pre-heat oven to 425 degrees F.
  2. Brown lean ground beef in a pan over medium heat.
  3. Add tomato sauce to cooked, browned meat. Cook together and let simmer.
  4. Spray 9 X 13 inch baking pan with cooking spray.
  5. Unroll refrigerated package of pizza crust, pat well and smooth out up to the sides.
  6. Sprinkle ½ of mozzarella cheese on crust and cover with all of the meat sauce.
  7. Top with spinach, bell peppers and tomatoes.
  8. Bake in oven for 12 minutes.
  9. Remove from oven, top with remainder of cheese and return to oven till melted.
