Fill your day with a vibrant Greek Protein Bowl- packed with bold Mediterranean flavors and wholesome goodness.  This power- packed bowl features air fried chicken, crisp cucumbers, juicy tomatoes, kalamata olives, red onions and a sprinkle of feta cheese, all served over delicious cottage cheese.  Finish your bowl with dollop of tzatziki, it is the perfect balance of fresh, filling and flavorful.

Ingredients
Chicken
  • 1 pound chicken breasts boneless, skinless
  • 2 tablespoons olive oil
  • 1 tablespoon Greek Seasoning
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
For the Bowl
  • 2 cups high protein cottage cheese
  • 1 tablespoon Greek Seasoning
  • 2 cups cherry tomatoes halved
  • 2 cups English cucumbers diced
  • 4 cups romaine lettuce shredded
  • 1 cup red onion thinly sliced
  • 1/2 cup feta cheese

Chicken
  1. Wash hands thoroughly.
  2. Clean and prep your area.
  3. In a large bowl, mix olive oil, lemon zest, lemon juice, honey, garlic powder and Greek seasoning.
  4. Flatten chicken to about ½ inch thick and marinate in a shallow dish or Ziploc bag for at least 30 minutes, or up to several hours.
  5. Preheat your air fryer to 380 degrees F. Cook chicken for 7 minutes on one side and flip, cooking an additional 3-4 minutes. Internal temperature should reach 165 degrees.
  6. Allow the chicken to rest for 5 minutes before slicing. Serve with Tzatziki sauce if desired.
Assemble the Bowl
  1. Mix Greek seasoning with the cottage cheese.
  2. Layer bowl with lettuce, cottage cheese, tomatoes, cucumber, red onions and sliced chicken.
  3. Top with a tablespoon of Tzatziki, if desired.

Ingredients
  • 6 medium pears Bosc, Bartlett, or Anjou
  • 3 cups Honeycrisp apple cider
  • 1/2 cup orange juice
  • 2 teaspoons cinnamon ground
  • 2 teaspoons cloves ground
  • 1 teaspoon allspice ground
  • 1/2 teaspoon nutmeg ground
  • 1/2 teaspoon Chinese five spice
  • 3 cups cottage cheese, 1%

Instructions
  1. Peel pears and leave whole. If needed cut bottoms, so they will sit flat.
  2. Whisk together apple cider, orange juice, and spices.
  3. Add pears to the Instant pot, stem up and pour in cider mixture.
  4. Secure the cooker lid and turn pressure release knob to a sealed position.
  5. Cook at high pressure for 6 minutes.
  6. When cooking is complete, use a quick release.
  7. With a slotted spoon, carefully remove the pears from the pot and set aside.
  8. Turn cooker to sauté and bring poaching liquid to a boil, continue cooking, stirring occasionally to prevent scorching, until liquid is reduced to a thick sauce.
  9. In food processor with S blade attachment, add cottage cheese and process until smooth.
  10. Leave pears whole and serve on a bed of cottage cheese with two tablespoons of the reduced sauce.

Ingredients
Cheesecake Crust
  • 3.5 ounces (100g) graham crackers
  • 1 cup oatmeal or rolled oats
  • 2 tablespoons unsalted butter
  • 2 tablespoons maple honey
  • 3 tablespoons water
Cottage Cheese Cream Filling
  • 1 3/4 cups 2% cottage cheese
  • 1/3 cup plain nonfat Greek yogurt
  • 2 whole eggs
  • 1/4 cup honey
  • 1/3 cup all-purpose flour
  • 2 teaspoons vanilla extract
  • 1 1/2 teaspoons lemon juice
  • 1 1/2 teaspoons lemon juice

Cheesecake Crust
  1. Preheat oven to 320°F (160°C). Grease bottom and sides of a 9 inch (20 cm) springform mold with butter or line it with parchment paper.
  2. Place graham crackers, butter and maple syrup in a food processor or high speed blender and pulse until they become fine crumbs. The mixture should resemble wet sand.
  3. Transfer the mixture into the prepared springform mold, and gently press it down with your hands, a spoon, or the bottom of a glass.
  4. Bake the graham crackers crust for 15 minutes while preparing the cream.
Cottage Cheese Cream Filling
  1. After baking the crust, preheat the oven to 350°F (180°C).
  2. Add to a food processor or blender cottage cheese, Greek yogurt, maple syrup, eggs, cornstarch, vanilla extract and lemon juice. Process until smooth and creamy.
  3. Pour the cottage cheese mixture over the baked crust, then use a spatula or spoon to spread it evenly.
  4. Bake cottage cheese cheesecake for 40 to 45 minutes, or until it has set.
  5. Once the cheesecake is baked, let cool at room temperature first, then refrigerate for at least 8 hours before serving.
  6. *Serve with fresh fruit, jam, or your favorite sauce.

  • 16 ounces cottage cheese, 1%
  • 1 Tablespoon cocoa powder
  • 2 teaspoons vanilla extract
  • 1/2 cup almond butter

  1. Clean preparation area and wash hands
  2. Using a blender combine cottage cheese, cocoa powder, and vanilla extract until smooth.
  3. Line a sheet pan with parchment paper
  4. Spread out cottage cheese mixture evenly over parchment paper
  5. Spoon almond butter over the top of your cottage cheese
  6. Using a knife create swirl designs in your mixture
  7. Put baking sheet in the freezer for 2 hours
  8. Once firm, cut or break into pieces
  9. Store in an airtight container in the freezer to maintain firm consistency.
