  1. Heat oil in large skillet over medium heat.
  2. Add zucchini and bell pepper; cook 5 minutes, stirring occasionally.
  3. Add cumin, chili powder, un-drained tomatoes, beans, and water.
  4. Increase heat and bring to a boil.
  5. Add rice and cheese; stir well.
  6. Reduce heat and cover for 7 minutes or until liquid is absorbed.
